Eat at home

Well tonight I am going out to dinner with friends. it is a tradition of ours to get together sometime during December to chat and eat, the two things we do best.

Mom is going to have some shrimp scampi from the freezer so at least one of us is eating at home.
 
yesterday we had a bad snow storm. i didnt go to work and school was cancelled for dd. i almost ordered out last night. instead i found 2 large chicken breasts in the freezer. we had corn, potatos, and fried chicken. for lunch i made taco salads. went back to work today forgot lunch!! :( had oatmeal and greek yogurt. when i get home i have manicotti in the fridge. i just have to warm it up, make a salad and dinner is done.

Back from Disney yesterday and my refrigerator is empty! Last night I made pasta with brocoli, tonight I'm making a maple balsalmic chicken breast rice and brocolli. Then this weekend I need to shop for some fresh fruits and veggies and some cheeses!

This weekend was good. I went out to dinner with friends on Saturday night and had a blast. We went to a new restuarant that was cheap and had yummy food. Last night we homemade orange chicken stirfry. We had both been craving Chinese takeout but since we had the ingredients in house I made it at home instead.

Tonight we are having spaghetti with homemade turkey meatballs and garlic bread.
 

My menu for this week:

Monday: Chicken Pomodoro, rice pilaf, and roasted asparagus

Tuesday: Turkey subs and chips

Wednesday: Country Style Ribs, corn bread, mashed potatoes

Thursday, Friday, Saturday: Not home

Sunday: Italian Meatloaf, Au Gratin potatoes, green beans
 
This is my menu for the next two weeks until we leave for vacation in North con way to ride the polar express

12/7 spaghetti sauce
12/8 hot dogs and a pasta salad
12/9 whole roasted chicken
12/10 pizza and fries
12/11 leftovers
12/12 beef bake
12/13 spaghetti and sauce
12/14 maybe mac and cheese or pancakes
12/15 chicken and rice
12/16 pizza meatball subs
12/17 pizza and fries

12/18-12/20 vacation. Not to bad we had to pre pay for this back in June so its all paid for we even have a free breakfast each morning Can't wait

I also tried to food shop today for two weeks to save money and so far I have spent 135. normally in two weeks we spend 240. plus take out so lets see how much we save

It was a lot of fun and it was nice and warm. We got back to Connecticut and it's been in the 30s every day since we got back. Brrr. The food was all really great especially our sit down meals which were Teppanito, Breakfast in the Castle, OHana and Mama Melrose. The fast food was good too but I hate waiting in those lines and then looking for a table while juggling food! It was so nice to not have to cook for a week though.

Since I've been back it's full throttle into Christmas stuff so I have NO time. I haven't baked any bread and I'm throwing together meals. So far we've done take out pizza once for dinner since we've been back and now I have a lot of "Christmas dinners" coming up for the next few weeks. It will be challenging to feed the rest of the family at home while I go out!
 
We have been doing good around here. On Tuesday we had the leftover turkey meatballs on sub rolls with sauce/cheese and sweet potato fries. Wednesday we took my Great Aunt out for a late lunch so we had cheese and crackers with fruit for dinner. Tonight we are having french toast with sausage.
 
Things have not been good here the last couple of weeks. We've kind of fallen off the Eat At Home wagon, partially due to me working second shift a lot of days recently, and DH just doesn't cook at all while I'm here.

I went grocery shopping today and bought a lot of stuff, so hopefully we can get back on track.

Tonight: Chicken Fajitas
Friday night: Ham/CHeese/Salami Subs, carrot sticks
Saturday night: Ziti/Sausage/homemade sauce, salad
Sunday: Pot roast in the crockpot with noodles and salad
Monday: Hamburgers, chips, veggies
Tuesday: Leftovers from Sat/sun
Wednesday: pancakes/sausage/fruit
 
Yesterday was my shopping day. I spent $104 and saved $31.15 in manufacture and store coupons.

Tuesday bbq chicken pizza with pillsbury pizza crust
Wednesday Chicken chipotle tortilla soup
Thursday breaded chicken sandwiches with homemade wedge fries
Friday Sunny Andersons Shephards pie from Foodnetwork
Saturday Arroz con polo
Sunday meatloaf muffins and garlic mashed potatoes
 
Hope everyone is doing well! I am super excited to share that I booked a trip to Disney as a surprise for my husband for Christmas. Its not until DEC 6-15th of next year but its worth the wait. i figure that after Christmas we will do a movie night once a week with a Disney theme to get us in the mood.

