Lima Beans

I forgot. I also like them done as baked beans. The Amish make that for me too. See a pattern?
 
I make my Lima Beans just like I make my Red Beans and Rice.

Take dried Lima Beans and do a quick soak.
Drain, rinse and add water to about 2 1/2" over the beans.
Add one ham steak, cut to bite-sized pieces.
Add one chopped green bell pepper.
Add one chopped white onion.
Add one chopped clove of garlic.
Add one chopped jalepeno pepper.
Add a couple of dashes of Tabasco.
Add salt, pepper and garlic powder to taste.

Bring to a boil, cover and simmer until beans are tender and serve over rice.
 
:love: I love them with Butter and salt, but ONLY if they are fresh or frozen. Canned lima beans are just nasty!

Fresh ones only for me, and I prefer pole limas to bush limas for some reason. I bring water with salt pepper and a tiny bit of butter to a boil, add the beans and put a lid on them for 1/2 an hour. After that I drain them, add back a little butter, salt, pepper and a little bacon dripping when available and heat it to a bubble. Yummy!
 

I fix dried Lima beans,they are my DHs favorite.Actually we had them last night.
I either use bacon or Ham to prepare them.I always let mine cook about 3 or 4 hours adding salt and the bacon or ham.I boil them pretty hard for about 15 or 20 minutes and then turn them down on med to med low and cook the rest of the time.You have to add water a couple of times to them.Dont add alot and dont add water to soon before you eat them.My DGM always said everytime you walk by to stir them.

Good luck they are a pain to get use to fixing.
