NC Beast took charge of the Monday meals. He bbq'ed some burgers for lunch with a side of mixed veggies plus he made pasta for dinner.
 
My corndogs turned out awesome!! I was so proud of them! It was a cheap, easy go-to meal I will definitely be doing again.

Tonight my husband has his monthly geek meeting and won't be home until 8 or 9. I bought some pesto and have some angel hair pasta so I that's what I'm having for dinner. I also got Taxi Driver from Netflix and will be watching it tonight :)

NC Belle: Love those crab cakes. :goodvibes I also get them for special occasions.

Last evening my family was working late, so we just had tuna sandwiches, and butter cake for dessert. Tonite DH informed them he wants to set plants until dark, so I am going to run some sandwiches and cold drinks down to them. DD says they keep saying to each other: "Remember Disney, remember Disney remember Disney".

We'll be eating out tonight as they are showing our house at 6pm. I'm thinking maybe Thai or Indian--Yum!
 
I am not even sure if I am going to get dinner at all tonight! I am going straight from work to the hair salon for a cut and foil, plus I have to get pre-vacation waxing (youch!). I don't think I will be home until 9 or so. DH is out with business clients tonight.
 
I got some awesome-looking fish from a newly discovered market. Now my only dilemma is what fish to make tonight and what one to save for tomorrow.

Right now, my menu is grilled halibut with mustard sauce, grilled asparagus and sweet potato sticks.
 
Last night was grilled Mahi Mahi, orzo and grilled pineapple and strawberries. Tonight is grilled chicken, corn and asparagus.
 
No time for cooking today so I grabbed a tray of fried chicken from the deli and everyone had assorted sides with that. :sunny:
 
I haven't cooked in a while so I've forgotten to visit the thread.

Sunday we went to my in-laws for my DH's birthday dinner. We had chicken fajitas with all of the fixings and rum cake for dessert. This is the best rum cake I've ever eaten and DH requests it for every occasion. I made it for him.

Last night we were too full from lunch so we ate cereal.

Tonight was pasta from Semolinas. Hopefully things will slow down enough tomorrow that I can plan a meal and cook again.

Yum...I love grilled pineapple. I've never tried grilling strawberries, but I might now.

My dinner plans got somewhat sidetracked because just as I was about to put my asparagus and cauliflower (added for DD) on to cook, the grill ran out of gas. ARRGGHH. I really hate that. Would it be so difficult to put a gauge on the propane tank? I ended up roasting everything in the oven, which of course made the house hot. Everything was good though. DD(4) ate about a half-pound of halibut.
 
Tonight I am making Rachael Ray's Mega Meatball Pizza. It's really good and my hubby loves it. Here's the recipe:



1 pizza dough
2 T. finely chopped rosemary leaves
Coarse salt
1 lb. hamburger meat
4-6 cloves of garlic, finely chopped
Black pepper
1 (6 oz.) can tomato paste
½ cup grated Parmigiano- Regggiano
2 T. parsley
1 t. dried oregano
Grated mozzarella cheese


1. Preheat oven to 425.


2. Drizzle baking sheet with some EVOO and set crust in place. Poke pizza dough with a fork. Drizzle the top with EVOO and season it with rosemary and salt. Bake for 10 minutes.


3. Heat a large skillet over medium heat. Add EVOO to pan. Add meat. Brown and crumble meat a few minutes, then add onions and garlic. Season meat with salt and pepper and then work in tomato paste with the back of a wooden spoon. Stir in the cheese, parsley, and oregano.

4. Remove pizza crust from oven and top with meat. Sprinkle the pizza with mozzarella cheese and return to oven until cheese is melted.

Last night I made homemade chicken salad sandwiches for dinner.

Tonite I am havingVirgo10's Summer Stew from page 19. I think I will make refries bean pie for DD and DSIL. They are taking the little one out for an ice cream or something so their dinner will be light. DH gave them the night off, I think he took pity on them because they crawled in after 9 PM last night, and he may want to avoid a mutiny :rotfl:.
 
They are showing our house again tonight at 6, but instead of going out to eat we're going to have a picnic at the park. I'm going to make a black bean pasta salad (no mayo, so really picnic friendly) and some mango and cantalope for dessert.

Tonight I am grilling sausgaes and serving with pasta in a tomato-cream sauce and garlic bread.

This will be my last post here for a while. DH and I are off for an extended vacation and we won't have internet access. Carry on, and I will see you all again after the 4th of July! :wave:

I didn't get the chance to bring my propane tank over for refilling today, so I am going to have to utilize the stovetop. I am not turning the oven on again.

I'm making pan-seared salmon, sauteed spinach and macaroni and cheese (the kids won't eat the salmon.)

Summer Black Bean and Pasta Salad (from Cooking Light June 2006)
3/4 cup uncooked ditalini (or small elbow macaroni if you can't find it)
1 1/2 cups halved grape tomatoes
3/4 cup diced peeled avocado
1/2 cup chopped seeded poblano chile
1/2 cup chopped cucumber
1/3 cup chopped red onion
2 tbsp chopped fresh cilantro
1 (15-ounce) can black beans, rinsed and drained
2 tsp grated lime rind
2 tbsp fresh lime juice
1 tbsp cider vinegar
2 tsp extra virgin olive oil
3/4 tsp bottled minced garlic
3/4 tsp salt
1/8 tsp ground red pepper
1 med. lime cut in 4 wedges
1. Cook pasta according to package instructions--Drain and cool completely
2. Combine the tomatoes, avocado, poblano, cucumber, onion, and beans in a medium bowl, stirring well. Combine the rind, juice, vinegar, oil, garlic, salt and pepper in a small bowl, stirring well with a whisk. Add pasta and lime mix to bean mix, toss to combine. Serve with lime wedges. makes 4 servings

Chicken satay skewers, brown jasmine rice and grilled pineapple w/vanilla bean sauce. The sad part of it is we don't even have a bbq...we're using the George Foreman for the pineapple and we're doing the chicken skewers in the broiler. :rolleyes:
