So I'm Floridian (it's moody, grey, overcast and rainy here and has been all week) but I keep seeing friends post pictures of snow and I'm like.... *GESTURES WILDLY* IT'S. APRIL.Here too. What is with the weather this year? We've not had any spring-like weather and most days are still below freezing at some point. It's actually quite bizarre but with everything else that's going on, I haven't heard anybody talking about it.
Two more recipes. These are both twists on grilled cheeses. One is really easy, one is a little fancier. Depends how we're feeling. I thought I would share still.
Fancy Grilled Cheese (recipe for one sandwich)
2 slices bread - I recommend something a little heftier than white bread, I like sourdough
2 slices cheese - I always use a soft white cheddar and an aged Gouda. You want something strongly flavored that will still melt easily.
Whole grain mustard - if you can't find this, stone-ground mustard also works.
Apple, thinly sliced - choose a crunchy variety. I prefer Pink Lady, but Granny Smith is also a solid choice. Avoid Red Delicious, they're too soft.
You make these the same way you make a regular grilled cheese - heat a skillet, butter the outside of the bread slices. Spread a thin layer of the mustard on one slice, layer on one of your cheeses, then layer your apple slices, then layer the second slice of cheese and bread. I find it easier to melt the cheeses by trapping the skillet heat with either a sheet of foil or the lid to the skillet. This helps the cheese melt without annihilating your bread.
These are a nice tart-sweet sandwich with crunch.

2 slices cinnamon raisin bread
1 1/2 slices American cheese singles (yep, just plain old Kraft)
Make like a regular grilled cheese. Yep, that simple. And yes, cinnamon raisin bread! A little sweet and a little savory. People always give me a funny look on this one until they try it.

She's come a long way since she first came home(almost completely bed ridden wearing diapers...) to now(able to walk to the bathroom on her own but still needs help in there) but it's hard to take care of someone, especially when they can be a little difficult, which my mother is. So don't feel guilty, you're doing what's best for both of you and still taking care of her by delivering her things that help in the time even if you can't be there with her. **woooo** Sorry just kinda all come out.... 


). I only watch CNN because I'm praying for any mention of hope. I do try to watch the People's Court, but I have to record it as my child hates it (and we watch the live Home Safari from the Cincinnati Zoo on FB at the same time).
