:sad2: Here too. What is with the weather this year? We've not had any spring-like weather and most days are still below freezing at some point. It's actually quite bizarre but with everything else that's going on, I haven't heard anybody talking about it.
So I'm Floridian (it's moody, grey, overcast and rainy here and has been all week) but I keep seeing friends post pictures of snow and I'm like.... *GESTURES WILDLY* IT'S. APRIL.

Two more recipes. These are both twists on grilled cheeses. One is really easy, one is a little fancier. Depends how we're feeling. I thought I would share still.

Fancy Grilled Cheese (recipe for one sandwich)
2 slices bread - I recommend something a little heftier than white bread, I like sourdough
2 slices cheese - I always use a soft white cheddar and an aged Gouda. You want something strongly flavored that will still melt easily.
Whole grain mustard - if you can't find this, stone-ground mustard also works.
Apple, thinly sliced - choose a crunchy variety. I prefer Pink Lady, but Granny Smith is also a solid choice. Avoid Red Delicious, they're too soft.

You make these the same way you make a regular grilled cheese - heat a skillet, butter the outside of the bread slices. Spread a thin layer of the mustard on one slice, layer on one of your cheeses, then layer your apple slices, then layer the second slice of cheese and bread. I find it easier to melt the cheeses by trapping the skillet heat with either a sheet of foil or the lid to the skillet. This helps the cheese melt without annihilating your bread.
These are a nice tart-sweet sandwich with crunch.

The sauteed tomatoes + garlic mixture is also great atop toasted garlic rubbed Italian bread (sort of like bruschetta) as an appetizer, snack or light meal. As well it makes for an easy sauce with pasta w/ the addition of more oil and grated cheese.

:thumbsup2 Love, love, love sweet & savory! One of my favorite breakfast/lunch sandwiches is a toasted cinnamon-raisin bagel with cream cheese and ham. :lovestruc

I've got a weird family that doesn't consume much baking/desserts. My DH and DS would rather have a handful of gummy bears or a chocolate bar when they want something sweet so I don't do a lot unless we're having company. Here's an easy one that's always a big hit:

Lemon or Lime Chiffon Pie:
1 graham cracker crust (I make my own in a fluted tart pan with a removable bottom for a nice presentation)
1 package lemon or key lime pie filling
Juice and zest from 1 lemon or two limes
2 drops yellow or green food coloring (optional)
1 cup heavy cream; whipped stiff with 1 tbsp. sugar and 1 tsp. vanilla

Prepare pie filling according to package directions but switch out the citrus juice for part of the water. Cool slightly and pour 1/2 the prepared filling into the pie crust. Cool the rest of the filling completely, stirring occasionally to keep it from setting up. When it's no longer warm, stir in the citrus zest and fold it together with the whipped cream; blending well. Mound over the filling in the pie crust for a two-layered effect and garnish with a few graham crumbs and a little zest.
 
So, I've talked about my mom quite a bit and how she is in a nursing home and people give me constant grief about it.

Anyone that gives you grief about your mom being in a nursing home has probably never been a caregiver....its hard work to take care of someone. I help my dad with my mom now but before he retired a year or two ago, I stayed with her at their home at least 3-4 nights a week while my dad was an over the road truck driver(while still working PT and having to still also take care of my family). It probably sounds terrible but I did it because I had to, not because I wanted to...she didn't have the insurance to stay in the facility she was in so they sent her home for us to take care of. All the people who offered to help when she was getting out were no one to be found once she got home, of course. She has one friend and we have one of her many siblings who will help if were in a bind but I've learned we can't count on anyone to help. And that doesn't stop anybody from letting us know what we should and shouldn't be doing, of course. :rolleyes2 She's come a long way since she first came home(almost completely bed ridden wearing diapers...) to now(able to walk to the bathroom on her own but still needs help in there) but it's hard to take care of someone, especially when they can be a little difficult, which my mother is. So don't feel guilty, you're doing what's best for both of you and still taking care of her by delivering her things that help in the time even if you can't be there with her. **woooo** Sorry just kinda all come out.... :rolleyes1

ETA....yes I'm thankful my mom is still here with us. I'm grateful I have the chance to still have her around and will always make sure she is taken care of but it's still hard to be a caregiver....

It's adventure day today--off to Walmart and Aldi's for groceries. Hopefully it won't be crowded. And since we now have 'mandated mask' orders (I have been wearing them in stores all along), it will be strange to see everyone in the stores wearing them. :(

The mandate started today. I still saw employees in Walmart not wearing masks, asked them why, and got shrugs? I keep thinking to myself, when I see all these masks,,how will store employees know if they are ever being 'held up' with everyone in masks,,weird thought for the day, lol!

