dinner is up in the air for a while. I wanted a roast pork but Buddy may need my help in the greenhouse this evening. If he does I have to make changes.
 
quick post......if I could ask for some thoughts and prayers for Kris' grandmother that would be so kind of all of you.....we just got word that she has days to a week or two at most left, the Dr went to see her tonight. They have hospice coming in and Kris' aunt from california will be here Thursday and his other Aunt from Oregon will be in over the weekend.
I pray that she goes fast and with dignity.

Aimeedyan- my son was 3 months when he died. He was a twin, his twin sister is 16.

I'm so sorry. What a terrible loss!

My DH was a twin, but his mother miscarried his twin sister when she was 7 months pregnant. The doctor went in to do a D&C and found Alan behind his sister. They had no idea that there were 2 babies in there. So, Alan was delivered 2 months early!

He was so thrilled when we had twins, as I think, on some level, he has always missed his twin sister.

My cousin who lives in London has put together an itinerary that sounds incredible. I don't think we'll have a spare moment! When I get a minute I'll post the itinerary and you guys can tell me what you think.
 

Last night's dinner was delicious, another recipe I had saved from F&W cooking demo's. Wasabi Pea Crusted Tuna with Asian Pesto, soba noodle salad with roasted veggies and basil/cilantro vinagrette.

OK, I need that recipe! Please post it! I'll put up the curry one in exchange this evening.

It's the same camera I use for all of my photos...a canon sd 800. I have the canon underwater housing for it.

We have skating and then Liam has a baseball game, so Caili and I are going to have a little picnic at the field, and Liam will have pizza in the car. I haven't figured out everything I am putting into my picnic (no wine, unfortunately) but Beck's leftover fried chicken is one.

I thought you guys might like to know more about our kitty situation.

Well, we have gotten ourselves a feeding schedule now. P.C. comes by for breakfast, dinner, and an evening chill. Still won't let you pet him, but at least he meows at us now. He never meowed before.

Anyway, lately we've been seeing a GORGEOUS white Siamese cat hanging around. We named her Rajah (just like Aladdin). Saturday morning we peeked out on our back deck to see if P.C. was out there.

He was.

So was Rajah.

There was love in the air.

There was love on our deck.

Yes, we discovered that Rajah is indeed a girl. Now we have a pair of lovebirds. They come around, sometimes together, sometimes not. She comes and eats the cat food, too. They play together in our yard. It's a hoot.

I am really praying Rajah belongs to someone and is fixed. If she starts looking pregnant, I am so scared she will have them under our deck!

Something funny about her though: if you meow at her, she meows back. She's quite a talker!

You could always trap one or the other and get them fixed at a low cost clinic. Some vets will even do a free spay/neuter on feral cats in an effort to get the population down. We have a guy at our church that traps teh neighborhood cats, pays to get them fixed, and rereleases them. They never know what hit them! :laughing:


I'm having pizza tonight with the kids. It's our end of year party. Then I have to visit the funeral home.
 
Ok, I ran errands this morning, and now I'm back in time to be here when the twins get home from kindergarten!

I got my haircut, my eyebrows waxed, and the last of the clothes purchased that we need for our trip.

Glynis- I generally am never jealous of anyone, but that is not the case here. As Kathy said, this is a once in a lifetime, enjoy every minute, you can sleep when you get home.

I have heard that twins have this mysterious bond and have never doubted that. I bet from watching your twins you can see that attachment that cannot be explained.

Dinner is a mustard crusted roast pork, roasted potatoes and onions,
cucumber and onion salad and a veggie. I think green beans. Yesterday they were so good, I get the haricots vertes from Costco and they are yummy. I burned my turnip so that is not a good sign for the rest of the meal :confused:

Janice, Andrew has been good for the past couple days...I guess the punishment worked or maybe he stopped growing!!! :lmao: The doctor estimates that he will be about 6'4" so I hope he doesn't mouth off everytime he grows...I will have to become an alcoholic! ;)

Laura, Liam looks adorable with that dreaded recorder. I am going to be the lucky attendee to Andrew's concert tomorrow. Did I mention my little man plays the bells...:confused3 I guess they have to play them before the drums...:eek:

Okay Laura & Becky, here's the full recipe. I had to scan it as a picture then convert it to text. So there might be some errors I didn't catch.