Congrats on booking your trip for next year. Movie nights sound like so much fun. My mom and I do Disney themed movie nights occassionaly.

Last night we ended up having tomato soup and grilled cheese as my mom was full from her lunch out with my Grandma and I was so busy studying. Tonight we had french dip sandwiches. I had the french dip in the freezer from the last time we made it and we had cheese and buns to use up. We had it with applesauce and glazed carrots.

Tomorrow we wil have the french toast and sausage.
 
So, next week should be a bunch of fun. We are supposed to get some pretty nasty winter weather here which would interfere with my plans to hit the grocery on Monday (like normal). I have plenty of food in the house, I'm just not that great at coming up with random meals using it!

We went out to dinner tonight to celebrate a friend's birthday. If things go as planned, the next or so should look like:

Sunday: Italian Style Meatloaf, Mashed Potatoes, Green Beans

Monday: Steak, Baked Potatoes, Parmesan Spinach

Tuesday: Tacos and Mexican Rice

Wednesday: Roasted Chicken with Balsamic Vinaigrette, Mashed Potatoes, Roasted Cauliflower

Friday: Not sure... I need to bake cookies and other treats all day, so mom may pick something up on the way home. I never feel like cooking after baking all day.

Sunday: Christmas Dinner- Ham, Mashed Potato Casserole, Southern Style Green Beans, Biscuits (first time I am making from scratch!), Deviled Eggs, and Apple Cinnamon Cake

Tuesday: Beef and Broccoli, Rice, Egg Rolls

If I can't get to the store on Monday, then I can hopefully get there Tuesday or Wednesday at the latest. If that's the case, then I will drop the chicken from Wednesday's slot and make the steak instead.
 
Yesterday was good. I went with my mom, aunt, and grandma to a christmas card making class which was free. My grandma then treated us to lunch since we were headed to her house after to decorate for christmas. Since we had a big lunch out mom did not want french toast and sausage so I found some frozen french bread pizzas in our downstairs freezer.

I swear tonight we are having the french toast and sausage. In fact the french toast is in the oven as I type this.

The rest of the week

Monday: Turkey tenderloins with crock pot parmesean potatoes and corn
Tuesday: Lemon chicken rice soup
Wednesday: Pot Roast
Thursday: Leftovers
Friday: Dinner at Grandma's
Saturday: Pork Chops with apple cider gravy and mashed sweet potatoes

I don't plan my meals until Monday morning as grocery shopping is a chore I do with my LO who is 3. She hates it..... but such is her lot in life.

We are making an effort to feed the family a healthy menu on under $100/week.

I do get to cheat some as my oldest eats breakfast and lunch at school 5 days a week and my youngest gets lunch and snacks at school two days a week.

Last week our menu was:

Monday: Chicken Enchiladas (Pantry/Freezer Day)
Tuesday: Grilled Cheese with tomato basil soup
Wednesday: is it bad ~ I can't remember??? Oh yes... Meatloaf, roasted potatoes, green beans
Thursday: Macaroni and Cheese ~ but I have an excuse! I worked late AND we had family night at the school. So it was already 7 by the time we got home.
Friday: We ate out for the Polar Express Movie on the big screen at our local theater
Saturday: Lunch was pasta salad with the veggie pasta,carrots, cheese, bacon, and a vinegar based dressing with fresh brewed iced tea. Dinner was a roasted chicken with stuffing, homemade cranberry sauce and corn.
Sunday: Lunch was homemade chicken soup with homemade rolls. Dinner so far has been homemade chocolate chip cookies... but everyone will probably have some soup before showers and bed.

:) For us it is a we just eat out out of habit thing. We need to save money. We don't need to go out.... and most of the time we way overeat.

Thursday : leftovers

Friday: Hamburgers and fries, fruit

Saturday pizza

Sunday Don't know yet

I am making lots lots cookies this week. I don't think they last.
 
Tonight I didn't feel like cooking. There is a huge snowstorm and I'm a little sick so I didn't feel like making anything. But I went through my fridge/freezer and found something moderately easy to make.

We're having rigatoni with lean turkey sausage and some veggies on the side. Not to creative, but it was easy and I had all the ingredients.

Thanks for inspiring me to stay on track!
