The What's For Dinner Thread - March '11 (recipe index in OP)

So, as I am new to the thread, I had to go back and find out what crash hot potatoes are... We actually make those about every 2 months, but we called them smashed olive oil potatoes. They are delicious.... as a variation, we make them just like that, but instead of herbs, sometimes we sprikle on Old Bay seasoning.

It's been raining ALL WEEK and is expected to rain until tomorrow. We opened our pool last week, and now the heater isn't working. But this is our new house ( 8 years old ) and it came with a home warranty that covers the pool. So we have to pay $60 of the bill. Hopefully we can swim by Saturday.

Janice, I would not use jasmine rice for risotto. I really don't think the texture would be pleasing. I'd go back and get some arborio or canarolli rice.

Big Cuddly Bear, even though chipotles are jalapenos, I still think they are hotter. Maybe because they get so soft in the adobo sauce, so you really cannot seperate out the seeds and ribs like you can with a fresh jalepeno. You are lucky to be able to swim soon. It's been raining here all week and in the forties!

WFD: Thai chicken sate with peanut-chile dipping sauce, coconut rice, and sugar snap peas.

BCB - We love the potatoes, here, too! I like to sprinkle them with Parmesan cheese! Yum!

I've never been brave enough to cook with any kind of spicy pepper. I'm too scared of the burn!

Dinner tonight is tuna casserole.
 

Bah, we paid $60 to "fix" the heater.... and all it was, was a loose connection. Still the warranty saved us 65 bucks.
 
Ellen- I am like you. I just put things in His hands. I have had to tell Buddy that he needs to let go and have Faith. He is a bit of a control freak so this is not easy.

Thanks. And yes they will find out what the baby will be. Jay isn't to keen but Elizabeth wants to and with all of the ultra sounds they will do because she is so high risk they will probably know anyway. I can't wait!!

BCB ~ I am so glad the pool was an easy fix. I would love to have a pool but living in Nebraska we would only be able to use it for a few months.

Well we are on our 5th cloudy, cool and rainy day. I am DONE - (insert a stomping foot smiley) Where are those plans for the ark? I know there are people in a LOT more water than me, but I am sick of this. And I can complain if I want to. Not that it will do any good but I still can!!

Doug made the remark this morning that he sure wasted his Country Club dues this year. He has been able to play one time for Men's night. It doesn't look like he will get out again tonight. And tomorrow he is in a Tournament that he has looked forward to for months. Looks to be rained out!!

So I guess I need to cook something tonight - DARN IT!!

It's just a cheap Timex so I don't honestly know. I pulled the paper out of the thing before I threw it away but hadn't read it yet.

And she will definately be buying me a new one. :mad:

Nancy I am not sure I understand what your question is about gun laws? Are you wondering if you need a FOID card to buy a holster?

I know that we can buy her holster but I also think he should buy the gun that goes into it. I want my girl armed to the teeth!
Gail want so tgive her Mikes Glock but the gun guy said that there is no safety on it and he would not consider it a safe gun. He said he would help her choose the kind the West hartford police use.

WHen CHris went to Iraq the first time he had to buy all of his "extras" and wanted a spiffy knofe. Iswear Gail would have bought every machete she could for him :rotfl2: Now Buddy thinks that we are nuts because we want to outfit her with every gun she can wear :rotfl2:

Nancy- My dad is a retired state trooper, he loved his maglite. They are so heavy they are definetly multi-purpose!

Ellen- The only thing I don't like about my job is it's only seasonal and there is very little chance of a year round position opening up. Sorry your dealing with all that rain, we finally got some sun today! Maybe your turn is next.

Glynis- You should give hot foods a try, they give a great flavor. I don't like spicy to the point where it becomes a challange, but I love the flavoring the spicy foods bring.

Kathy- Have a great trip!

Aimee- I'd tell you to slow down but I don't think you have a choice.

I thought I'd see something at the store that looked good for dinner but that didn't happen, I'll have to see what's hiding in the freezer.

Augh, I'm so sorry. DH gets upset when rain gets in the way of his golfing so I understand. Constant rain is just downright depressing.



I actually think I may be getting sick... I'm unusually tired, achy, and fevery. This morning, I missed an important meeting out of town in favor of sleep and rest so maybe that'll help.

Last night, I made enchilada sauce to go with avocado enchiladas. I left out the chipotle pepper and of course, tasted it and thought it needed a little heat :laughing: Would adding a little ground cayenne to it when I warm it up do the trick? Or hot sauce?

Avocados are $$$ so these better be delicious!

I'm glad you got the heater "fixed"; even if it was a lot of money to spend to fix a loose wire. At least you didn't have to buy a new heater....:goodvibes

We had the WETTEST summer in a long time in Australia. Heaps of rain and lots of ark building everywhere. At one stage, we had two states flooded out. Queensland was 80% underwater and Victoria (where I live) was 60% underwater.
We're now over the WET Summer and into the makings of a COLD Winter.
This too shall pass.

WFTD - Tonight I'm heading out to see an accapella group sing. DH, DS, a friend and her 15 year old daughter will be going with me. Can't wait! Dinner will probably be in a cafe somewhere.

I sooooo need this week to be over.
My Auntie died this morning.
My family and hers have not spoken since my dad got ill and died....they gave us no support and quite frankly behaved disgustingly.

You lassies know me,I pride myself on my Mafioso style of love.
I will defend the people I care about to the ends but if you hurt me of mine...yer gone.

The pressure I am under just now to " forgive and forget " is a joke.
It will not happen,its going to end in more arguments and I will be the bad one.

With the other stuff going on I could do without this.
 
Vic:hug: I am sorry this is giving you more grief. Sometimes forgiving is not possible, mending fences happen only when both sides come to a common ground. None the less I am sorry for your loss.
