We did good this weekend and stuck to the plan. Tonight we are having fried chicken and sweet potato fries from the grocery instead of chicken fajitas as my mom was out all day again with my Grandma Christmas shopping and I am getting over a cold.

We did finish up our Christmas Eve dinner shopping, well we still need marscapone cheese for the desert but my Aunt might pick that up. We are having chicken and dumplings with caeser salad and pound cake with fried apples and marscapone for desert. I can not wait.
 
Just got back from eating out all week at WDW! Got back late last night. Just hit the grocery for some basics and our usual Christmas appetizer and junk food extravaganza and I left the grocery with a lot less money. Oh well, Christmas only comes once a year!

Christmas Eve: all the junk, sushi and other apps you can eat;
Christmas: Parents are cooking ham, turkey and trimmings. I'll bring mashed potatoes and veggie casserole; and
Sunday: Who knows...probably a bunch of leftovers.

I'll work on the rest of the week Sunday. I hope everyone has a Very Merry Christmas!!
 

I hope everyone's holiday was great. I had a good one yesterday and am still full from all that food. I planned this week's menu out today. I am using the pantry/freezer a ton this week.

Tonight- Banana chocolate chip pancakes with fresh fruit
Monday- Baked potatoes with chili
Tuesday- Baked macaroni and cheese
Wednesday- Chicken fajitas with spanish rice
Thursday- Grilled cheese and tomato soup
Friday- Originally we were having a cocktail party here but instead we are going out to eat early and then having a dessert open house.
Saturday- Grandma's for dinner
 
Well I hope everyone had a wonderful holiday! So this week we are way off track. We will be getting back on with the next food shopping trip. How is everyone else doing? Any new years resolutions with eating out? For us we need to save our money for Disney and pay off the last of our debt! Here is the menu for this week

Tonight - DH's 30th birthday! Sushi take out YUM:cake::bday:party::jumping1:
Thursday- Homemade mac and cheese
Friday- Going over to cousins new home for taco's
Saturday- we will have to wing it

Need to go real food shopping! have a great week everyone!!!!
 
Been struggling this week due to all the visiting family and friends. We have been eating out way too much and I have been making bad choices when we do. Everything should calm down starting tomorrow.

My New Years resolution (actually I made it awhile ago and then the holiday stress hit) is to take better care of myself mentally, emotionally, and physically. This means less eating out (saving myself money and calories), changing the way we eat at home (by mixing up my menus and lightening up most of my weekly meals), and taking better care of myself.

My menu for next week:

Saturday: Easy apps and snacks (Cheese and crackers, quesadillas, spinach and artichoke dip, brownies)

Monday: Chicago Style Pizza and Hot Dogs (yearly treat from Tastes of Chicago)

Wednesday: Cajun Shrimp and Sausage Casserole and Corn Bread

Friday: Fajitas and Spanish Rice

Sunday: Orange Glazed Salmon, Green Beans, and Rolls
 
love this thread. Have followed since beginning, but rarely post. Hope to see it keep going.
Wed: Stouffer's lasagna(3.99 and $1 off coupon for family size at publics)/fruit
Thurs: Tomato and Bacon Pasta( got from Tiffany's site)
Fri: We are going out/kids are having apps at home with Grandma
Sat: Christmas dinner because we were snowed in on Christmas and no one could come. Luckily almost everything was freezable.
Sun: Taco soup(also from eatathomecooks-really good) veggies and dip
Mon: Leftovers
Tues:shopping day-next week to be determined then
 
Hope everyone had a happy holiday! I went grocery shopping today. I went grocery shopping today and don't anticipate going grocery shopping at all next week. We bought some meat from Omaha steaks plus I have to use down my freezer and pantry stockpile. I spent $115 today and saved $35 in coupons.

