Oh man...that stinks about Gus! At my kids age I wouldn't feel bad but at his age I can totally understand!

Yeah, he was NOT thrilled to be in Childcare with 68 (YES! 68!) little kids!
Here's the recipe for those of you who wanted it:
Thai Chicken Pizza
From the Rachel Ray Express Lane Meals Cookbook
2-4 servings
(I've adapted a bit, I will note in RED what I've changed)
1 pizza shell (boboli)
1/2 Cup duck or plum sauce
(we use plum, duck has apricots and we have allergies)
1/2 tsp. red pepper flakes
1 10oz bag of shredded mozerella or provolone cheese
1/2 red bell pepper, cored, seeded and thinly sliced --
I leave this out, they hate peppers!
2 tbsp. tamari (this is just soy sauce, FWIW)
1 tbsp. veg. oil
1 rounded tbsp. peanut butter, smooth
2 tsp. hot sauce
2 tsp. grill seasoning, such as McCormick's montreal steak seasoning.
4 chicken breast cutlets, 1/2 lb. total
2 tbsp. honey
(i skip this)
2 tbsp. cider vinegar
(I skip this too, as they didn't care for it last time)
1/4 seedless cuke, peeled cut into matchsticks
4 scallons, green and white parts chopped
1 Cup bean sprouts
palmful of cilantro leaves, chopped
1/4 Cup chopped roasted peanuts
(done it with and without...eh)

1.Preheat oven to 425. Top shell with sauce, spreading it like you would for reg. pizza sauce. Top with red pepper flakes (if you want it hot) and then cheese and bell peppers. Bake until golden and bubbly.
2. In a small bowl, combine veg. oil, p.b., soy, hot sauce and grill seasoning. Use a microwave to loosen up pb if it's too stiff to combine into sauce. Coat chicken evenly with sauce, and let sit for 10 mins. Preheat grill or grill pan and spray with non-stick coating spray. Cook 2-3 mins per side, till firm. Cut into thin strips!
3. While the chicken is cooking, mix the honey and vinegar in a bowl. Add the cuke and mix to coat in dressing.
I skip this part. I did it the first time and the kids weren't wild about it. It's still good without.
4. When the pizza comes out of the oven, top it with the chicken (cooked, cut in strips) scallions, sprouts, and cilantro. Drain the cukes and scatter them over the top. Garnish with peanuts.
In lieu of the cukes, I like to add shredded carrots to the top.