The Stanton Social, Brooklyn, NY
Wasabi Pea Crusted Tuna
with Soba Noodle & Beet salad, Asian Pesto
Serves 4

For the Tuna Preparation
1 bag Wasabi Peas
Wasabi Powder, or premade tube of wasabi 'paste'
1 pound tuna loin # 1 (sushi grade)

For the Soba-noodle Salad
1 bag soba noodles
1 large beet, roasted and diced
1/4 cup roasted cashews
1 red pepper, julienne very thin
1 carrot, julienne very thin

For the Vinaigrette

1/2 cup soy sauce
1 teaspoon ginger juice
1/2 cup of water
1 tablespoon olive oil
1 teaspoon chopped garlic
1 bunch scallions, sliced thin
1/2 bunch cilantro, chopped
1/4 bunch Thai basil, or regular basil if unavailable, chopped


Asian 'Pesto'

1 cups cashews
4 cloves garlic
1 tbsp chop ginger
juice of 2 limes
1 tbsp fish sauce
1/2 cup blended oil
1 tbsp sugar
1/2 cup thai basil leaves, picked
1/2 cup basil leaves, picked
1/4 cup mint leaves, picked
1 tsp Chinese chile paste,
or to taste
Salt as needed ---just a touch!

Crush wasabi peas in food processor or chop coarsely with a heavy knife. Make a wasabi paste by combining 1 tsp wasabi powder with 3 tbsp cold water; or use pre-made wasabi paste (available in the sushi department of fine supermarkets).
For tuna, cut into four, 4-ounce portions. Spread wasabi paste on all sides of each portion, and then crust with crushed wasabi peas. Repeat.
Boil Soba noodles until 'al dente' as you would any Italian pasta in salted water. For the beets, wrap in aluminum foil with a splash of extra virgin olive oil, salt and pepper. Roast in 450°F oven until fork tender. Cool and dice.
For Saba noodle 'salad', make a quick dressing by combining 'vinaigrette' ingredients listed above, and then toss soba noodles with diced beets, roasted cashews, julienne vegetables and vinaigrette to coat.
For the Asian Pesto, combine all the ingredients in robocoupe.
Quickly sear tuna portions in grape seed oil, crust side down for 1 minute. Place in 450°F oven 2 minutes longer; or until rare to just medium rare.
Place salad on plate and lay tuna over. Garnish with chopped scallions and tablespoon of pesto. Optional---serve a little wasabi paste and vinaigrette on the side; a la sushi.

The notes I had taken from the Cooking demo:

After coating fish with peas, chill tuna in fridge about an hour. Use raw cashew lightly roasted. Boil noodles with a splash of soy sauce instead of water. Add a little of the pesto to the noodles.

The only changes I made: I didn't have any beets, so I used roasted vidalia onions & roasted red bell peppers. I didn't have cashews, so I used raw sliced almonds that I pan-roasted lightly. Also didn't have any thai basil, just used regular basil. I found the vinaigrette to be pretty salty & added more oil. Next time I would add less soy sauce or try tamari sauce.

The pesto was fabulous! I would also recommend using a really thick piece of tuna, if you like it rare.

Kyle's first pitching lesson went very well. It was an 11 yr old and his parents were very happy with what Kyle did with him they gave him $40(he only charged $30), and that was only for 45 minutes. Kyle kept count of how many pitches the boy threw and he was at his limit age-wise after 45 minutes. The rest of the time was spent with the two of them "talking baseball".:goodvibes

I think I'm making pizza. If the dough thaws out in time! I had dough in the freezer from the last time I made pizzas. But it's taking a lot longer to thaw out than I thought it would.

Oh, another note I had from the cooking demo., "Pesto great on pizza". So I'm using the leftover asian pesto, shrimp, vidalia onion & bellpeppers on the pizza. I think I'll finish it with arugula on top.
 
Those of you who have been to Disneyland will probably recognize this one.

Bacon Wrapped Asparagus

1 lb asparagus cut them in 1 1/2 inch sections from the tip down, disgarding the tough part.
1 lb bacon, cut into 1 1/2 inch sections

Wrap bacon around asperigus and then put onto a soaked squewer about 6 of them to a stick. BBQ or grill as desired, for the last 2 minutes brush on some maple syrup.

They sell these at Bengal BBQ in DL for $3.59 each

Might have to try that. I have had asparagus wrapped in Prochutto :confused: that was really good. :cloud9:

Believe it or not, the thing is pretty sturdy. I'm not sure accidentally hammering it would be believable. I think I am just going to have to resort to "cleaning" his room. ;)

Darn! I thought of you last night while I was watching TV, they had recorders on How It's Made on Discovery. The ones they were showing were made out of wood though.

Oh okay, shows you how much I know, thought you had to have a special camera for underwater shots. :rotfl:

I am going to Puerto Vallarta at the end of August and I hope to be able to do a little scaredy cat snorkeling. :rotfl: I can't swim very well, just enough to save myself, and don't like deep water so I hope I can do it near the shore or in really shallow water.

Was able to do it at Discovery Cove in FL by floating in about 2 feet of water and sticking my face in. or by standing near the edge of the drop off and doing the same thing.
