I'm Ashley.
This is my first time posting on this thread.

Tonight, I'm making Lindsay's Ritz ParmesanvChicken recipe (for the first time) with mashed potatoes and bread.

Tonight I am making my black bean chili (recipe on page 1) and making some jazzed up cornbread. You take a box of Jiffy, prepare as directed, add 1-2 chopped scallions, a few drops of Tabasco, and a handful of frozen corn. Bake in a muffin tin. MMMM! :)

Lindsay, your cornbread sounds really good. I'll have to try that.

Tonight I'm making grilled teriyaki boneless porkchops (they've been marinating since yesterday, mmm) eggrolls, white rice, and broccoli. I was going to do edamame too, but I think we're already having enough food.
 
Sorry I didn't post yesterday ~ we had chili dogs and fries last night. Nothing spectacular, LOL.

I think I'll do some marinated cucumber slices and grape tomatoes for a fresh side dish. :sunny:
 

I had leftover cubesteak and mixed veggies while NC Beast had a personal size frozen pizza and a spinach salad.
 
Tonight we are having leftover black bean chili and cornbread. As we sat eating last night, I kept thinking something wasn't right about my chili. Right when we finished it hit me- I didn't add any corn!! That was ok, though. I added some to what was left, so tonight there will be corn in there! :)

Tonight we are going to the Rainforest Cafe in Towson, MD with a few friends. I haven't gone to one of these restaurants since we were in Disney World. :guilty:
 
It is HOT today, so I am making a chicken salad, and we will have that with some fruit.
 
As usual, I ordered way too much Indian food yesterday, so I had leftovers tonight. I made macaroni and cheese for the kids (homemade...they won't eat boxed) and they also had carrot sticks. Their favorite part of the meal? The Red Sox ice cream sports bars I let them have for dessert.
 
I asked DH to stop by the store on his way home to pick up stuff for dinner because we had nothing in the house. He forgot the corn so we just had hamburgers and baked beans for dinner.
 
Today we are taking my dad to The Chop House for his Father's Day meal. Long story short, his marriage is on the rocks right now and opted to spend Father's Day with his wife. Hurt my feelings a little, but I did understand. So we are meeting up later to go eat. Me and my hubby may go see Cars today, too :)

Today I am going to grill some ribeyes and make some oven fries and sweet corn to go with them. :sunny:
 
Not sure what DH and I are doing yet. DS is at his uncle and aunt(2B)'s house for the weekend. They're going out for sushi.
 
Tonight we are having:

Easy Chicken Enchiladas
1 pk cream cheese
1 cup salsa
2 cups chopped cooked chicken
1 can pinto beans drained
6 flour tortillas
2 cups shredded cheese

Preheat oven to 350. Lightly grease a 9x13 baking dish.
In a small saucepan over med heat combine the cream cheese and salsa. Cook stirring until blended and well melted. Stir in chicken and pinto beans. Fill tortillas with mixture, roll and place into baking dish. Spread cheese on top. Cover with foil.
Bake 30min. Garnish with sour cream.


I got this from All recipes...it is so easy and I add in onions and often different beans.
 
Today was a big event day for us. DS went to the Red Sox game, but left right before Ortiz hit his homerun. I still can't believe my family was there and didn't see it. DD and I had a girls' day out and saw "Annie" and then came back to have dinner near home at a rather nice restaurant. The best part was her dessert. They brought out a vanilla ice cream with chocolate fudge sauce sundae the size of her head. She didn't finish it, not even close, but she definitely enjoyed it. Why I don't carry a camera around with me always, I just don't know.
 
We had a change in plan yesterday. My dad decided to go out with us today instead of yesterday. So me and my husband went and had a light lunch at the Macaroni Grill (one of my faves). Had a snack for dinner. TODAY we are going to The Chop House.

We had the usual Sunday linner at my parents' house --minus DSis and her hubby who are still on vacation. We had linguine and clams, salad and crusty bread. It was good.
