Where the heck has this year disappeared to?!?!?

Tonight I am making the crockpot Italian chicken provided by a DISer on another thread. The recipe is listed on the first page. I am having a yummy garlic parmesan bread to go with it. Man, I'm hungry already!!

Summer Black Bean and Pasta Salad (from Cooking Light June 2006)
3/4 cup uncooked ditalini (or small elbow macaroni if you can't find it)
1 1/2 cups halved grape tomatoes
3/4 cup diced peeled avocado
1/2 cup chopped seeded poblano chile
1/2 cup chopped cucumber
1/3 cup chopped red onion
2 tbsp chopped fresh cilantro
1 (15-ounce) can black beans, rinsed and drained
2 tsp grated lime rind
2 tbsp fresh lime juice
1 tbsp cider vinegar
2 tsp extra virgin olive oil
3/4 tsp bottled minced garlic
3/4 tsp salt
1/8 tsp ground red pepper
1 med. lime cut in 4 wedges
1. Cook pasta according to package instructions--Drain and cool completely
2. Combine the tomatoes, avocado, poblano, cucumber, onion, and beans in a medium bowl, stirring well. Combine the rind, juice, vinegar, oil, garlic, salt and pepper in a small bowl, stirring well with a whisk. Add pasta and lime mix to bean mix, toss to combine. Serve with lime wedges. makes 4 servings

The pasta salad last night was sooooo yummy! Just enough heat to warm up your mouth, and it was so pretty with all the different colors--Can't wait for leftovers for lunch. Tonight it will probably be seared chicken with tomatillo/avocado salsa
 
It's 1:30 and I still do not know what I'm cooking for dinner! I've been out in the yard attacking the jungle, and need to go back out after lunch, so dinner is on the back burner today. I thawed chicken drumsticks out, so I can do something later if I am back in early enough.
 

Today was DS's last day of school. At his request, we're having grilled bratwurst, herbed noodles, applesauce and sauerkraut (not that he'll eat that!)
 
Didn't get a chance to post yesterday, but last night's dinner was a new casserole from a recipe on allrecipes.com ~ it was awful, LOL!! :crazy2:


Today I made sloppy joes and fries ~ fresh kiwi and apricots for dessert :sunny:
 
Last night we nuked some chicken cordon bleu and veggies. Tonight we ate out at a local sub shop. I had a small steak sub (they make their own rolls) w/ homemade fries and NC Beast had the all you can eat buffet (baked ziti, pizza, salad).
 
That crockpot Italian chicken makes a TON so we are having leftovers tonight. Man, if you want some comfort food, this sure is a good choice. Not to mention my garlic parm bread was yummy :) :) :)

We're having DD9's birthday party at the local putt-putt place today and won't be home until close to 4:00 so I won't really have time to cook. I think we'll pick up pizza or tacos on the way home. :sunny:
 
Hi there! I've been a lurker on this thread for a while, but I tried a recipe last night I thought most of you would enjoy. It's from Food Network's Essence of Emeril - his Spicy Barbeque Shrimp Skewers and Black Bean Relish. The ingredient list is a little long, but it's the kind of recipe I like....dump & go!

Don't let the "bbq" throw you. This is a yummy combo with the relish. Even the kiddos liked this one! Let's see if this will work.....

1/4 cup vegetable or olive oil
1 tablespoon minced garlic
1 tablespoon fresh thyme
1 tablespoon chopped cilantro leaves, plus more, for garnish
1 jalapeno, seeded and minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon light brown sugar or honey
1 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes
1 lime, juiced
2 pounds large shrimp, peeled
Black Bean Relish, recipe follows

In a large bowl, combine all ingredients except the shrimp and the relish mix well to combine. Add the shrimp to the seasoning paste, and toss to thoroughly coat with the seasoning mixture. Let the shrimp sit in the seasoning mixture while you prepare the grill.
Prepare a grill and thread the shrimp onto 4 or 6 metal skewers (depending on their size)*. Place shrimp skewers on the grill and cook for about 3 minutes on each side, or until the shrimp turn pink and are lightly charred on both sides. Do not overcook!
Serve the shrimp with Black Bean Relish
*If you don't have metal skewers for grilling, bamboo skewers will work just fine. Simply remember to soak them for at least 30 minutes in warm water before threading them with ingredients, this will keep them from burning.

Black Bean Relish:
4 cups cooked black beans, drained and rinsed
2 cups cooked corn kernels, cut from the cob
1 red bell pepper, finely chopped
2 large cloves garlic, minced or 1 teaspoon minced garlic
2 jalapeno peppers, seeded and finely minced
1/2 bunch scallions (green onions), minced
1/4 cup chopped cilantro leaves
2 limes, juiced
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

In a large bowl combine all of the ingredients and stir to mix well. Season the black bean relish with salt and pepper, and set aside at least 1/2 hour before serving with the shrimp. Finish the black bean relish with the chopped cilantro


Note...I cut the relish recipe in half and subbed one can of kernel corn instead of fresh corn off the cob. I can't wait to try the leftover relish now that the flavors really have had time to mingle!
 
The chicken went back into the fridge, and we ate leftovers. I did not get in the house unti 6:45 PM! Tonite we are haveing oven roasted chicken, and a vegetable. CUcumbers and tomatoes. DH wants to work until dark, so it will be ready when they come in.

Stacy, try recipezaar for some good recipes. I like the reviews, the rating seems to be before any alterations to the recipe, not after, so I can get a better understanding of the result before I try it.

Virgo10: The stew was awesome! I cheated and added rice to it instead od serving it alongside it. This is goiing to be a summer hit for me, so thank you for sharing.
 
Tonight is the kids favorite meal..Home made chicken breast strips.. I'm make some honey mustard sauce, BBQ sauce and Buffalo Chicken sauce for them to use with it.. I'll probably make some spinach with balsamic vinegar and garlic to go with it
 
Don't know what dinner will be for us yet--Our house is being shown twice this evening so we have to be out from 5-8--It will be out somewhere, but where I don't know! Probably close to the movies, b/c DH is taking DD to see Cars tonight! :goodvibes
 
After cleaning out my basement and planting my tomatoes today, I didn't feel like cooking. We had take-out pizza.

We did end up eating out but we decided on Chinese so we ate at the restaurant which was nice after a busy day. :sunny:
 
so we went simple:
taco's, fajita's and my "new" rice.....


um, guess what was sooooo leftover? Yep my rice....I did a bag of minute rice, black beans and jar of salsa.....I think I was the only one who had a helping!!! But both DD's and my Charming had a NO THANK YOU BITE. Really it was good - it could have used a can of green chilis but I am hesitate due to the diaper situation. At least Samantha could say - Yo mom toooo hot!

Today we are going up to Fall Creek Falls w/ my in-laws for Father's Day. There is a restaurant up there we will eat at (for lunch). When we get home we will probably just pop popcorn for a light "snacky dinner."

DS had his last baseball game of the season today and his coach had the whole team, and parents and siblings come for a party at his house. We had hotdogs, hamburgers, chicken, pasta salad, a really yummy corn salsa and chips. When we got back to our house, the kids weren't that hungry, so we had nachos for dinner.
