Happy Father's Day!!

I was going to cook for my dad today but that got postponed. He is teetering on a divorce right now and trying to work on his marriage. So I totally understood when he cancelled.

So tonight I am making cheesy crockpot chicken. Here's the recipe:

3 whole boneless chicken breasts
2 cans cream chicken soup
1 can cheddar cheese soup

Remove all fat and skin from chicken; rinse and pat dry, sprinkle with salt, pepper and garlic powder. Put in crock-pot and add the three soups straight from the cans. Cook on low all day (at least 8 hrs). Do not lift the lid. Serve over rice or noodles.

It's Father's Day here too! Last night my DH took us to the Outback Steakhouse for dinner. Yumm!

Tonite we will have a little BBQ with hamburgers, turkeyburgers and salads. I am planning to bake a cake and maybe some brownies.
 
I had to work all day so DH grilled himself a couple of hamburgers earlier and I grabbed McDonald's for the kids and myself on my way home.

I went to my parents' house for the usual Sunday meal...minus DSis and her hubby since they're on vacation. We had the cedar planked maple salmon recipe DSis posted on page 15, Mom's famous potato salad, fresh peas, and tomato and basil salad. It was yummy.
 

I am having some routine maintanance done on my wheelchair later this afternoon. The place I go to is kind of in downtown Chattanooga, and my hubby is going to meet me there. Afterward we are going to go out to eat, hopefully to the Olive Garden or the Macaroni Grill. So woo hoo! I don't have to cook!

Hope that everybody had a great weekend!

We are expecting some wicked weather any time after 4 PM today, so I am planning on a meal that can be made a little bit ahead of time. Roasted chicken thighs with BBQ sauce, leftover macaroni salad, and some kind of hot veggie if we don't lose power.
 
Today I'm going to grill some chicken drumsticks with honey BBQ sauce (yum!) and I'll toss in some baked potatoes and make a salad too. :sunny:
 
I'm making mine now, and DH will make one for him and the boys later.

Mine is cashew crusted chicken over pineapple, and I'm looking forward to making a galley salad with the leftovers! (my fave from Columbia Harbor House). DH and the boys are having Cordon Bleu Croissants.

Oooh, I love that salad!

Tonight I'm making DS10's favorite BBQ chicken leg quarters. It's his 1/2 birthday today. :teeth: Since his real birthday is so close to Christmas and sometimes gets overlooked a little, I try to do something special for his 1/2 bday.

I'm also going to make brocolli, Pasta Roni Shells & White Cheddar and a copycat recipe for KFC's coleslaw. Not sure about dessert yet.
 
I went all out last night for dinner, it was Fathers Day so I had to. We grilled steaks & marinated chicken breasts, and I made twice baked potatoes, corn on the cob, a salad, and rolls. And chocolate cake from scratch for dessert. It was all really good, but two steaks cost me $20 & I dirtied every dish in the house, I think.

So tonight it's going to be something easy & cheap! Pizza noodle casserole - egg noodles mixed with hamburger, Italian spiced tomato sauce, any pizza ingredients I have on hand, and topped with cheese. Maybe some garlic bread with it. The kids love it & I can make it ahead, my daughter has karate class this afternoon.
 
Nothing too exciting here today. I had brie, fresh tomato and lettuce on a baguette, DS had pizza, and DD had a ham and cheese on her way to her skating lesson -- our last evening activity for a while. Woo-hoo!
 
June is flying by!! :)

Tonight I am making my Ritz Parmesan Chicken. The recipe is noted on the OP. I am making some green peas with it and a hash brown casserole (my mother's recipe!). Here it is:

Melt 1 stick of butter in the bottom of a 9x13 casserole dish. Add a 2 lbs. bag of frozen hash browns (make sure they aren’t pre-seasoned), partially thawed and broken up.

Mix:
1 (8 oz.) tub sour cream

1 can cream of chicken soup
2 cups shredded cheddar cheese
Salt and pepper to taste

Pour mixture evenly over potatoes. Melt ½ stick butter and mix with 2 cups of crushed Corn Flakes. Spread over top of potatoes. Bake at 350 degrees for 45-55 minutes.

NC Beast used the bbq yesterday--so we have leftovers for the next several days.

Monday---bbq chicken with black bean chili mac.
Tonight---burgers and Suddenly salad plus veggies.
Tomorrow---chopped chicken in either pasta or a burrito style or burgers.
 
Sorry Lindsay, I am late posting today. I couldn't decide what to make, and then thunderstorms came through during dinner preparation time. We just had pasta with marinara sauce and a cucumber salad.
 
Tonight we are having leftover Ritz parmesan chicken and hashbrown casserole. Mmmm :)

Good Morning, everyone
Last evening we had my version of a Bertucci entree:
Gemelli pasta, cooked
Lots of chopped garlic
chopped sundried tomatoes in oil
roasted tomatoes, chopped
fresh tomatoes, chopped
fresh grated parmesan cheese
roasted chicken removed from the bone
fresh baby spinich

this can be a hot or cold meal.
Last evening, I heated the tomatoes thru, added the garlic and the oil from the sundried tomatoes. Combined the hot pasta and the "sauce" and then added the spinich. Tossed the whole thing and topped with cheeese.

it is so good! Bertucci served this as a cold salad, with a hot chicken cutlet, very refreshing and light. We enjoy it warm with the spinich just wilted.

Added garlic bread!

Tonite I am not cooking as I am attending my sisters sons graduation. Please send some positive thoughts our way, as she had a nasty divorce, and her ex has done a fine job of ensuring that my nephew does not speak to his mother. It is heartbreaking. She is going to watch him recieve his diploma, along with my sis in law and my Mom. This is going to be a tough night.
 
I forgot to post yesterday. We had grilled ham steak with apricot-cherry glaze, mashed potatoes and peas.

Tonight is marinated grilled chicken breast, pasta shells in white cheddar sauce (that we didn't have the other night) and canned corn.
 
I change my mind from yesterday about tonight's meal. We are having pan-grilled cube steak and veggies.
 
I had grilled Arctic char, potato salad and broccoli. The children had grilled chicken, some char for DD, pasta with butter and chives, and broccoli. I have a daughter who is a carnivore -- she ate a piece of chicken, half the fish and some broccoli, reluctantly, and none of the pasta -- and a son who is an herbivore. He ate the broccoli, two servings of pasta, and very reluctantly, a couple bites of chicken. They really are like Jack Sprat and his wife. What one will eat, the other will not.