Here's the menu for this week
Monday scalloped potatoes and ham
Tuesday cumin grilled chicken breast and chicken rice
Wednesday Split pea soup with the left over ham bone
Thursday Groupon day at the children's museum and pizza
Friday New Years Eve dinner snow crab legs, raw beef and onions on rhy, smoked fish, shrimp cocktail, meatballs in cranberry/chili sauce
Saturday chicken alfredo
Sunday meat of some kind
 
We're doing pretty well around here, and have, for the most part, eaten according to plan.

Monday (dh gone) -- fried egg sandwiches
Tuesday -- killer headache and I wasn't up to making anything. Plus dh was back, so he went for Chinese take-out
Wednesday -- grilled fish, rice, green beans
Thursday -- We'll be in Orlando for the day, so it'll be dinner out.
Friday -- New Year's Eve. I'll make several apps, and we just graze and play games.

This isn't our healthiest week, but the holiday often seem to throw a wrench in the works.

I have a complication that many of you don't seem to have... I live alone.

I recently moved ~100 miles away from my family and I am trying to adjust to cooking for one. It has been a challenge.

Does anyone have any ideas for strategies for cooking for one? :confused3 I am getting bored of the same-old-same-old.

I live alone too and work in the afternoon which makes cooking really hard. I bought a 2qt crock pot and it works really good for small portions. Another thing that helps is cooking a pound or two of chicken breasts and portioning it in baggies and freezing to use in salads, mexican food, italian or with sauces or seasonings.

Well Welcome! I think your freezer may be your best friend. :rotfl2: Just freezer the leftovers into a portion just for one and you can take them out whenever you want.
 
Glad to see everyone is still around. This holiday thing has made eating at home hard but I think we have done pretty well only going out once on Monday night for dinner. Tuesday we had homemade pizza because my Uncle and cousin were over doing some projects around the house and it sounded good to everyone. Wednesday we ended up having soup and sandwiches. Tonight we are having roast beef hash with leftover beef from Christmas day that my grandma gave us.

Tomorrow we are going out for an early dinner with a few family members before coming home and having a dessert party with more family and friends.

Saturday we go to my Grandma's for the traditional pork and saurkraut meal.

Sunday I have crock pot potato and double corn chowder planned as we will be taking down decorations and having something in the crock pot will be easier.
 
Sorry--I actually meant to start a new thread.

I will soon be divorced from DH. We have no kids, so I will be cooking for myself for the most part. It has been such a long time since I have cooked for myself, I am trying to get in that mode of thinking. I know it is only one person less, but DH was a big eater.

If I have friends or family over, I always try to use the leftovers during the week.

Any recipe suggestions would be appreciated. :thumbsup2

We live in Manhattan, on the Upper West Side. Not the cheapest place to eat, even if you're eating at home. Usually, Trader Joe's runs us under $20 a day, but I went to Fairway tonight to get the "good stuff" for meatloaf and mashed potatoes, and dinner is running me just over $28. :O

Any suggestions for cheap urban living? :)

well welcome aboard! As for tips on cheap living, just look for sales and plan ahead. Good luck with saving for your upcoming trip!

Oh thats hard. I know sales are few and far between in the city and that you have little to no space to "stockpile food" so I would have to say your best bet is to cut down on the amount of meat you buy. For example meatloaf is going to be an expensive meal because it is all meat. Things like stir frys and soups would use a quarter of the meat and still be quite healthy. I know in the city it is cheaper to order out a lot of the time. When you do, make sure you order a meat item and maybe make your sides at home. Don't waste your money ordering out pizza or pasta dishes. Same goes at lunch time, if you eat out try to order a meat dish, then you can make pasta for dinner and not worry about the meat. Frozen veggies are cheaper than fresh so buy lots of those instead of the fresh ones. Hope that helps!

You can also subscribe to the magazine. The recipes are usually easy to divide in half to serve just one person, or you can make the whole recipe and freeze or refrigerate half for another day.

We are going to sit down on Sunday to plan meals for the week. We got some new cookbooks for Christmas and have lots of recipes we want to try! I'll let you know what we end up making.
