Feb. eat out of the fridge/freezer/pantry challenge

any thoughts on what I could do with frozen, breaded eggplant rounds?

other than throw them away? :lmao:
 
Will 2 cans be right amount for 4 people or just one. I plan on having leftovers later this week with all the turkey stuff.
 
Add spaghetti sauce and shredded mozarella - voila! Eggplant parmesan! :cool1:

yeah, tried that...kids freaked out when I cut into them. LOL I dont' like ____ parmesan anyway but I ate mine with a smile...oh what we do for our kids! :laughing:


tonight was from pantry. DH scrap together something he called a meal. At least I didn't have to make it so that makes it perfect in my eyes! :goodvibes
 

Ooo! I'm in. I can't believe I didn't find this sooner.

I have no idea what's in my fridge/freezer or cabinets right now. Sigh. I am going to make a list this week .. and am hoping to be able to get through most of it before we move in a couple of months.

I am also lucky, but my three year old has decided to only eat peanut butter sammiches and waffles. LOL ... maybe she saw this thread before I did. Don't worry, I am trying to make her eat other things ... though it hasn't been working.

Ok ... now for the month so far

2/1 - Leftovers from the rib place that I purposely went to before No Buy Feb started. YUM!
2/2 - dinner at my parents house. Yum and free!
2/3 - chicken nuggets and peanut butter sammich. I was too tired to fight it, and she ate something at my parents before
2/4 - Julie had a peanut butter sammich, but I am making mac n cheese with ground turkey with some sort of veggie. All out of our cupboard/freezer. I am sure she will eat some of this ... but wow ... I am starting to wonder about the peanut butter sammich thing. LOL.
 
We had hotdogs and bratwurst with free rolls that came with them. This was Saturday lunch. With pickles and chips.
Saturday dinner 2/2 thawed out frozen chicken breasts. Cooked them and then added jarred tomatoe sauce and mozzarella cheese from frig. Made some pasta to go with it.
Sunday 2/3 was sandwiches for lunch.
Thawed some chili and made a salad from frig for superbowl at ILs - we had hotdogs and sauerkraut.
monday 2/4 leftover chicken parm for lunch.
Put chicken leg quarters, potatoes in crock pot. made noodles from pantry and green beans when I got home.
So far so good. One bought bread, OJ, lunch meat, romaine, and tomatoes on the weekend.
 
OK, lets see....so far so good...

2/1 made a huge batch of spaghetti & meatballs for DD and friends coming home for weekend so had some of that for dinner

2/2 ate breakfast and lunch for free at swim meet, DH and I ate the rest of the spaghetti & meatballs for dinner

2/3 breakfast and lunch at swim meet again, dinner frozen pizzas in stock

2/4 cheeseburgers from the freezer with buns left over from last week and tater tots from freezer too

I'm low on fresh fruit though so I will have to hit the store soon.

Tonight we will be having Tilapi and Butter Beans. Both have been hanging around awhile. We will also have some salad. DS will have a leftover Stuffed Pepper from last night and some veggie casserole that was made to use up leftover Cheez Whiz.

I am going to stop by the store tonight. I am planning on getting soda and salad to get to $10 so I can get some freebies from store coupons for bread, frozen pizza, 2L soda and nearly free milk. Those things won't got to waste or end up in the stockpile too long.

well tonight I am going to make bake mac and cheese. I have to get rid of some of the macaroni.
I also had a penutbutter and jelly sand

I have so much penut butter that is comming out of me ears.

How do you make penutbutter cookies?? also any more ideas for the penutbutter;)
 
Today we had pancakes for breakfast (made out of the muffin mix) then peas, carrots, chicken and rice for lunch. Dinner will be more of that cabbage stir fry dish that I made last night.

I printed out my inventory list from the previous post and I am marking off things as they get used up. It's so much easier to plan when it's on paper!
 
I am on track from my last post and the turkey has been in the oven all morning. I pulled out the pantry items. I only had one turkey gravy mix but since my Mom is coming for dinner she is bringing one from her pantry. (So no it wasn't purchased). Since its fat Tuesday my Mom also made Fastnachts and is bringing them for dessert.

If anyone who posted about the sweet potatoes in the can, do I cook them stovetop or in the oven. And how much brown sugar do you add? I think I am actually panicking over a can of sweet potatoes...:rotfl2:
 
not sure what dinner will be tonight. It's going to be rough as DH's is off tonight and when that happens we like to go out. But I really dislike the effort of going out with my crew so I need to make a plan for this evening so it's not 6pm and everyone is complaining about dinner not ready. LOL

I'll see if DH can move some things so I can get into the deep freezer and maybe i have a whole chicken in there I can pop into the crock pot.

you could heat them in the mico or in the oven. I would add 1/4 cup of brown sugar and 2 tsp of melted butter..

Were there directions on the box?? I have some chocolate chip muffin mix I may try this with tomorrow. I live on the IL/WI border and we are slated for 10-14 in of snow between now and tomorrow afternoon...I'm sure my kids will have a snow day tomorrow. I think I enjoy these more then they do!:banana:

But on my 8 ounce 15% more for free one, it just says to add 3/4 cup milk and one egg. I hope that helps :)

Between this thread and the "No Buy Feb" ya'll are keeping me on track. If I even think about spending any money I keep thinking that I will have to confess to the Dis. :worship: Can't do that.:scared1: So, no (or very little) spending for me.

02/05 9.38 DD desided after 13 yrs. she now loves PBJ. and had to have it for lunch today. And DH informed me you can only have it on white bread.So much for "eating out of the fridge" this month. (still within budget)
 
so far so good!
