The What's For Dinner Thread - March '11 (recipe index in OP)

Lindsay - thanks for filling me in! I had no idea you were paraplegic. That's the wonder of the internet age.....everyone is equal in the e-box. :hug:
And that is despite DSL and cable issues!
In any event, it sounds like you are living life to the fullest and doing everyday things like driving and grocery shopping.

Me? I'm down to the last 2 or 3 days of my staycation. Can you believe how quickly that 2 weeks went? It only seems like yesterday when I was celebrating the start of work freedom! But I'm not complaining....whilst I could do with another 2 weeks off or 20, I'm ready to head back to my home company and figure out my next contract.
I'm going to enjoy these last couple of days before that happens!


Oh....and I can't remember if it was Ellen or Robin or Janice or someone else that told us about the pumpkin oatmeal. I did try it out....and it was yummy! (It also fitted in with the photo scav hunt category for fall food; and I added the cinnamon - yup; another category :)).

Tuesday is Mr A's birthday he is still thinking about his birthday dinner plus he wants a cheesecake. We need to review the flavor he wants. So many choices such a indecisive kid:rolleyes1

Dinner was plain ole tacos cause I didn't pick my car up till late afternoon and ran out of time.

Dinner is up in the air I have to run a few errands.
 
Sweet and Sour Fish


This is a favourite dish with my DS and DH. We use Fish for the protein; but you can easily adapt this for chicken or pork or shrimp!


My starting ingredients:

  • White fish fillet, 400 g – I used Flathead fillets
  • Flour, 4 tablespoons – seasoned with salt and pepper
  • Egg, 1 – beaten
  • Oil – for frying

For the sauce:
  • Tomato sauce, ½ cup
  • White vinegar, ¼ cup
  • Soya sauce, 1 tablespoon
  • Brown sugar, 1 tablespoon
  • Pineapple chunks, 225g can – use the liquid in the sauce
  • Red Capsicum, ¼ - diced
  • Green Capsicum, ¼ - diced
  • Onion, ⅛ - diced
  • Tomato, 1 small – sliced
  • Corn flour, 1 tablespoon
  • Water, ½ to 1 cup – as required to make the sauce to the thickness you like


Coat the fish fillets with flour. I use a Ziploc bag for this and just shake the bag for a minute or so.

Place the coated fillets in the beaten egg…

…. and ensure that the fillets are well mixed with the egg.

In a wok or a frying pan, place some oil and heat under a low flame. When hot, cook the fillets for about 2 – 3 minutes on each side. The oil should be gently ‘glooping’ so that the fish cooks without burning the batter.

When you turn over to fry on the other side, the batter should be a golden brown colour. If it is too brown, reduce the heat. If it is not brown enough, increase the heat.

Remove excess oil (with kitchen paper) and place the cooked fish fillets into a serving dish.

To make the sauce, fry the onions for about 30 seconds.

Add the red and green capsicum and quickly toss and 1 – 2 minutes.

Remove from heat and transfer the vegetables to a small pot.

Add the entire tin of pineapple chunks, including all the liquid.

Then add the tomato sauce, vinegar, soya sauce, brown sugar, corn flour and additional water.
NOTE: I premixed these ingredients; and you can substitute the water with stock for more flavour.

Heat the sauce on a medium flame…

….until the sauce starts to bubble. Then add the sliced tomato to the sauce.

Continue to heat until the sauce has thickened and/or is bubbling hot.

Pour over the fillets.

I served the sweet and sour with white rice and stir-fried some veggies (let me know if you want me to post the pictures and recipe).

I have successfully wasted a day.:thumbsup2 I did manage to do 1 load of wash and clean up the yard of my cucumber vine but nothing else. Oh well I did finish my book and about to start on my next one. I am returning to my deck. I love days like this. It is 80 degree I am am soaking up what ever sun I can get:flower3::snooty:

This is not a wasted day! It is a great day!

We got hand controls* put on Scott's car on Thursday. Yesterday we took a mini-road trip so I could get used to it. Not just the car, the hand controls are a completely different style than the ones I have on my car.

Enjoy the rest of your staycation. I love home so this would not be a bad thing for me. I just wanted to tell you that you can make oatmeal look like a gourmet meal!

Marilyn- I would miss the oaks for foggy spookiness. I am pretty much done my decorating. I tend to do more than I should and Jeff and Marisa were quick to point out I was almost tot he point that it was :dance3: So much for all of the orange lights I wanted to find a place for ;)

I have some inflatables out it the yard and two more that I put away. I want Winnie the Pooh and a gynormous pumpkin arch but ................... I wuill stop and just put up my spider webs. I never put the batteries in the noisy things because they drive Buddy nuts when they talk everytime the wind hits them :laughing: We just need to get the fog machine ready and I need to fix all the cords so someone does not kill themselves and I am calling it a day.

