Feb. eat out of the fridge/freezer/pantry challenge

Well this morning I had to buy milk, eggs and fresh broccoli :lovestruc ..This should hold me until next week.

tonight I am makeing a broccoli cheese turkey bake;)

I am using the cream of mushroom soup that I have been pushing around for a while:confused:

Some frozen pre cooked turkey that I made and divided up.. Some cheese that I froze.

also some dinner rolls that I made and then froze:lovestruc

Iam really using lots of stuff that need to be used up. This is a good thing... I am saveing money also. On the down side in a month I am really going to have to shop to stock up again The money I saved is going to be used to stock up

I did stop by the store as planned yesterday and only spent $12.50. My grocery list for the weekend is not much at all. That's a good thing. Tonight we are having Cheeseburger Casserole using up 2 cans of Chunky Sirloin Steak Soup, Cheddar Cheese, and some macaroni noodles. There will be leftover for lunch for tomorrow.

I have to plan something for 21/2 containers of sour cream and 2 packages of cream cheese. I am thinking stroganoff for some sour cream and a Paula Dean Cheeseburger for more sour cream and more cheese. Gotta think on this.

I threw the frozen chicken thighs in the fridge to defrost. We're having shoyu chicken tonite. Rice and frozen veggies too.

I made my shopping list for this weekend. I'm keeping it under $50, and that will include a splurge of ice cream! :cool1: The rest will be the usual, milk, eggs, produce and bread.

I'm trying to keep my grocery bill under $50-55 each week so I can still come under my budget of $300/month when I buy the budget busters (dog food, coffee and creamer and ice cream).

So far, doing ok.

I am joining in, if you don't mind! I am moving in August and have a ton of stuff stockpiled in my pantry. Slowly but surely, I will use everything up.
Yesterday, I took half of a rotisserie chicken and cooked it in a pan with some cut up peppers and onions. Added 90 second rice (had in pantry), bag of frozen corn and squirt of lemon juice and cooked in the pan for awhile. Then used wheat tortillas that I had in the freeze with some mexican mix cheese..fajitas! I also made 2 packets of tuna yesterday that had been stockpiled.

Still going strong...

2/5 had a big salad before I went to a meeting where we usually order out.

2/6 tonight will be shrimp and parmasan pasta, salad, and apple crisp all from the freezer or pantry or on hand.

2/7 tomorrow will be eye of the round roast I bought last week...on sale I might add :goodvibes

I started this a couple of weeks ago and I have cleaned out our deep freeze with the exception of some junk food my DH bought when he was at Sam's last month. :rolleyes1

We have huge boxes of pizza bagels minis, pizza rolls and several types of ice cream treats.

I think I can get through another 10 days with what is in the kitchen freezer! I like to do this once or twice a year so that the meat does not hang around too long!!!

Yesterday was all leftovers for Julie and I ... though we both ended it all up with a peanut butter sammich. LOL. I promised her ice cream after dinner, but she asked for a peanut butter sammich instead. I really don't know where she is getting these cravings from, but hey ... as long as she eats "normal" food, I'm ok with it.

Tonight, I am leaning towards either chicken pasta with broccolli and pesto sauce or possibly breakfast for dinner. I have to head to target for bread, milk, and some produce ... but everything else is stuff we have at home. I am very excited about this. Of course, it doesn't take much to make me excited these days.

2/5 made cheeseburgers on the grill from freezer - had rolls on hand and pickles. Had rice a roni and carrots from pantry.

2/6 we Johnny Marzetti with meat sauce. I did stop at store at lunch time and spent $8 - I had no pasta at all in the house needed elbow macaroni.
We had salad too which was in frig & left over donuts from yesterday (inlaws gave them to us).

2/7 making pulled pork bbq in crock pot from froze pork loin from new years day (it was huge cut it in three). will have pulled pork sandwiches. what to go with it??? I will put onions in with the meat. Maybe carrots too.

still going here except this evening we had fishsticks that I bought yesterday. It's Ash Wednesday so it was a fish night and we don't keep fish sticks normally. So I got a huge bag that will last us through Lent.

We ate up the rest of the broccoli from the freezer though! :thumbsup2

Grilled cheese sandwiches and from the pantry tomato/cream of mushroom soup. Still going strong here, but there is a little more room in my cupboard now.

.

Okay here is my PLEASE help me unload the pantry. I have 4 (yes count them) :confused3 :confused3 :confused3 :confused3 cans of sweet potatoes. I don't even remember buying them and have never used them before in my life. Recipes and suggestions, PLEASE.:lmao: :rotfl2: :worship:

I like to butter a casserole dish. Drain the sweet potatoes and put them in the casserole dish. In a small pan on the stove mix butter, a splash or two of maple syrup, and brown sugar. Over low heat cook this together until it starts to caramelize a bit. Pour this over the sweet potatoes. In a bowl take softened butter, oatmeal and brown sugar and mix together. This should look like an apple crisp topping. Sprinkle that over the potatoes and toss in the oven until it starts to bubble a lot.

This is not the healthiest thing by a long shot but it is really good. This is one of the things I'm asked to bring to Thanksgiving every year :thumbsup2

any thoughts on what I could do with frozen, breaded eggplant rounds?

other than throw them away? :lmao:

This is where we're at too- we've been working on cleaning out the fridge and freezer. I will definitely have to stock up again soon. I intend to actually make a list of what I'm putting into the freezer though, so that I will actually know what's in there this time.

Same here. It's true, but you arent spending extra money running to the store just because you dont want to thaw something or think a little bit. :goodvibes

I'm trying to cut out eat out lunches too. Most of the time I can eat at home but my boss wants me to come in earlier now a couple of days a week so I am packing those days. I used to go out an avg of 3 times per week for lunch with this one coworker. When she moved away I saved so much money! :thumbsup2

Well tonight I think it will be box mac and cheese( I know I am bad) We have sports :cheer2: and so much running around. That I am just not cooking a meal. So the choice is peanut butter and jelly , or mac and cheese . Also I have salad and cucumbers to get rid of along with oranges. My dh will prob eat peanutbutter and jelly with some sort of soup.. We are just so busy tonight , and I am not going to Mc Donalds...

I'm thinking it will be spaghetti with ground turkey and veggies tonite. Nothing special.

I will say that making my grocery list does require quite a bit of discipline. I make the list off the sales flyers, then I look at it and look at it and look at it, and then I cut stuff off, and then I cut off more.

I'm feeling pretty good about it so far, though. It's a fun challenge, although I obviously can't do this every month.

At least I'm picking up a few good skills on how to really cut my grocery bill.

And I must say, even though we're all eating out of our pantries/fridges/freezers, everyone's cooking up some pretty tasty meals!

Great job everyone!

doing good but not unloading a lot of food. It doesn't appear the kids and I eat very much for dinners. :confused3

Tonight, ds had leftover Cheesburger Casserole from last night. He eats earlie than dh and I and usually has leftovers from the previous night. Dh and I will have teriyaki chicken breasts, fried rice, and spicy green beans. Everything on hand and trying to come close to some sort of Chinese New Year meal without going to the store and totally buying a meal.

Tomorrow will probably by hot wings from the freezer and some sort of appetizer food - probably cheese and crackers.

I have a long, long way to go.
Lori

Homemade applesauce with the last 3 apples and baked potato bar - had a small amount of turkey bacon, a chunk of cheddar cheese, 2 green onions and potatoes. I know that it didn't physically come from the pantry but I had everything in the house so I hope that it still counts.....

That is how I feel, I make a big meal and don't even see a dent!

We have been trucking along doing well I think. Oatmeal and apples for breakfast, assorted leftovers for lunch and a chicken helper except I used ham and a big bag of broccoli.

We did the challenge in January so pretty much cleared out the fridge, freezer and pantry. We did a major shop at the beginning of February and spent $100 over the months grocery budget (last month we were under budget), however except for milk and fresh fruit/vege, I hope we can do the challenge again this month and most of next.

6 Feb (public holiday so we were at home) - breakfast - toast/english muffins & spread
- lunch - salad sandwiches at my parents
- dinner - scallopini fritters with tzatziki (scallopini are homegrown)

7 Feb - breakfast - cereal at work with work supplied milk
- lunch - I had leftover fritters with a bread roll, Robert had leftover curry
- dinner - vege stirfry with tofu and brown rice (made two lots of leftovers for work lunches to freeze)

8th Feb - breakfast - none as we had morning tea supplied at work so I had that instead, Robert had toast and morning tea
- lunch - I had leftover fritters with a bread roll, Robert had leftover kidney bean and spinach casserole with couscous
- dinner - I did three different packet vege curries and added lots of extra veges to them - this made dinner for us and 3 lots of leftovers for lunches

We are very fortunate that where we work supplies fresh fruit, milk, tea, hot chocolate, milo (a malted drink like cocoa), soft drinks and has a proper cafe barrista style coffee machine to make our own coffees as this keeps the costs well down for these "extras".
