Unfortunately, right now, I'm not able to maintain the OP so I asked Lindsay to start the new thread ASAP.
 
We cleaned yesterday. I have some more cleaning to do today. I also spent lots of time yesterday organizing all of my recipes on Pinterest. I am totally addicted to Pinterest and I totally blame Aimee. :lmao:

Everyone - thanks for your well wishes on the concert, it goes off tomorrow and I think it should go pretty good!

If you aren't clued on on Brandi's PTR, you're missing out! She has some great scenery, food porn and other stuff! She's updating on her Amsterdan and Russian (I think) cruise before she gets to the WDW vacay. Fascinating stuff, and fairly humorous....who would have known that a little Belgian pissing boy inspired a french fry chain! :lmao:

We went on a 3 week Baltic trip prior to F&WF.... I am slow but posting things there as we speak...

WFD? We're going out somewhere after the concert! For the last 2-3 concerts we've ended up at Acapulco. Fran likes the margaritas!

Dinner plans changed. I went into the freezer to take out fish filets for dinner tonight and we didn't have enough to go around. So, I did a menu change and made a recipe that I found on pinterest.

Cinnamon Roll Pancakes

I didn't take pictures, but here's one from the blog:

PANCAKES:
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 Tablespoon canola oil
1 large egg, lightly beaten

CINNAMON FILLING:
1/2 cup butter, melted
3/4 cup brown sugar, packed
1 Tablespoon ground cinnamon

CREAM CHEESE GLAZE:
4 Tablespoons butter
2 ounces cream cheese
3/4 cup powdered sugar
1/2 teaspoon vanilla extract

Directions:
1. Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt. Whisk in milk, oil and egg, just until batter is moistened (a few small lumps are fine).

2. In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside. You don't want this to remain super-liquidy. It's best if it becomes a consistency similar to toothpaste.

3. In a medium, microwave-safe bowl- heat butter and cream cheese until melted. Whisk together until smooth; whisk in powdered sugar and vanilla extract; set aside.

4. Heat large skillet over medium-low heat. Spray with nonstick spray. Scoop about 3/4 cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.

5. When ready to serve, spoon warmed glaze onto the top of each pancake.

Tips:
*Keep the heat low or your pancakes might cook up too quickly. Don't flip them until you see those bubbles starting to pop on top. Flip them with a wide spatula so you can grasp the whole thing without batter and filling dripping all over the place!
*It's best if you pour the batter onto your skillet, wait a minute or so and then swirl the cinnamon onto the batter. That'll give it a chance to set a little before you add the swirl.
*If your baggie of filling begins to get too thick, just pop it in the microwave for a few seconds to soften it up again. On that same note, it shouldn't be too runny. The consistency of soft toothpaste is perfect. If it's melty and runny, it will tend to run all over your pancakes. Once you micro it, let it sit on the counter at room temp for a while until it thickens slightly.






Here's MY tips: I doubled the recipe thinking that since it was supposed to serve 4, that we would need more. Ummm, no. One pancake is more than enough for a person. They are sooo sweet. Also, I had extra cinnamon swirl and glaze. I don't see how it's possible to use all of the swirl or glaze for this recipe. You'd die of a sugar overdose. :lmao:

These were good. But, you have to really be in the mood for something sweet. And I'm not really a cinnamon roll person, but was hoping these would be different enough than actual cinnamon rolls that I would be satisfied. They weren't that different.

So...:confused3...I think you need to try them yourself to see if you like them. Right now, I'm too sugared out to think straight to type anything else.





Back to work tomorrow. The kids don't have school tomorrow but we'll be having staff development. :hug: all around.

Now, for the REAL news.... when I left on Thursday, I drove through a blinding SNOWSTORM! No kidding! We had quite a storm, and our temperatures went from 80 degrees to 40 degrees in one days time! Brrr! It has since melted from our valley, but our mountain tops are white, white, white!

I had a busy weekend!! Saturday we hit about 30 tag sales and got some amazing stuff! Then we went to church for a mass for my grandmother, then dinner at Nans. Yesterday I was able to do every bit of laundry :eek: Not fun, but it needed to be done. :laundy: Jeff and Kady are both off today, so they are home relaxing... Im stuck at work :surfweb:

Tonight we might have to go see Jeff's dad. He moved to CT from Florida and doesnt have winter stuff. So we have extra jackets and stuff for him. I havent said anything about it, but Jeff and his father havent had a relationship in about 15 years. Even back then it wasnt a good relationship. But right now they are talking and its slow going, but atleast its a start. It looks like Christmas will be the first holiday he will have both his parents and his siblings together for the first time EVER... Its nice to see that he can have his family and not have there be tension. But his dad did say the other day that he is proud of Jeff and can't believe how far he has come :lovestruc

I am just jumping back in...............

