The What's For Dinner Thread - March '11 (recipe index in OP)

Glynis, so glad Katie had a good experience!

DH was off today, but I worked. Well, sorta. I didn't work in the office long so I could spend more time with him. Now I'm working on all the stuff I should have done in the office :laughing:

I made shrimp and grits tonight, very good! I'll post that and the ribs next.
 
This was based off a recipe in September's Bon Appetit magazine

Shrimp & Grits
Grits
1 cup quick cooking grits
1 cup grated sharp cheddar
1 tablespoon butter
1 jalapeño, seeded, diced
1/4 cup heavy cream
Kosher salt, freshly ground pepper

Shrimp
4 slices bacon, diced
3 garlic cloves, sliced
2 tablespoons (1/4 stick) butter, divided
1 pound shrimp, peeled and deveined
1/4 cup beer
1/4 cup chicken stock
1 tablespoon chopped fresh tarragon

Bring 3 cups water to a boil in a large saucepan. Gradually whisk in grits. Turn heat to low; gently simmer until grits begin to thicken (about 5 minutes). Stir in cheese, butter, and jalapeño, then cream. Season with salt and pepper. Keep warm.

Meanwhile, heat a large heavy skillet over medium heat. Add bacon pieces and cook until crispy. Add garlic and 1 tablespoon butter; stir until butter melts. Add shrimp. When garlic begins to brown, add beer and chicken stock. Simmer until shrimp is cooked through and the sauce cooks down a bit, about 4 minutes. Remove skillet from heat; set aside.

Divide grits among bowls, forming a well in center. Spoon shrimp mixture into center of grits. Sprinkle tarragon over.
 
These ribs were so good, but my picture is so crappy!

Dr Pepper Ribs
For the rub:
1/4 cup of salt
1/4 cup of black pepper
1/4 cup of brown sugar
4 teaspoons of mustard powder
1/2 teaspoon of cayenne
2 teaspoons of chipotle powder
1/2 teaspoon of allspice

For the glaze:
2 cups of Dr Pepper (not diet!)
1 cup of ketchup
1/2 cup of mustard
1/4 cup of apple cider vinegar
2 tablespoons of molasses
2-4 teaspoons of chipotle powder

Two racks of St Louis ribs (we used Baby Back)
1/4 cup of Dr Pepper

Coat the ribs with the rub, wrap in plastic and place in the refrigerator for at least four hours.

Heat the oven to 300 degrees and bring the ribs to room temperature.

In a foil-lined large baking or roasting pan, arrange the ribs with the meat side up, pour in 1/4 cup of Dr Pepper, cover pan tightly with foil and place in the oven.

Meanwhile, place all the glaze ingredients in a pan, bring to a boil and then simmer for 20 minutes until thick and syrupy.

After an hour and a half, take the ribs out of the oven and spread some of the glaze on each side of the racks. Place back in the oven, meat side up and cook uncovered for 30 minutes.

After 30 minutes, take out the ribs and spread more glaze over them and cook for 30 more minutes or until ribs are desired tenderness.

At this point, take the ribs out of the oven, spread more glaze on them and then cook each side under the broiler for four minutes.
 
Tuesday night over here. Back to work today and I wished I was still on staycay! Still, the first day is over....hopefully I'll get mentally into gear and work mode.

Dinner was baked jacket potato with all the trimmings.

Hey guys! I am trying my best to get the new thread going. Something weird is going on with my internet and it's going slow. Hopefully it will be done this morning. Again, we are getting rid of our DSL this weekend and switching to a cable modem. Hopefully it will solve these problems. In the meantime, UGH!!!

Today I am making chili, per my husband's request. We will have cornbread to go with it. (Crap, I just realized I forgot to get sour cream for mine. UGH!) Also, I am trying my hand at homemade bread today. I posted about this over the weekend and the DIS ate my post so I thought I would try later. Anyway, I saw it on Barefoot Contessa (my favorite) and it looked like something I could do without messing up. I haven't made bread since I was a kid though (church women's night kind of thing) so let's see how this goes.

Ok, I have to share the dream I had with you guys. In the episode that Ina's making the bread, after she kneads it and forms it into a ball, she pats it and says, "There! Just like a baby's bottom." Well, over the weekend I was dreaming that I was making this bread and I kept yelling at the dough "You don't look like a baby's bottom! What's wrong with you?!" LOL!