PSA-if you see a shower curtain on sale for $2.19 is really is only worth 2 bucks. Now I need to decide if I want to spend more money on another black shower curtain :confused3

Driving is sooooo much fun now, lol! It's hard to explain, but these hand controls reduce arm and hand fatigue, and they certainly do! This morning we are meeting Scott's dad for breakfast and after coming back home to get a few things done, we are hitting the open road again!

He loves this job and even though he said he has no intention of being a fisherman all of his life he sure has found a good place for now. :thumbsup2 And he is sharing his catch with us!

It is dark and cloudy outside and I so hope we get rain!

I haven't cooked this in a while because DH is vegetarian and you really need the pork (or chicken) in the pad thai. And we've pretty much eliminated peanuts from our house....one of my nephews is severely allergic to it. However, now that I've typed it out and thought about it....might be a nice recipe to pull out again for DS to try.

Does your DH like tofu? I love tofu in my pad thai - and we aren't tofu loving people. :laughing:

I wish I had more energy, but I just feel like poo. :lmao: I hope these antibiotics kick in and I feel magically delicious very soon, because I am flat exhausted of being sick and laid up.

Our upstairs AC unit stopped cooling on Tuesday. Today, woke to the downstairs unit not working. Lovely! Thankfully it's 20 degrees cooler than the last time it went out so it's somewhat tolerable... but they are calling for thunderstorms tonight which will not be pleasant. Thankfully our AC guy is working today and coming by this morning to see what he can do. I hope it's a cheap, easy fix but I know that's not likely! :laughing:

I went out of town yesterday and took DH's new ride. Love it! He's really happy with it so I'm glad.

Last night we picked up BBQ. Tonight DH is playing a gig at a local restaurant/bar so we'll eat there.

but the general consensus of our meals, from all four adults, was Flying Fish was the best overall, second was Sanna, third was Jiko and forth was Yachtsman.

It must be in the air. Ours went out yesterday. They had to come out and install some sort of switch to click the unit off when it freezes up. Of course, it happened on the day when UncleR was using the self-cleaning oven and it was on at 500 degrees for a few hours. :scared1: It's working better today though and I hope that we get that rain!!!!

I'm a little fuzzy here, a head cold set in on Wed. so I haven't been too with it. So bear with me if I miss anyone.

Lindsay - I had no idea you are a paraplegic! I had the same thoughts as PIO. Through the internet, we are all equal. I'm so pleased to hear about much joy you have in your life.

Janice - nice that you have your car back sans the noise!

Aimee & Jen - I hope they get that chemical mess in your neck of the woods sorted out! And hopefully you both have AC again.

PIO - That all looks so delicious!

Nancy - I wish I was together enough to put out Halloween decorations. I'd love to see pictures!

Brandi - I can't wait to hear about your trip!

This weekend is our big concert weekend. I've been in rehearsal all day so far and will be dead tired when we get home around 5PM. Fran has offered to cut up veggies for a tri tip salad for dinner tonight.

Meatapalooza is coming to an end, but I'm not sure where I'll find the time to wrap up what's already been cooked.
 
Nancy - When you finish your fall/halloween decorations, can you take a picture and post? I'd love to see it.....and Australia doesn't do halloween much or thanksgiving. Some of the kids are starting to dress up and go collect candy but not like the way it happens in the US.


Jen - I thought I was pretty reasonable at translating Aussie into US speak. But I forgot about the bell peppers! Yes, capsicums = bell peppers. I know you can get yellow bell peppers readily in the US....so you can probably add red, green and yellow to the sauce for more colour.


Aimee - DH does eat tofu and we all love it. I haven't tried substituting the meat for tofu in the pad thai. Not sure why. I think I tend to cook more Malaysian than Thai and the Char Kaoy Teow noodles that I cooked and posted previously tends to have a showing more than the Pad Thai does. But thanks for the reminder. I think I might just do the sub with tofu....

If you aren't clued on on Brandi's PTR, you're missing out! She has some great scenery, food porn and other stuff! She's updating on her Amsterdan and Russian (I think) cruise before she gets to the WDW vacay. Fascinating stuff, and fairly humorous....who would have known that a little Belgian pissing boy inspired a french fry chain! :lmao:

It is raining. It's been raining all night long!!!! :banana: The ground is so dry that it can't keep up and our whole yard is flooded. Our pond, which dried up, now has a small puddle in it! :love: And it's not supposed to stop raining until tomorrow!

We cleaned yesterday. I have some more cleaning to do today. I also spent lots of time yesterday organizing all of my recipes on Pinterest. I am totally addicted to Pinterest and I totally blame Aimee. :lmao:

Last night's dinner was homemade pizza. Tonight I'm making fried fish with my fresh tartar sauce and fries.