There was a girl at the door 'counting customers'.. The store capacity is 1115, she said the most they have had at one time is 400, so why bother counting? LOL! There were plenty of paper products today. Big pkgs of TP, pkgs of paper towels, lot of tissues (finally got to stock up on the Puffs with Lotion hubby uses). Cleaning supplies, ice cream, frozen potato products, frozen chicken, and 'tv dinners' were all in short supply. But plenty of everything else. There were 2 shoppers in the health and beauty aids section this morning at almost 9:45. Myself and one other lady, who was complaining about the shortage of tampons and pantiliners (I am well past that stage, so not something I was looking for , lol). Meat dept was full as was produce and dairy, where they are not limiting anything. Aldi's was pretty empty too, everyone there wearing masks. They are still limiting items, but there was plenty to go around.
The sun is shining, but it's windy and only 48. I was able to finish getting the back yard mowed without working up a sweat!
Going to look thru my recipes and see what I can find.
 
We accomplished something today. Our basement is full of stuff, moderately organized on shelves. DH and I went through all the shelves with toys, puzzles, games, outdoor things and organized and made a pile to donate. Now I know where the kids toys are for our DGD. We had 6 specialty in addition to the original Monopoly game. Easy bake oven was one thing that went to the trash. It was a 3 hour job. Deciding and getting rid of things stresses me out so that was enough. We have two large boxes of games to donate.

Also watched Phantom of the Opera online and will watch One World: Together at Home tonight. Planning a Zoom with the kids in a bit and carry out for dinner.

Nox, I like putting sliced apple in my grilled cheese sandwich.

This is the WW recipe I like for roasted salmon, chickpeas, and veggies. It is easy and delicious. I don't bother with the mint or lemon and, because there are only two of us, I only use two pieces of fish and then have left over veggies.

Chocolate Gravy! I'm pretty sure this is a Southern thing and probably a broke person Southern thing LOL but my granny Hazel made the best chocolate gravy and homemade biscuits. We'd get it a few times a year as a treat and our birthday. Here's the basic recipe but I add more cocoa and less sugar.

I have made a stuffed bread appetizer probably 50 ways and never a bad version. Here's the one I go to first because I usually have pantry items. Honestly if you are trying to use up things and have a block cream cheese you can turn anything into stuffed dips.

Chicken pot pie...I never have heavy cream at home and sub in some milk and extra butter. I also hate peas and don't add whole bag. I'm lazy and buy frozen mixed veggies instead of cutting and cooking up everything separately.

Chilaquiles...I bake my tortillas into chips and don't fry them. I brush the tortillas with oil then cut them up into triangles or strips and bake in the oven. I'm also lazy and use left over enchilada sauce or salsa verde.

I'm loving all these recipes! I don't mind cooking. I apparently don't like to cook as much as two or three times a day in a pandemic. We did have chick fila today and it was just okay, which made me incredibly sad. My husband appreciated the very efficient and conscious way they were taking orders and serving in the drive through. It's beautiful here today and we got out to do take out and run couple errands.

I also made my husband get into his cap and gown and we took some pictures out in the gazebo area in our neighborhood. I wanted to get few printed and sent to his grandma and mom. I wish he was having a graduation although I understand it's not that important at 42 as at 22 but he worked his hiney off and graduating in 3 years and adjusting out the Army has been lot in our house. I'm going to figure something out for him yet.

My quarantine gray hair is out of control. At this point I'm kind of like screw it and then my vanity even in quarantine is like not so fast there. I should probably play with my makeup soon to remember how to put it on or maybe try on pants that button. Summer be here soon and good sales are here now. I might need new pants or capris at this rate!

We are all another day closer to whatever the new normal will be and we will make it and adapt and figure it out. That's what people do and for some it'll be easier and some it'll be more difficult but we will make it.

Gratitude today:
1. Face time with my mom. She doesn't hold her ipad up at all and keeps rocking in her chair the whole time but at least we can see and talk and it makes her feel better to tell me all the gossip going on in the nursing home. Apparently brand new loves are falling apart when can't be umm visiting together lol
2. It's gorgeous day and that does lot to life spirits and just know sun is out and shining.
3. I'm thankful for a good husband that still wants to better himself and is humbled enough to try something like revamping his life to go to school fulltime with kids half his age. I admire him tremendously.