Off to finish my coffee and work on the new thread :)
 
Lindsay - The internet is running slow at this time of day ... even across the Pacific. And it's bedtime for me....so both laptop and necktop are running slower this time of day.

Today is Mr A's birthday

WFD is Italian beef in the crockpot and the Caramel Praline Cheesecake.

It took all my strength to leave the cheesecake alone last night. All I have to do tonight is make the caramel chocolate sauce. Gees! I am going to be so tired tonight after all this cooking. :rolleyes1 This kid makes tough demands for dinner. :laughing:
 
Had talapia, creamed swiss chard and zucchini w/ tomatoes and onions. Got the chard, some apples and beets at the farm Sunday. They were so busy that we didn't go into the barn. The friend I went with went in to get cash from the ATM to buy kettle corn and told me don't even try it it was so bad.

Didn't get home until late tonight. Stopped at Joann fabrics to get some fabric they had on sale until today and was waiting to get it cut for about an hour. I went Saturday night and had a 30 minute wait. Who knew Columbus could inspire people to sew. :rotfl:

It was both irritating and funny tonight. The irritating part was one woman who was asking what the price was on every fabric she had, how wide they were and if they would be a better sale later this month. Seriously?!?! And then both the woman and the girl waiting on her walked away from the table, I honestly did not see the girl cut anything for the woman and there were 4 bolts of stuff sitting there. :headache: I pulled #114 right as they were calling #75 and when my number was called there were still a lot of people waiting.

The funny was when they called this one woman's number, she yelled so loud I am sure they could hear her all over the store and then she was so embarrased and kept apologizing. :lmao: The one lady offered her a job.

That must have been an amazing sale :rotfl:

Last night the tacos I was supposed to make didnt happen... We went to see Jeff's dad and ended up ordering Chinese. I hope to make them tonight, but I have a crazy night! We have open house, book fair and water aerobics. I also have to pick up my little scarecrows also.... Well I have to see how much I can fit in!

Aimee: I want to try the shrimp and grits. One question: Does the jalepeno make the grits really spicy? I cant really do spicy food.

You could easily leave them out. They don't have seeds, and aren't cooked, so they are just bites of crunch/spice. I'm fairly sensitive to spice and they didn't bother me but I don't think they would make or break the recipe, either.

Well I will try this again - I had a nice long reply to everyone. The custodian came in and was cleaning up and must of hit something because my computer went completely black. :mad: :headache: I lost everything I had been working on since 8 this morning. I could have wrung her neck - and to top it off she never even said sorry. GRRRRRR!!!!

Cloudy and drizzly day here today. Almost looks like early evening out. Fall is here. I was driving home last night from Ethan's football game at 7:30 and it was dark out. I really don't like it when it gets dark so early and in a couple of weeks it will be worse. Oh well it is what it is - but I can still complain.

I have bunko tonight. We always have so much fun - I can't wait to see the girls.

WFDT ~ Meatloaf (in the crockpot - we shall see how this goes it's my first time trying it in the crock), crash potatoes, asperagus and sliced peaches.

I am back from a beautiful weekend on Cape Cod. We had amazing weather. I cooked a lot of local fish for dinners, but the DIS is running really slow for me right now so I am not going to attempt to load pictures.

Well, the time has come, my friends, to invest in a new washing machine. After being gone for 4 days, my laundry pile had really turned into Mount Washmore, and I was determined to tackle it yesterday. I got a load of towels going, and starting sorting through the rest of the laundry. Unfortunately, I wasn't able to do anything more. My washer filled with water, but then it stopped. It won't agitate, it won't spin, and it won't drain. I guess I shouldn't be surprised... it's over 14 years old, but I was really hoping it would hold out for a while longer. I spent today at my sister's house, washing everything, and now, I'm shuffling those loads through my dryer. FRUSTRATING!!! Alan is using his breaks at work to look for a new machine. Unfortunately, he is wanting to pay what we paid for this one 14 years ago, and that ain't about to happen! He was honestly shocked to see that a new washing machine (not even a large capacity, like we really need) is 500 dollars. It will be interesting to see what he comes up with.

Anyway, dinner will most likely be pasta and red sauce. I'll add some meat to it if I get a chance to run to the store. We'll see. I have to babysit my destructive niece and nephew this afternoon/evening, and I really hate to leave them in my house without me here!
 
I am working on my TR and will have pictures and reviews from the restaurants. But that was a first for us all except Jiko which is one of our favs.
