Your trip sounds sooooo exciting! I've always wanted to go to London. Have a fantastic time and I can't wait to hear all about it when you return! :)

I'm sure that I'll bore you with my trip report and pictures! I'm so excited!
 
You are going to be very busy!! However, you will have a great time. I really enjoyed the day trip to Windsor...it is beautiful there. I am sure it will be more beautiful this time of year. I went there in January. I am also very jealous of your seeing Midsummer Night's Dream at the Globe. That will be wonderful. Have such a great time! I want to hear all about it when you get back.

It will be a busy trip, but we can scale back if we need to. I don't want to, though, since I don't know when we'll ever get back! I love Windsor, so I'm thrilled with that day trip!

The tickets for Midsummer were a surprise! My father belongs to the Shakespeare Theater Association of America, and hosted this year's meeting. This year, they invited Shakespeare companies from across the world to come. The head of the Globe company came and had a marvelous time. My dad asked him if anything was going to be playing at the Globe while we are there, and he mentioned Midsummer. He gave my dad 10 free tickets for all the stuff dad did for him, so we are thrilled!!! After the show, we'll get to go backstage and see the theater up close and personal. I'm hoping they'll let us take pictures!!!
 
Glynis, your trip sounds AWESOME! I am very jealous. It seems that you are hitting all of the higlights.

Also, John has a food recommendation for you. He says to go to a snack van and order a "99." It is a big ice cream cone of vanilla soft serve with a flake bar stuffed in it. (Flake bars, for anyone who has not seen one, are these really crumbly chocolate bars that are super popular in the UK! Laura is a flake hound)

Tell John that I will definitely be trying one of those! I love Flake bars!!!
 
Dinner tonight will be simple: smothered skillet chicken. Today, I get to go shopping to stock up the pantry for Alan while I'm gone. I hope to get a lot of choices for him. Otherwise, he'll just serve them cold cereal for every meal! I'm sure they wouldn't complain, but still....

This morning I have a doctor's appointment to get the final all clear for the trip. I'm not worried about it, just looking forward to having it over!

Any ideas what to do with it? (Fish Tacos, Grilled...)
Can I use some to make "Fish and Chips"?

WFD- Crockpot chicken! :mad: The one thing my mother makes almost every week and I am tired of it!

She doesn't put any spices or sauces on it at all, and she always serves boxed mashed potatoes that are bland as all get out, stuffing, carrots and then wonders if she should make another veggie or 2. :confused:

She then complains about how much gets wasted. She makes enough food for 6 people and there are two of us :headache:

I was going to make turkey meatloaf and baked sweet potatoes but that will have to wait until Sunday. I have Bunco tomorrow night and a cookout on Saturday night.

I may go ahead and make up a few meatloaves tonight plus do the pizza crust as well and go ahead and freeze them.

I have used grouper in a piccata recipe. Very good dish, quick, delicious & lemony!
Serve it over pasta or rice...
 
Here is the mayo recipie I was talking about the other day, where it talks about wisking, I used a stick mixer, what can I say I am lazy :)

1 egg yolk*
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 pinches sugar
2 teaspoons fresh squeezed lemon juice
1 tablespoon white wine vinegar
1 cup oil, safflower or corn

In a glass bowl, whisk together egg yolk and dry ingredients. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture. Start whisking briskly, then start adding the oil a few drops at a time until the liquid seems to thicken and lighten a bit, (which means you?ve got an emulsion on your hands). Once you reach that point you can relax your arm a little (but just a little) and increase the oil flow to a constant (albeit thin) stream. Once half of the oil is in add the rest of the lemon juice mixture.
Continue whisking until all of the oil is incorporated. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.

Grouper, I fried it with a cornmeal batter for the fish tacos. Also baked & pan seared it with a lemon sauce. You can really do anything you want with it.

Here's some pics of last nights pizza. This was really delicious. I used the asian pesto for the sauce, marinated the shrimp in it before cooking them. Topped it with the shrimp, roasted onions & bell pepper. Before I served it, I topped it with arugula & almonds and a sprinkle of the Asian vinaigrette.

That pizza looks great, I was just looking at a pizza stone today that I think I need, but then I remembered I was shopping for my dad's b'day present, not for me. They even had mini stones (complete w/ mini peel) that fit in the toaster oven.
Last night we had fajitas for dinner, nothing fancy just using up leftovers but they thought they were getting a special treat. Tonight is chicken, green beans and couscous.
Tomorrow I'm going to my parents for my dad's birthday dinner. Then we are going to have a nice weekend of relaxing and more yardwork. This is my last weekend off until September so I plan on enjoying it, of course I think it's supposed to rain. Enjoy the rest of the day everyone!
 
I've had a difficult day so I think we're doing fast food, if I eat at all.

I had a painful lunch meeting, then a funeral for the 9 year old little girl. Y'all - it was rip your heart out sad. Her best friend (the one she said she would marry...) spoke, her teacher spoke, her classmates were the pallbearers. I bawled and bawled. :sad: :sad:

It's almost 4:30 and I have about 8 more hours of work to do before I head to a kid's choir concert at 7. And somewhere in there I'm eating dinner with my DH that I haven't seen in two days :confused:

After the concert, I'm racing to a colleagues house to watch the finale of LOST since I will miss it and she has DVR.
 
Not sure if y'all remember this - the local community college that has the great baseball program - Delgado (this is where Kyle really wants to go), the head baseball coach called this morning and invited Kyle to lunch early next week, I think this is the beginning........:hyper:
