Lindsay, I love Rachels Stoup, and make it when I know that we are all going to eat on the run. Yumm,

We are going to have leftovers today. Last night my DH and I entertained a couple of friends for a nice Saturday evening dinner.
We started with my DD's now famous crostini (I called her a bunch of times while making them), fresh cut fruit with prosciutto wrapped melon ans champagne cheddar, prosciutto roast pork and gravy, parmesan roasted potatoes (these were so good), sugar peas steamed in apple juice, and finished with mint, lemon and butter, corn on the cobb and a salad. I baked a wheat beer bread. Chocolate apricot cake for dessert.
Dinner was so good, and now I don't need to cook today.:goodvibes

I did bake some 7 grain muffins with apples, carrots and raisons. Hope they are good.
 
We're having Carnitas Tacos, which I prepared at work. :goodvibes Probably going to make black beans and rice and a nice salad with them. It's in the crockpot now.

I'm probably going to make a pineapple upside down cake, too. DH has been antsy for one for a couple of weeks.

DSis usually posts our Sunday linner menus, but her house is being renovated and she is without home computer and TV access for at least a week :eek:

Today was beautiful in the Boston area, so we had seafood mixed grill. The fish counter looked so good, we could hardly restrain ourselves. We prepared four different kinds of fish (all grilled): rare tuna with deviled shallot butter, halibut fillet with vidalia onion marinade, swordfish with Northwoods seasoning, and barramundi (Australian sea bass) with garlic/mustard sauce. All were delicious. None of us had tried, or even heard of, barramundi before. It was excellent. There were five of us eating, and we bought close to 3 pounds of fish (normally WAY too much), but at the end of the meal, there was only one small piece of halibut left.

Sides included Mom's famous eggplant sticks, mashed fingerling potatoes with cream cheese (DSis complained that they were gluey, but everyone else ate them), roasted asparagus and cornbread.

I love Sundays.
 
I just have to brag about something. This year I started an herb garden that included basil. I figured I buy it almost every week, good grief, it would be cheaper to just grow it myself. Anyway, I added it to my "stoup" tonight and it was soooo good! :)

There is nothing better than fresh herbs added to good food! What herbs are you growing. I don't think I can have one indoors, my kitchen is on the west side, so not enough light for keeping plants like herbs healthy during the winter months.

Nancy, I am growing: basil (2 different plants), cilantro, thyme, and oregano. I actually am growing mine in pots on our back porch. They get a lot of the daytime sun there :)
 
I hesitate to say this because every other day I said I was going to, we did something different.

I'm finally breaking in my new grill! :banana:

Chicken! I bought chicken parts and some extra legs and thighs. I'll use Montreal chicken seasoning on some, and BBQ sauce on the rest.

Let's just hope it doesn't rain tonight. :rolleyes:
 
Yesterday we grilled pork chops and had steak fries with them.

Today I am roasting a chicken (rubbed with garlic, rosemary, onion powder, kosher salt and fresh cracked pepper ~ real butter for basting) ~ with that I'll make some roasted garlic mashed potatoes and some baked beans :sunny:
 
Way to go, Marseeya! :cheer2::cheer2: I love chicken on the grilland I'll eat it anyway its's cooked. YUMMO!

Okay Lindsay, I give up! I keep think about Spaghetti Stoup, :confused3 so that is what we are having tonite. DD has been away all weekend with her family, so an easy meal with a nice salad will be a treat. Gotta run out because she will not eat beef, so I have to get some ground turkey for the meatballs. I was waiting for all of the frost warnings to go away to plant my herbs, only my peppermint survived from last year. Tomorrow I am taking DGD to the flower market down the way, and we are going to plant the herb garder again. :goodvibes
 
Nancy, you can just as easily use ground beef, that's what I did last night.

I would love to, but then my DD would boycott it. She has not eaten red meat for over 10 years. Honestly Lindsay, most days I am fine with subbing turkey, but there are some days that I cringe.
 
Waaahh!!! All your dinners sound so good, and I have no kitchen!!!! DH and I are going to be eating takeout for at least a week. Yuck, yuck, yuck!! Oh well, if I can't cook anything decent, at least I can read about other people's nice meals here.
 
Tonight I am making grilled cedar planked salmon (recipe on p 15). For sides, I have leftover potato salad, cole slaw and cornbread. I will probably make macaroni and cheese for the kids.

Oh come on, don't let a little rain stop your fun, go ahead and grill rain or shine. :umbrella:

I did that one night with my friends kids, we roasted marshmallows on the grill while it drizzled off and on. :thumbsup2