We had a wonderful weekend. We went into Lincoln on Friday. Matthew met us for Dinner then we went back to his apartment and watched some football. Saturday Marty and Stephanie got into Lincoln early so we went to breakfast then did some Maternity clothes shopping. She was so excited. She really isn't showing yet, but nothing fits either. We headed for the "Before game tailgates" then went to the game. We won our first home game in the Big 10 - We beat Ohio State. WooHoo!!

Sunday we did some more shopping - I got some new, much needed fall clothes and sadly said good bye to Matthew for almost 3 weeks.

I have zumba tonight then a flag football game for Ethan.

WFDT ~ Center cut pork chops, steamed greeen beans, sliced tomatoes and strawberries with cream.

Make it a great day my friends.
 
Sounds like everyone had busy and fulfilling weekends! We put on a Band Concert yesterday, and spent most of Saturday in a rehearsal. The concert went well and afterwards we went out to dinner. Today we are being lazy and staying in bed way too long! :lmao:

Tomorrow is Mr A's birthday his request is Italian beef in the crockpot and cheesecake for dessert.:thumbsup2

The kid is strange but I love him. I gave him a choice of anything going out to eat, steak whatever and he chooses a crockpot dish.:confused3

The cheese cake is a carmel praline cheesecake which is in the oven as we speak.
 
Caramel Praline Cheesecake

FOR THE CRUST:
1 cup Graham Cracker Crumbs
½ cups Firmly Packed Brown Sugar
¼ cups Butter, Melted
½ cups Finely Chopped Pecans
½ cups Chopped Heath Bars

FOR THE FILLING:
1 cup Sugar
4 packages (8 Oz. Package) Cream Cheese
4 whole Eggs
¼ cups Chopped Heath Bars
¼ cups Finely Chopped Pecans

FOR THE SAUCE:
¼ cups Butter
⅔ cups Firmly Packed Brown Sugar
⅓ cups Whipping Cream
¼ cups Light Corn Syrup
2 ounces, weight Semi Seweet Baking Chocolate (coarsely Chopped)
1 teaspoon Vanilla

Heat oven to 300°F. Lightly grease sides only of a 10-inch springform pan.

The crust:
Stir together graham cracker crumbs, brown sugar, butter (melted) and chopped pecans. Press crumb mixture evenly on the bottom and 1 inch up the sides of the prepared pan. Bake for 10 to 12 minutes or until edges are lightly browned. Remove from oven; immediately sprinkle toffee bits on hot, partially baked crust.

The filling:
Meanwhile, combine sugar and cream cheese in a large bowl. Beat at medium speed, scraping bowl occasionally, until creamy. Add eggs; continue beating until well mixed. (DO NOT OVER BEAT.) Pour over crust. Bake for 65 to 70 minutes or until edges are set and lightly browned. Center will move slightly when the side of the pan is tapped

Loosen cheesecake from the side of the pan by running a greased knife around the inside of the pan. Immediately sprinkle toffee bits and chopped pecans on top. Cool 1 hour on a cooling rack at room temperature. Refrigerate in the pan, uncovered, until thoroughly chilled (3 to 4 hours). Cover; refrigerate until serving.

The Sauce:
Meanwhile, melt the butter in a 2-quart saucepan over medium heat; stir in the brown sugar, whipping cream and corn syrup. Cook, stirring occasionally, until mixture just comes to a boil (2 to 3 minutes). Boil 3 minutes. Remove from heat.

Add chocolate; stir until melted and smooth. Stir in vanilla. Cool slightly; place in a microwave-safe bowl. Cover; refrigerate until serving time. Just before serving, microwave sauce on HIGH, stirring every 30 seconds, until warm (30 seconds to 1 1/2 minutes).

I had meetings of nothing but boring, meaning less stuff from 8-4. Then, I went to a packed Walmart to shop and didn't get home until 6:30.

UncleR made dinner, and we had sloppy joe's and fries.

I'm tired. But I have enough energy to come check in with the wonderful ladies here and to give everyone :hug:

I soaked the backstrap in Apple juice, and then wrapped it in bacon with BBQ sauce and then grilled it...

Had talapia, creamed swiss chard and zucchini w/ tomatoes and onions. Got the chard, some apples and beets at the farm Sunday. They were so busy that we didn't go into the barn. The friend I went with went in to get cash from the ATM to buy kettle corn and told me don't even try it it was so bad.

Didn't get home until late tonight. Stopped at Joann fabrics to get some fabric they had on sale until today and was waiting to get it cut for about an hour. I went Saturday night and had a 30 minute wait. Who knew Columbus could inspire people to sew. :rotfl:

It was both irritating and funny tonight. The irritating part was one woman who was asking what the price was on every fabric she had, how wide they were and if they would be a better sale later this month. Seriously?!?! And then both the woman and the girl waiting on her walked away from the table, I honestly did not see the girl cut anything for the woman and there were 4 bolts of stuff sitting there. :headache: I pulled #114 right as they were calling #75 and when my number was called there were still a lot of people waiting.

The funny was when they called this one woman's number, she yelled so loud I am sure they could hear her all over the store and then she was so embarrased and kept apologizing. :lmao: The one lady offered her a job.