Are you snacker when watching tv? I'm really not because I was born short, fat and all this curly hair and will die short, fat and all this curly hair. I've always been conscious of snacking and tv so don't. But don't get me started on emotional eating! My husband HAS to snack while watching tv. He is the guy that eats all the popcorn at the movie before it starts too....hmmm We keep chex mix, mixed nuts, sliced cheese, baby bel cheeses, and variety of things including veggies and yogurt dips but that isn't tv snacking food lol

If I do snack, I usually get few triscuits and some yogurt dip and I'm good. If I'm feeling like screw it I'm eating then hello chips and dips!

As for what we are watching, we started watching Broke on CBS..cute sitcom that just started. We also been watching Indebted on NBC with Nanny lady, I didn't think I'd like it but I really do. Totally relatable story line for a lot of people nowadays. I love music and really enjoy watching Songland and I'm sure Matt watching something sci fi that I'd never understand.

I admit today feels sort of timeless to me...perhaps because of the cooler and grayer weather which I should not say anything about because it is supposed to be 88 next week! It definitely feels much later now than it is.

Grateful today for a cozy throw to keep me warm on the couch while reading or watching TV.

I'm also glad tomorrow is Sunday. Before this all started Sunday was always my very favorite day of the week. I miss going to church tremendously. Online service is not the same at all but I am grateful to all who make it happen each week and will watch tomorrow morning.

I have been doing my best this year to cut down on snacking (have lost and want to continue to lose some weight). Potato Chips sure are tasty though! What I've been doing is trying to take half of the suggested portion out of the bag when whatever else I am eating is ready rather than being in front of an open bag which is dangerous! I was talking with a friend about older TV shows we have both watched and remembered how anytime I was home from school I'd watch with my Grandma Eight is Enough. I don't remember much about that show now but might be good to check it out and other oldies but goodies.

I miss church too. I may never hug again in church and just smile but I just miss being there in my normalcy and routine of it.

When I'm snacking, I put everything in small portion bowls. I don't even look at what a real portion is. I have these tiny plastic bowls and dip servers that I use for snacking for my portion control or I'd eat through bag doritos and not think about it. I can't have that!
 
Seeing I only replied to yesterday's prompt 2 hours ago, I have little to add.

Did just finish Zoom with both kids. Have dinner (crab cakes and sides) ordered for pick up.

Weather was raining this morning and cool and windy now, so no outside time.

I miss church also. I watch online then go to Zoom coffee hour.

Gratitudes:

Binging Schitt's Creek. Watching Survivor, God Friended Me, Zoey's Extraordinary Playlist. Most of the other shows we watched have had finales already.
I try to follow WW so don't really snack watching TV. At night I usually have a snack of 1/2 cup ice cream or a cookie and cup of tea.

We have Killing Eve and Bosch waiting when we finish Scandal.
I don't snack while watching or I would be snacking a LOT! Sometimes we will have a treat on movie day (which is at home now).

Dinner tonight is sausages.....mystery. All the labels fell off, so not sure what kind they are. Green salad and some kind of vegetable with them.
 
Yep, we got the snow here in CT this morning! The roads were only wet, though; the snow only stuck to the grass. It's gone now. I don't remember EVER having snow this late in the year, however - April 2nd is the latest I can remember, and I've lived here for 44 years.

Lately, I'm pretty much just watching kids' shows and CNN. Paw Patrol on Nick Jr. and Molly of Denali, Xavier Riddle and the Secret Museum, and Odd Squad on PBS (I really do love Xavier Riddle - an excellent way to introduce young children to historical figures! How many 4-year-olds know who Winston Churchill and Amelia Earhart are? Mine does ;) ). I only watch CNN because I'm praying for any mention of hope. I do try to watch the People's Court, but I have to record it as my child hates it (and we watch the live Home Safari from the Cincinnati Zoo on FB at the same time).

As our regular shows' seasons are ending, DH and I are trying to find more shows on Netflix. We've watched Stranger Things, The Haunting of Hill House, Penny Dreadful, Locke & Key, Schitt's Creek, October Faction, the entire Star Trek TOS...

Regular shows that we enjoy are Prodigal Son, Manifest, Bull, NCIS, The Goldbergs, Schooled, The Masked Singer, The Magicians, Young Sheldon, Evil, and Doctor Who. I watched Emergence, which was okay, but I have a feeling it won't be picked up for fall. We're trying to watch Broke, but we're not sure about it. We do like the butler, though.

For snacking, I like Pop Secret butter-flavor 100 calorie mini bags, Dannon Light & Fit Greek yogurt (I think...if that's the one that has more protein than carbs), and apples with peanut butter. In fact, to combine posts, here's a recipe for "Girl Scout Cookie" apple rings that I like...

