Feb. eat out of the fridge/freezer/pantry challenge

OK - I have to get back on track! I have been so lazy. Lunch was an Organic Burrito that I bought yesterday from the clearance section at the store. Actually, I bough 6 89cent items yesterday. Why or why did I go in that store? I don't have room in my freezer for anything! I don't feel like I am making a dent.

Supper will be either the Corn Dog Casserole from last weeks menu or Cheeseburger Meatloaf. I realized that both recipes called for cheese which I thought I had. To my surprise, I can only make one of the dishes and then I will be out of shredded cheese!

My pantry is getting slim but I am very grateful to get rid of some of the items we no longer use... So tonight we are having

Chicken nuggets made with Shake'n'bake (jazzed up with Mrs. Dash and parmesian cheese)
Suddenly Salad - (Do they even still make these:lmao:)
Green Beans
Applesauce cups...

Every single item except the actual chicken came from the cupboard. I can see the back of the cupboard now and know everything that is left. My grocery bill has been so low this month. I have doubled a few payments and still have enough to make a huge grocery trip at the end of the month. This will include the $ from March's budget. I am looking forward to bulking up on fresh fruit and veggies and healthy snacks. The only problem I have will be getting myself back into cooking from scratch the whole month. We all benefit from this at our house and I know my digestive system will be happy also;) Hope everyone is doing well on this challenge.

We had left over meatsauce from the freezer w/gemilli pasta and veggies. All from the freezer. It was tasty and delicious.

I figured today for the first 2.5 weeks of February we have spent on groceries/fast food/take out less than we would spend in one week. $160 would be our normal average. WooHoo for us. I am keeping this up.

wel my oldest keeps on gripeing that we have nothing goo do eat

this is what I am down to:thumbsup2
10 peanut butter.. I found more:confused:
8 jelly and only one is strawberry
8 boxes of mac and cheese.. I found 2 more
4 jars of salsa
5 cans of refried beans
3 boxes of taco shells
I have tons of canned fruit:confused: .. I have not even tapped into that.
4 cans of tuna
1 can of chicken noodle soup:cool1:
.. I found in my big freezer(now that I can actually see what I have )
3 kiser rolls
3 packages of bagels
donuts

I am going to have to get some cream cheese.. The kids and dh will not eat them with out it( I will have to make sure its light)

5 packages of ground turkey.

I did run out of oatmeal.. I might be able to hold off until I really shop

Tonight is homemade sloppy joes, salad, corn, and applesauce. The canned corn and applesauce are from the cupboard. I noticed that I still had a lot of beef in the freezer, thus sloppy joes...

Lunch today was baby carrots with ranch dressing and a frozen lasagna that I bought of the clearance rack earlier this week. Tonight will be beef stroganoff - the beef was in the freezer and sour cream needed to be used. Now I only have 11/2 containers of sour cream. The noodles I did have to buy though. I will use some veggie that I have on hand.

I can't figure what I'm going to make for dinner. I still have 2 bags of pasta stars (like for soup), and I found 4 boxes of spanish rice,5 jars of pizza sauce, and the makings for a couple pumpkin pies, including pie crusts. LOL All need to be eaten up this month. I'm going to look up what you need to do to make dough for pizza crusts..I'd have to get yeast (I assume) but I'm sure I have everything else. I should have something in the freezer than could be used as toppings.

but for tonight? I guess I can figure out how to salvage what DH made the other night and turn it into tacos.

One more week for Feb. How are you all doing? I've been out of town on business since Thurs so I get paid for all my meals. YAY! However no telling what DH has spent to feed himself! :rotfl: I'll only have 4 meals to plan next week then out of town again. So I think we will make it with almost the whole month out of the pantry! Time to stock up again.

we've been eating out of the pantry except for a couple meals. I couldn't stand making anything else so we got pizza one night, which lasted for 2nights and then the kids got McDs last night and Dh got chinese food and I got egg rolls. That food will last us a couple days as well. So 5 more days to figure out meals for. Dh will be home tomorrow night so hopefully he can help me get a bunch of stuff out of hte deep freeze to put into the house to de-thaw.

I had to run out and by some lunch meat, veggies and milk.I am about to finish up the rolls. My freezer is looking slim:scratchin . I still have tons in the cubbards.:scratchin Iam running low on soup. I also have 10 cans of pork and beans:crazy2: . I can get through this week, but I will need to shop soon.:hourglass

Well, one more day. How did everyone do? I really made a dent in the pantry supplies. YAY! And all my grocerry stops were planned so that was good. The downfall for our budget was DH's trip to the store when I was out of town. He made stew, which was fantastic by the way, but we already had most of the stuff he bought in the house including the meat! :goodvibes Oh well.

Well, I did use stuff from the freezer and pantry. I have soooo much stuff stockpiled it isn't even funny! I did still need to shop and I did cherry pick for good deals so I can't say I made much of a dent. But, some is better than none! This challenge did keep me on track and planning menus around what I already have!

well tonight I am going shopping:cheer2: .I will start the March challange.. (is there one. ) I am done with Feb with very few things (that I like ) in the freezer. I still have TONS of jelly and mac n cheese and , beans. So tonight I am doing a big shop and It is on for march:banana: :dance3:

We did really well actually. The pantry looks like a pantry again! LOL I stayed away from the grocery store except for fresh stuff and I didn't even wander around, just got in and got out. We spent less than $100 this month at the grocery store! :cool1:

Dh has been being rather odd and bring home food from work because of the short shelf life they are required to keep so I'm not cooking anything other than what he's been bringing home. And it's all pre-portioned too so it's kid sized portions of tortellinis, broccolis, stir fry, etc. It's nice but still a bit odd for him to do that. :confused3

If he keeps it up I won't even have to buy veggies this month at the store. LOL

I'm going to keep on going until we clear out both freezers. There is no reason to buy another pack of meat until the other stuff is long gone. And I'm sure I can figure out how to make chicken tacos. I'll look up a recipe or two.

I am going to have to pick up enough cheese and some crusts to make about 6 pizzas. And some pepperonis.

I did very good.:cool1: . I can actually see in my cubbards. I still have lots of stuff.. I got rid of a ton of bread items. I can actually see the bottem of the deep freezer.:rotfl:. I also found in my secret stash some snack food for the kids:confused3 . I have made a HUGE dent, but I have tons of stuff still. I am doing a major meat, cheese, egg shopping. . I still have tons of beans:rolleyes1 . . I am going shopping and I will do the March challange:thumbsup2
