Feb. eat out of the fridge/freezer/pantry challenge

Friday... So we are having Cheesy Tuna Noodle .99 box kit from pantry and .50 for a can of tuna. I will make garlic fajita shells on the side. Garlic - free, small amount of margarine .25, and parmesian cheese .50 and shells leftover from taco night. We will also have applesauce from last night left over or from the pantry (those little packages) depending on how much the kids want.

well today for lunch I had a Green Giant broccoli with cheese. I have been pushing that around my freezer for about 6 months... so that was a good thing to get out of the freezer:) (I have 2 freezers)

dinner I am makeing Shepards pie..
ground turkey.. from one freezer
potaoes ... fresh
can of corn.. out of the cubbard
gravy... out of the cubbard
more salad.. (when I shop for salad I usually buy 7 bags for the week so we always have salad)

frozen strawberrys with sugar, that I picked from about 6 months ago along with bisquick biscuts I made and froze to make strawberry short cake:cake:

i don't know how many times I have tried to do this and failed, last week I bought a bunch of groceries and I made a list of everything I am going to make, and said I am not going back to wal mart till I make everything on this list, well then I realized that I'm out of this and this and this and this and actually went back to wal mart last night:( and spent about $70. but this time I am really going to try and not go back till my list is done!!!

Just a suggestion for next time. If I find that I am out of an item when making a meal I try to "substitute" before I go to the store. If I know that I have all the core items in my house, I usually find a way. Examples: applesauce works for oil in dessert recipes, dry gravy mixes always add flavor when missing an item. Onion powder if the onions are gone and vice versus. Need to thicken a soup and nothing around you can use boxed mashed potato mix. No lemon juice for acidity add orange...

Well....it might be tough going the month but we are still on target.

2/7 Last night used up the rest of the potatoes to go with the eye of round roast so we are out of those

2/8 Used up the rest of the salad tonight but also had cheesy hashbrown hamburger helper from the pantry with beef form the freezer and blueberry muffins from mix from pantry.

So we will need to go to store for perishables (and dh's beer :goodvibes ) but can still go for awhile more on pantry dinners.

2/1 ~ pantry
2/2 ~ pantry
2/3 ~ pantry
2/4 ~ pantry
2/5 ~ pantry
2/6 ~ fishsticks that I bought for Ash Wednesday
2/7 ~ pantry
2/8 ~ pantry ~ leftover veggies from previous meals, more fishsticks (it's Friday) but they are now from the pantry ;) and made up some white rice

tomorrow we are having pork chops w/ veggies and either mashed potatoes or rice....or neither. They'll also have fruit cups as a side since those need to be eaten up.

I'm out of beer so if I remember I might pick up some tomorrow, if not then I won't pick up any until next week sometime since IN is dry on Sundays.

oh yeah we need apples too but I've been having trouble finding good apples in the bags now. The kids only eat the little ones but so many of them are all bruised up or yucky...

I think I'll dig out something from the deep freezer for Sunday. Better do that tomorrow morning though as I'm sure it is frozen rock hard!

Well I sort of blew it today, I spent $5.48 at Arbys (3 beef and cheddars yum!) which ended up being lunch and dinner. I also picked up milk, bananas and a pack of ground beef at the grocer for a little under $10. But the ground beef will help clear 3-4 meals out of the pantry/freezer so it all works out :goodvibes

Now I because I decied to make the French toast .. I ran out of eggs, So I sent dh out for eggs ( I have to have eggs in the house)

you can freeze rolls. Just pop them in a freezer bag and they keep well for about 3mths. Longer if you don't mind a bit of freezer burn! LOL

Hey, that's sounds like fun. We always have lots of food in our freezer & pantry during the winter months because we live in the mountains of PA. It snows all the time with extremely cold temperatures. Good excuse to stay home and save money at the same time.
Tonight we are having pork chops (freezer), stuffing (bread leftover & getting dry), green beans (pantry), applesauce (pantry), and Jello pudding for dessert (pantry).

I used up a bunch of canned goods with this menu:

Chili (#1 ground beef - from freezer)
1 can kidney beans
1 can dices rotel tomatoes
4 small cans of tomato sauce
1/4 c. chili powder

Corn Casserole
1 box jiffy corn muffin mix
1 stick of butter (melted)
1 egg
1 can creamed corn
1 can whole kernel corn (drained)

Other side:
can of fruit

I cleaned out the rolls out of the freezer, then I had to buy something to put in them:rotfl:

I have really learned in this challange , that I really buy alot of stuff just cause its a great deal.. Next time I will not buy all these rolls (I think I bought them for 99cents a pack) even though it was a great deal I had to buy lunch meat to put in them...I should have just made hambergers:rotfl: .. I am kicking my self for not eating the veggie burgers that I have floating in my freezer..

ah I have those types of items in my freezer too. Like tons and tons of cream cheese....we don't even eat enough cream cheese to finish a brick before it goes bad!

I learned today that we have more than 2 things of frozen juice...more like 10! And here I've been buying bottled juice for months thinking there was only 2 in there for emergencies. :headache:

well send me your cream cheese:lovestruc I have about 7 packages of bagels:confused3 .. maybe more I started to dig into the deep freeze and my fingers were to cold, so I stopped counting

10th - Breakfast - Toast with avocado
Lunch - at Robert's Mum's
Dinner - fresh tomatoes and scallopini cooked with tomato paste, avocado and spring onions and served over wholewheat pasta

It was raining this morning so the market was canceled so we are out of fresh veges except for tomatoes and scallopini. Will have to get vege at the supermarket this week.

Saturday Feb 9. Used turkey stock that I made earlier this week. I added the last of my celery, 1/2 onion, carrots and simmered for a few hours. Added left over turkey, 2 scoops of leftover turkey gravy. I had one cup of brown rice left in the pantry. Cooked it up and added to the soup. Very delicious dinner plus lunches for about $2.00.

I also had to make a dessert for my daughter's confirmation meeting tomorrow. I had a chocolate cake mix in the pantry. Made cupcakes. Since I did not have frosting I made a chocolate glaze with powdered sugar, a little milk, and some leftover chocolate chips. Very yummy.

Yum! Thanks for reminding me I have some good chicken stock in the freezer! That will help the Feb no spend goal.

We went to the store yesterday, though, for perishables, bread and cheese. Big mistake to take DH with me! Ended up with a couple of things I wouldnt have bought otherwise but not too bad.

Dinner was lasagna with all stuff I already had. Made enough for dinner with leftovers for a couple of meals and another smaller one for the freezer for later in the month. Tonight will be flank steak from the freezer, salad and not sure what else. There are a bunch of things I can make for sides. There is enough flank steak to make fajitas tomorrow but I dont have a green pepper. :sad1:
