Tonight my husband won't be home until really late (monthly geek meeting) so I will probably just have pizza or something.

I have to say that my chicken was perfect last night! I like that grill a lot. :thumbsup2 I want to use it again tonight, so I'll make hot sausages and hot dogs (for DD).
 
Tonite we are having leftover roast pork simmered in gravy with mashed potatoes, a green veggie and salad. I am never buying such a large roast for 4 people again.
 

Since I don't have a kitchen or a computer available to me at home right now, my posts are going to have to be about what we scrouged up for dinner the night before until I can get access to the kitchen again.

Last night we did not feel like dealing with the dustbomb that is our house at the moment, so we went out to a local italian place. We split an antipasto plate with grilled vegetables, some cheeses, and mixed greens. Then I had ricotta gnocchi in a light fresh tomato sauce and DH had braised short ribs over polenta. It was a nice relaxing evening.
 
Well, I didn't get around to making my roasted chicken yesterday after all...turned out to be a crazy day so I made an easy burrito bake dish (layers of tortillas alternated with layers of taco meat, refried beans, cheese and taco sauce).

Today I am making a big pot of beef stroganoff and some warm bread to go with it :sunny:
 
Not sure about tonight, it will be either fish or who knows what. My mother wants to "cook" tonight which means something in the crock pot. Most times she tells me she wants to cook she forgets :rolleyes: and I am left with nothing for dinner and have to come up with something. I was smart this time and took out fish. :thumbsup2

Last night I had Turkey Barbeque with roasted purple potatoes :cloud9: I got ground turkey from the Amish market and it was really good.

1 onion, chopped
1 T. oil
1/2 lb ground turkey
1/2 a bottle of barbeque sauce
(in my case I used two bottles that were a 1/4 full)


I sauted the onion in the oil, then added the turkey. When almost cooked I added the barbeque sauce, turned the heat down to low and let simmer for about 30 min. Served on a whole wheat kaiser role.

For the potatoes I cut them up like fries, drizzled them with olive oil, sprinkled on some salt and pepper and baked at 375 until they were slightly crispy and done in the middle.

A nice, quick, yummy dinner.

It is miserable in the Boston area today, so I am making spaghetti and meatballs in the hopes of getting warm. I even had to turn on the heat on again. :sad2:
 
Tonight we are having salmon kabobs. I found some at Bi-Lo and they looked so good. I may marinate them in something. We are having some rice and probably something else to go with it.

Also, I have a question. I have always heard when you use thyme you strip the leaves off backward and discard the stems because they are woody. Every time I pick my own out of my new herb garden, this method doesn't work. My stems are quite soft and when I try to strip the leaves off, they just break off. Would it hurt anything to just chop the whole thing up together and not worry about the stems being in there, since they are really soft? Any hints or suggestions?

Now for dinner tonite, I am heating up the spaghetti stoup for DH, SIL and the little one. My DD and I are getting a sandwich out because we are attending my niece's senior awards program at her university. :cheer2: Can't wait to hear some cheers for her because she is one of the top two catchers in the country, but she gets uncomfortable if she hears us singing her praises.
 
Last night we had the Creamy Italian Chicken without the chicken and garlic bread. Tonight we'll eat out unless DS's swimming and tennis lessons are rained out, then I'm not sure what we'll have.

Does anyone have any tasty but filling meatless recipes they want to share? Since I've been pregnant the thought of eating meat makes me sick.
 
DH is finally coming home tonight, so we'll probably have something he really likes. Probably pizza! :rolleyes:

Can you eat something a tiny bit spicy? If so, Rachel Ray has a great baked Chimichanga recipe. You can substitute black beans for the meat. I'll post if you want it.

Yes, we like our food well seasoned, but not have to take a sip of water after every bite hot. I'd love the recipe :)

This is the basic recipe. I steam 1/2 of the cabbage, and I also mix the cheese in with the entire mixture. I leave out the cilantro, I don't like it. You can adjust the heat by adding more or less of the chipoltles (found in the mexocan section with the refried beans, and chiles) INstead of the meat, use refried beans, black beans etc. you can also use beef from the deli if you wish to. Serve with black bean salad , recipe below.


1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely choppedPreheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.









Black Bean Salad:

1 can, 14 ounces, black beans, rinsed and drained
2 cups frozen corn kernels
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 teaspoons ground cumin, half a palm full
2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
1 lime, juiced
2 tablespoons vegetable or olive oil, eyeball it
Salt and pepper

Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Ah yes, the weird quirks of pregnancy. When I was pregnant with DS, I couldn't eat seafood at all, and normally I love fish.

We do meatless meals pretty regularly here. What kinds of food do you like? Frittatas are good this time of year if you don't also have an aversion to eggs. There's a lot you can do with pasta. I like pasta fresca and pasta with asparagus/lemon sauce. Loaded baked potatoes are tasty and filling. I also have a recipe for sweet potato burritos that is really good, and it can be made in advance.

Let me know if any of that sounds good and I can post the recipe, or if you tell me what kind of food appeals to you right now, I probably have other ideas. DSis was a vegetarian for a while, and still doesn't eat that much meat, so I have a wide variety of meatless recipes she has given me over the years.
 
Yes, bengalbelle, tell us what kind of food you like (and what you don't like right now!) and I will post some recipes. Meatless is still my preference, though I do really enjoy fish in small amounts.

So, despite my lack of kitchen access, last night I perservered and plowed out a path to the toaster oven and the microwave. The oven is completely inacessible still. I managed to make us some toasted sandwiches, but I banged my head at least six times on various kitchen implements, so tonight it is back to take out!
 
I didn't post my dinner earlier because I hadn't been to the store. Now that I am back, I am planning to make baked haddock, mashed sweet potato, and broccoli.
 
Small change in plans tonight. I got out the kabobs and the salmon smelled rank!! I was worried about it anyway because yesterday was it's expiration date. I figured one day wouldn't make a difference. I pulled it out of the fridge, opened the package and PHEW!!!!! I always heard if your fresh fish (not frozen) has a distinct odor then don't cook it.

Hubby is stopping by Subway on his way home :)
