Becky- my sister bought a nice panini press from Pottery Barn, I think. It works really well but is wicked expensive! She got it thorough Deb's discount. I think I would have been too cheap to pay even the discounted price! You sandwiches make me rethink this often though

Gina- you are getting closer aren't you?

Lauren- I am hoping that you are okay/ It is so soon after the baby that Iworry you will get exhausted, so please take care of yourself even while your instinct is to care for others. How is your Mom holding up? I know that Charles is not her son but he certainly has a connection to all of you, as a parent this has got to be very sad.

Not sure what is going to be for dinner tonight. My DM made a chicken last night but I don't know if I want leftovers. I do have a bag of frozen seafood mix that I was thinking of making into a stir fry so I may have that.

Well, I knew you would say that! I think I am going to pick the meat off and freeze it. I'm not in the mood for chicken tonight, and I am tired of not cooking. I am having fish tacos.

For those sandwiches, I just cut the bread in half and stuck it right on an oven rack at 375 until it was nice and crispy.

I don't have a panini press. I used to have one, but it never worked well enough for me, so don't buy that brand! (flama) When I make pressed sandwiches now I just cook them in a ridged grill pan and weight them down with a cast iron skillet.

Isn't that a new tag that you have? Congrats!

Last year I stumbled onto this wonderful thread. I read for a bit and then I lost it. When I enquired about it and where you all went to, Lauren was the one who directed me back here. I have been a daily reader since. I know you all don't know me, but believe me when I say I have kept you all in my prayers, laughed with you and cried with you. I even went out and bought a bottle of Rosa Regale just so I would know how good it is. LOL

Anyway . . . Lauren when I read the news about Charles, I cried. I am so very sorry!!

It showed up a couple of months ago. The funny part is that the whole sentence is not there! The rest of it said "for cream and butter," but either the whole sentence did not fit in the available space, or the tag fairy likes the fact that every time I look at my tags I think of a UPS truck made out of mashed potatoes!

I can't decide what to make for dinner. I got takeout Cambodian for lunch with one of my coworkers and now I am full. The egg thing does not sound appealing anymore.

Ended up having scrambled eggs and fried potatoes and onions. I was looking in the fridge, saw these two leftovers boiled potatoes and suddenly wanted fried potatoes and onions in a bad way!

We have some out of control wildfires - so far, my house isn't in danger but they are spreading like, um, wildfire. The air is smokey and hard to see/breathe in. Families have lost their homes already - please keep the firefighters and families affected in your prayers.

My fish tacos were good, and Liam and Caili ate all of their fish as well. We had haddock, and as long as they know that it comes from our local market, they eat it. They are fish snobs!
