I made extra hamburgers last night so that's what we are having for dinner, steak fries on the side. WFD at your house?
 
I have leftover pork that I need to use up. I need to make something that will hold for a long time, as DH and family will be at the farm tonite.

I did not make last nights pasta meal. I went shopping with DD and DGD, so we had chinese and DH and SIl made sandwiches with the chicken.

Tonight I am making a grilled veal chop for DH. I am also making a parmesean-tallegio risotto, a mixed greens salad, and garlic bruschetta.

:blush: I get the crabcakes from QVC (special occasions and when they are on special). The crabcakes (Chesapeake Bay Gourmet) usually contain big pieces of lump (never had a shell) and not overseasoned.

Well, I came out of dinner tonight with singed eyebrows, eyelashes and a few stray hairs. My ignitor for the grill didn't work, and I guess there was still quite a build-up of gas when I lit it with a lighter. At least my shirt didn't catch fire.

Anyway, we had grilled, lime/chili chicken, guacamole, onion rings and snap peas.
 
I made chicken Broccoli and cheese casserole.. It's almost time to light the Shabbos candles
 
Tonight I had use my non-stick pan without adding oil/fat to cook some lean cubesteaks then I added a can of cream of mushroom soup (98% fat free) on top of it. We had it on top of dry unbuttered toast with unbuttered broccoli. We didn't miss the butter or the subsitutes because of the seasonings used.

We had leftover cake for dessert.
 
I couldn't post at all this morning when I tried so I am just now getting to this thread.

My 10-year reunion was today so I didn't cook. :) :) :)

WFD (or more appropriately, WWFD, What Was For Dinner) at your house?
 
We are going to IHOP for breakfast in a little while. Since we will get a big meal there, we are just going to have soup and sandwiches tonight. No biggie.

I'm making chicken and dumplings in the crockpot today ~ I'll toss in a baked potato for DH since he's not a big fan of dumplings. :sunny:
 
Last night I made a tomato tart. we also had a mixed salad. Eevryone said I did not make enough food. They were probably right.

Today I am going to my inlaws, so my guess is that we'll be having chinese food (yuck).
 
I was not able to post yesterday. I went to a bithday pary for my cousin, so I did not cook. DH had leftover spaghetti when he got home from the farm.

Tonite we are having polynesian chichen with rice. Maybe some garlic bread or rolls. I think I will pop a cake in the oven.

Considering that we reheated a large bag of eggplant pasta during dinner and later consumed a pan of nachos, I would say that is an accurate assessment. The tomato tart was yummy though.

DD and DS were at a neighbor's birthday party most of the day today -- so was I because DD doesn't like me leaving -- so we just had sausage subs tonight.
 
Tonight I am making homemade oven-baked corn dogs and "fast-food fries." It's a Rachael Ray recipe :) Her's is spiced up chili style, which I love, but my tummy won't, so I'm ommitting the chili powder part. Here's the recipe:

Oven-Baked Corn Dogs :)

2 boxes corn muffin mix, 8 1/2 ounces each (recommended: Jiffy brand)
1 cup all-purpose flour
2 eggs
3/4 cup milk
1/2 stick butter, melted
1 tablespoon chili powder, eyeball it in your palm
2 teaspoons cumin, eyeball it
2 teaspoons cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot
2 scallions, finely chopped
8 jumbo pork or beef franks
Sweet Relish Slaw Salad, recipe follows
1 bag reduced fat potato chips (recommended: Cape Cod brand or Terra brand Garlic and Onion flavor Yukon chips)
Preheat oven to 425 degrees F. In a shallow dish, combine muffin mix with the flour, then stir in the eggs, milk and melted butter. Season the mix with chili powder, cumin, cayenne and scallions. The batter will be a thick, sticky biscuit dough. Place a hot dog in the bowl of batter and swoosh it around to coat it. Remove coated dog to a nonstick cookie sheet and use your fingers to spread batter on any exposed dog spots. Don't coat it too thick, just shy of 1/2-inch should do the trick. If it's too thick it will just slide off the dog while it's baking, leaving the dog exposed. If that happens don't sweat it, they will still taste great. Repeat until all 8 are coated. Bake 12 to 15 minutes or until evenly deep brown all over.

Serve the oven baked corn dogs with your favorite hot dog condiments.

Sorry I have been MIA for so long--but we've been gone house hunting for the past week and a half.

Lindsay--I love the oven baked corn dogs--I put too much coating on mine though and most of it fell off the dogs in the oven--and after all that work DD picked all the coating off and just ate the hot dog--oh well.

I think tonight we're going to have some Thai Beef Wraps--a recipe from cooking light this month. Sounds really good.
 
Dinner yesterday was not chinese food, but it was urg-tastic anyway. My FIL made a dish of boneless skinless chicken breast, covered in cream of chicken soup and swiss cheese, baked at 400 degrees for an hour. I gently questioned him on the cooking time, but he told me that it's important to be safe with chicken. Okay then. Served with plain baked potatoes and spinach that had been boiled for 15 minutes. I love my inlaws, but they can't cook! (I ate it anyway, with a smile, of course.)

Tonight's dinner is going to be simple and fast--just grilled turkey burgers and sweet potato oven fries.
 
Well if we still have power tonight we'll be having:

Southwest Chicken with black beans and rice

1/2 cup Italian Dressing
4 boneless skinless chicken breast halves
1 cup chopped onions
1 can (14 oz.) stewed tomatoes, undrained
1 cup rinsed and drained canned black beans
1/2 tsp. hot pepper sauce
1 cup rice, cooked



Heat dressing in large skillet on medium-high heat. Add chicken and onions; cook 4 min., turning chicken over after 2 min.

Add tomatoes, beans, and pepper sauce. Reduce heat to low. Simmer 10 min. or until chicken is cooked through, turning chicken over after 5 min.

Serve over hot cooked rice.

These crabcakes are scrumptious! I got a tin of them for my crab cake crazy DH for Christmas...expensive, but worth every penny!
 
Tonight was skating for DD so she had a lunchbox dinner of ham and cheese, blueberries, and a juice box. DS went to the in-laws and had mushroom pizza. I ate after the kids went to bed and microwaved some frozen Indian food that I had put in the freezer after going a little overboard on a take-out order. Wow, was it hot!

All these activities definitely impact our nutrition. It should settle down next week...no baseball, no soccer, no evening skating, no practices. Woo-hoo!
