The What's For Dinner Thread - Feb '09(recipe index in OP)

Aimee- Stay safe, a good friend of mine works the fires but she usually ends up further west. I worked with another girl who was a smoke jumper- not for me. How are things with Ace?

He is good - but one of mine doesn't care for him at all and they've had a fight. He just doesn't have any manners and is very active and playful. I am going to have to start pressuring my colleague to decide so I can move to finding him another home.

So what is everyone doing on Easter?

That recipe sounds yummy!

I have just about decided my menu - there are just 4 of us:

little smokies in BBQ sauce
deviled eggs
pumpernickel bread with spread
some other frozen appetizer that I pick up

filet mignon
boursin creamed spinach
asparagus
baked pasta with basil
crescent rolls

dessert is whatever looks good at Costco when I go today

How do you make your asparagus bundles? I haven't decided what to do with the asparagus yet.

Speaking of making Easter eggs, did anyone see Paul Deen last evening? She made Easter eggs out of day old mashed potatoes (that she added another stick of butter to) and mixed that together with a huge bowl of confectioners' sugar. Then she shaped it into eggs and dipped them in chocolate. :eek::confused3

Today I am running a bajillion errands for Easter before the Good Friday service tonight. I am making Golden Green Paella - I'll post the recipe if it's any good =)
 
The kids have the day off today, so I invited Caili's friends over for a tea party.

How do you make your asparagus bundles? I haven't decided what to do with the asparagus yet.

This is my friend Brenda's recipe. If you don't like prosciutto or don't have it I think it would still be good without it: (She refers to them as asparagoose, goose for short:laughing:)

Asparagus Bundles Wrapped in Prosciutto

Ingredients:

1 to 1 1/2 pounds asparagus (about 40 spears)
1/4 pound sliced prosciutto (about 8 slices)
2 tablespoons unsalted butter
1 tablespoon olive oil
3 cloves garlic, minced
Freshly ground black pepper
1/4 cup freshly grated Parmesan cheese
1 lemon, cut into wedgies

Directions:

Bring a large skillet of water to boil over high heat. Meanwhile, trim ends from the asparagus and peel the lower half of the spears. Add the 'goose to the boiling water and cook, covered, for 2 minutes. Immediately drain and rinse under cold running water until the 'goose are cold. Drain again.

Pre-heat oven to 400 degrees.

Gather abour 4-5 asparagus spears of similar size and thickness, line them up, and then trim the ends so they are all the same length. Place a strip of prosciutto on a clean work surface (who'd use a dirty one? ), fold it lengthwise to make a long, thin strip. Arrange your spears in the middle of the prosciutto and roll the meat around the 'goose. Place the meaty little bundle in the bottom of a glass baking dish and repeat with process with remaining asparagus spears and meat.

In a small skillet, heat the butter and oil over medium heat. Add garlic and cook for 3 minutes, stirring frequently until the garlic is soft but not brown. Remove from heat and season with pepper to taste.

Sprinkle cheese over all those waiting asparagus bundles in their baking pan and then drizzle with the butter mixture (the dish can be made several hours in advance up to this point - cover and refrigerate until ready to bake).

Bake the asparagus for 13-15 minutes - the cheese should be melted and the 'goose should be tender but not soft. Serve hot with lemon wedgies on the side.

Praying for you Sheryl. Praying for courage and patience. Been there done that PLEASE don't wait so long that the nerves die and then the feeling never comes back as that is what happened to me. Permanent numbness that is no fun to deal with either. Don't mean to scare you just telling you what happent to me.

I had eggs for dinner and Buddy had a tuna grinder. Marisa and family are at the Hannah Montana movie. Kady wanted me to go but I had more errands to get done. I told her that she could take "Nana Montana" to see it another day if she liked it enough to see twice. SHe gets a little annoyed but I cannot help myself :lmao:

We went to Alligator Pear and I had the Seared Tuna Salad and guess what I'm having for dinner.....Seared Tuna from Zea Rotisserie!!!!:cool1:

Do you think you'll have time to get together when you're in town? I'd love to meet for lunch one day!

Just a quick hi, I am going to have to read tomorrow. I need to get my little man to bed.

Weather was beautiful today. We took my DM to a local seafood shack and got clam cakes and chowder for lunch. After we took DS to a playground right on the beach, he had so much fun. Dinner was homemade waffles DM made.

You aren't kidding! I called my dad while I was there and rattled off the choices so he could decide; ended up with one of their monster chocolate cakes. It's on my counter and I'm DYING to take a bite. Since it looks so rich, I'm going to pick up some vanilla ice cream to go with it.

It's probably not the most Eastery dessert but who cares! :laughing:

There may be a change in dinner for tomorrow. My DM nows says we should go out instead! :headache: Darn it I mean Sunday, I feel like today is Saturday! :rotfl:

My DM and sister talked to each other, DM says lets go out, talk to your sis and for us to decide. I call sis she says she doesn't know what she wants to do! :mad: Somebody needs to make up their daggone minds because my DM works tomorrow evening and I am going to be the one doing any pre-cooking.

Either way I am going to make this chocolate dessert kit from Tastefully Simple. I am also going to get some strawberries and make some sort of sauce for them.

Maria, Cannot wait to see pics of the eggs and orchids! I meant to tell you the other day that I would like to see pics from the botanical garden.

I boiled some eggs to dye but fell asleep...so we will do them on Easter at some point or Sat. I just have to dye eggs for tradition!!! I also have to put the kids baskets together. So much to do so little time. At least Andrew knows who the bunny is and T Tom won't remember! ;)

I wound up going shopping yesterday to get an outfit for the wake/funeral. Stupid me was on a whirl wind trip to the mall since we saw the Easter Bunny and Andrew gets antsy shopping so I went to Bloomies, tried on an outfit that the saleswoman recommended and bought it even though it was $444 (stupid me didn't look at the tags)! :scared1: Now, to be honest, I do not mind spending money on clothes but for a stay at home mom that basically only dresses up on ocassion (usually just Church) I can't justify that so it is being returned. It wasn't even a suit just pants, a T and a vest sweater. So, off to Lord and Taylor and got me another outfit and shoes for half the price. Teaches me to look at tags...

I will not be on the computer until Tuesday probably since the wake is today (Sat) and the funeral is Monday. Thank you all for your prayers and thoughts...your friendship means the world to me and has helped me deal with Charles passing. :grouphug:

The eggs will make the stickered eggs that Kady will make with Marisa look :upsidedow but Marisa has no patience with messy things. The glittery sparkly tie died things have been overruled


Cooking and baking today. Do you think I can make the pineapple bake and refrigerate it today for tomorrow? How about the filling for the Angel cake? I am chopping mandarin oranges with the crushed pineapple. I will also whip some FF cream cheese in with the filling

I've tried keeping up but I am so behind here. Sorry if I am missing someone.

I got up to clean out my pantry since I found bugs in my orzo the other night I was obcessed with finding were they came from. It must have been an isolated box since nothing else is was not in a plastic container or ziplock.:confused3 But at least everything is organized. Anyone need corn starch? I have 4 boxes :confused3

Wel I must get in the shower and then start my baking for tomorrow.
