It is also raining here again today (3rd day in a row!) and I really need to head to the store. I got some great cookbooks at the library yesterday, so I guess I'll see what I can find. If not, it's pizza night.
 
Last night I made the Spaghetti and Meatball Stoup Lindsay posted. It was good, but DH and I kept thinking the meatballs had an odd flavor. It wasn't until I was cleaning up the kitchen that I realized I had grabbed cilantro instead of parsley :teeth: (I actually do know the difference, but was in a huge hurry and grabbed it-the parsley and cilantro were right next to each other)

Tonight we're having the stoup as leftovers.

Lindsay the recipe you posted here is a little different from the Meatball Stoup recipe of Rachel's that is posted on foodnetwork.com. Did you adapt it yourself or are there 2 recipes?

Thanks to everyone who posted the meatless recipes. They ALL sound delicious! I plan to make some next week but need to use up the groceries already in the house.
 
I ended up making margherita pizza last night instead of chicken. I was feeling uninspired.

I think tonight will be takeout for me and DD because DS is at a birthday party, so I have to drop him off at 4:30 and pick him up at 6:30. Since the party is on the other side of town, I am only left with about an hour to prepare and eat dinner.
 
Benga, yes it is different!! I should have posted that! I just copied and pasted it from my file of recipes.
 

DH wants steak for his b'day dinner. I'll probably be adding crabcakes to that, since I'd mentioned them. It'll be a hit all around!

We've got asparagus and I'll make home fries. In laws are bringing the cake, woohoo.

Last night I ate with my parents. They made crab cakes with a lime-mayo sauce, snap peas, roasted carrots with cumin and roasted potatoes. It was good.

Tonight it will be the dreaded takeout again, I guess.
 
Morning all!!

Today we are taking my MIL out to eat. We are going to Shogun, mmm mmm mmm!!! We are hitting the grocery store early this morning and will probably pick up a snack for dinner later (going out to lunch).

I'm making a chicken dish that my aunt made last week
1 pack. of boneless skinless chicken breasts
1 can cream of chicken (or whatever you have) soup
1/2 cup white wine
1 package Stove top stuffing for chicken
1/4 cup butter/margarine melted
Swiss cheese, sliced

Mix soup and white wine, set aside. Mix stuffing mix with melted butter, set aside. Spray a 13X9 pan with cooking spray and put the stuffing mix in--spread over whole pan. Layer chicken on top of stuffing, lay a slice of swiss cheese over each piece of chicken. Pour soup/wine mix over chicken. Bake at 375 until chicken is cooked through--DAunt added some chopped cremini mushrooms on top of soup mix, and then topped with toasted almonds when chicken done. MMMM!
 
My brother and his fiancé are having an appetizer buffet for Mother's Day, but they're having it today. The mom's aren't allowed to do anything. Woo hoo! DH and DS are supposed to take desserts so I guess that means a trip to the Publix bakery for them.
 
I made clam chowder yesterday and had a nice crusty bread with it. Tonite we are babysitting, so I'm not sure if we are taking my DGD out or if I will fix a meal for the three of us.

Today we ate at my parents' house with DSis and BIL, who were happy to get out of their paint fume-filled house. The weather continues to be miserable here, so we went with a comfort food standard: roasted chickens, mashed potatoes (with the skins on that weren't gluey like the ones DSis made last week. Mom does these things on purpose), Mom's excellent eggplant sticks, broccoli and of course, gravy.

Tomorrow, I am hosting my parents for Mother's Day. We are having sirloin roast, roasted potatoes, brussels sprouts and leftover eggplant sticks, and gravy. I may also make cauliflower casserole. I just hope I don't mess up the roast. The last time I made sirloin roast, it was completely raw at the time it was supposed to be cooked, and I ended up (gasp!) microwaving slices of it so we could eat it. That was three ovens ago though, so hopefully I will have better luck tomorrow. Mom has to work in the morning, so she is going to be REALLY upset if she gets here and doesn't get a decent piece of roast beef. Wish me the best!

I am cooking for my mom and grandmother today. We are having chicken and dressing (or stuffing, it's dressing for us), homegrown green beans, and oven roasted veggies. I made a whiskey cake for dessert.

I told DH I either wanted Olive Garden or Hibachi Japan today. :thumbsup2

We're headed over to MIL's, where we're making the dinner. I let her pick out an entree from my store.

We're having blackstrap pork chops
home fries (no potatos the other night, so they still want them)
asparagus with parmasan and balsamic
pineapple upside down cake
 
DH is cooking fajitas out on the grill and we're having pinto beans, spanish rice and guacamole to go with it. Knowing him, he'll throw some other veggies out on the grill also.

He woke up and we all went to Olive Garden and he didn't give us a bit of trouble about it. Then we went to Borders where I ended up buying two Imagineering Field Guides -- one for Magic Kingdom and one for EPCOT. He also made out in the deal, getting two books and a CD. He hasn't been shopping with me in so long that he forgot that mama always takes care of him in a bookstore. :teeth:

At OG, I got a berry sangria (yum!), DS and I split a calamari appetizer, and we both ordered the shrimp and crab ravioli. I'm stuffed now and need a nap.

Poohnatic, what are blackstrap pork chops?

The blackstrap pork chops are loin chops done in a brine and then the blackstrap sauce is done at the end. Its got red pepper, blackstrap molasses, a little vinegar and some brown sugar. My MIL got one of those cast iron grills that go on two burners-it was great.

DH doesn't like pork chops, so he had flank steak.