Slice an apple or two into rings, cutting out the core. Spread each ring with peanut butter (or other nut butter of your choice). Sprinkle with toasted coconut, pressing lightly into the peanut butter. Melt some semi-sweet chocolate chips and drizzle over the apple rings. Place on wax paper-covered cookie sheets and refrigerate until solid.
 
Weirdly, we're watching what seems like a lot less tv than we used to. Most of the shows we like have had their season finale and very little else seems to hold much appeal. We're not really movie-watchers; 2 hours to sit there is too long. And since our habit is to eat dinner later than some (it's usually after 7:00 by the time I get home and get something ready), we actually snack very little in the evenings. That's good, I guess. None of us have gained any weight but we do feel pretty sluggish from not being "out and around".

Thankful for a Zoom meeting of a few besties this afternoon. NOT thankful for being confronted with what I actually look like. :eek:
 
Not a big snacker when watching tv. We usually have a nightly snack around 8. Sometimes ice cream, sometimes an english muffin with peanut butter, once in awhile a bowl of cereal. Now if I am just sitting at the computer DISing,,just give me a bag of pretzel m and m's and I will sit here till the bag is gone, lol!
We watch a lot of tv, but as someone said, a lot of the shows are finished for the season. I love Grays Anatomy, Station 19. We watch all the NCIS's, God Friended Me, just started watching Broke and Bachelor Listen To My Heart (jury is still out on that one , lol). Hubby likes Seal Team and Swat,( I just watch Swat to see Shamar Moore!), and he loves Outlander (I can take it or leave it. ) We have a tivo full of Hallmark movies I may or may not ever get to. I am still on his 'work at the office; time and wake at 5 am every morning, so by 9:30 I am ready for bed.
Tina, I love that you had Matt put on his cap and gown..CONGRATULATIONS to him! That IS a big accomplishment, at any age, and after being in the service, and now finishing college and doing it with all the 'younguns',, I am very impressed with him. As I've said before..he's a keeper, hang onto him!

I too have had it with the quarantine gray hair. I have the box of hair color sitting on the bathroom sink, just haven't bothered to do it yet. My hair is longer now than it has been since I was in high school, and I hate it. That will be one of the first things I do after this is all over, is get a haircut, and it will be above my chin, lol!

Grateful today that I was able to get everything on my list at the grocery store.
Grateful that one of our granddaughters only got a 'mild' concussion after falling down a flight of stairs last nite and knocking her self unconcious. They called 911, who said her vitals were stable, and to keep her at home, rather than take her to the er, and just keep an eye on her. She's stiff and sore, and sleeping a lot, but her Dr said that's the best thing for her brain at this point
Grateful that I have all of my DIS family and this thread to keep me sane at times. Today was one of those days where I had just about had enough of everything and just wanted to sit in a closet and cry, but I didn't!

Are you snacker when watching tv? I'm really not because I was born short, fat and all this curly hair and will die short, fat and all this curly hair. I've always been conscious of snacking and tv so don't. But don't get me started on emotional eating! My husband HAS to snack while watching tv. He is the guy that eats all the popcorn at the movie before it starts too....hmmm We keep chex mix, mixed nuts, sliced cheese, baby bel cheeses, and variety of things including veggies and yogurt dips but that isn't tv snacking food lol

If I do snack, I usually get few triscuits and some yogurt dip and I'm good. If I'm feeling like screw it I'm eating then hello chips and dips!

As for what we are watching, we started watching Broke on CBS..cute sitcom that just started. We also been watching Indebted on NBC with Nanny lady, I didn't think I'd like it but I really do. Totally relatable story line for a lot of people nowadays. I love music and really enjoy watching Songland and I'm sure Matt watching something sci fi that I'd never understand.
What about ya'll?

Right now, I'm streaming past seasons of Survivor (season 7 is one of my favorites).

Lately, I've been snacking on fire roasted pumpkin seeds with sea salt or Gimbal's jelly beans (if I want salty or sweet); also, chunks of cheese (cheddar or gouda or fontina) or sliced apples and peanut butter or chocolate peanut butter.

Wanted to order BBQ for delivery for dinner, but doordash is down, so no BBQ (because if I had to go pick it up, I'd have to put on shoes and a bra :oops: and I'm not feeling like donning either). Tired of pizza, had Mexican day before yesterday, and we're having burgers tomorrow, so that's the limit of our delivery without doordash here. So leftovers from lunch (Stouffers chicken enchiladas) and last night's dinner (chicken Tikka Masala and naan) with some veggies for dinner instead. Ah well, it saves us money.
 
Not snacking much but having a few drinks most nights. Right now I'm drinking Truly.

We don't have cable but when we went on social distancing we subscribed to CBS so after binging Picard and Discovery we're working on Bull now.
