What's for dinner? Was it "budget"?

Whopper Jrs off of the value menu at Burger King ($1 Each), a bag of generic onion rings (really good), and a six pack of beer.

Was it budget? All but the beer.
Was it healthy? No way.
Did it hit the spot? Yup.
Are there any dishes to wash? Just one pan.

Note to self, MUST exercise tomorrow.

I make these wraps typically with leftover chicken breasts we've grilled and they are SOOOOO yummy! I also don't ever really follow recipes to a T because I have 5 in my family and my 3 kids eat quite a bit.


MY version of the recipe
2-3 grilled chicken breasts
2 cups shredded lettuce
1 sm-med jar of mandarin oranges (depending on how many you'd like)
1 avocado
1/4 cup diced scallions or red onion (whatever I have on hand)
1 small container of LaChoy Rice Noodles (the little crunchy ones)
tortilla wraps (I use an 8 pack)
Kraft Asian Toasted Sesame dressing
Cilantro (if desired...my kids don't like it but DH and I do)

These can also be made on romaine or bibb lettuce as well and are just as good!

I just toss everything BUT the dressing and noodles in the bowl first. Then I just place whatever amount of meat mixture we want down the center of the wrap, drizzle some dressing and sprinkle noodles on top and wrap it up!

This fed all 5 of us (one wrap each tonight) DH, myself, DS13, DS8, DD6. There was NONE leftover so next time I think I'll make a little more so I can take it in my lunch the next day.

Tonight we are having cajun 15 bean soup. It's made by Hurst's and is HamBeens brand. I have taken this to pot lucks many times and there is not a bean left in the pot! Really good. Inexpensive too. I usually make it with Italian sausage, but I have a lot of left over ham (and a big ham bone) so ham it is! It's in the crockpot. We'll have rolls with it and a fruit plate for dessert.
 
I cooked a huge pot of spaghetti noodles with Ragu last night.

If my family gets tired of the bland noodles, I will stick them in a casserole dish and layer it with shredded cheese and maybe a little bit of meat of some sort and bake it.

Yes, it's a bag of beans with the cajun seasoning packet. Good recipes on the back of the bag too. I just got it at the grocery store. I'm sure Wal-Mart has them too. In the dried bean section. Good stuff! Let me know if you try them! :)
 
didn't end up with that....fried chicken from the store deli....2 and 1/2 hours at the dr. and a hand splint later I couldn't/didn't want to cook.

Dinner with DH's family went well last night, everyone enjoyed themselves and everything was very tasty. The hunk'o'beef DH requested ended up costing me $16 (OUCH) but we have lots of leftovers to make sandwiches or stroganoff later in the week. MIL brought a very good salad - chopped baby spring greens with mandarin oranges and chopped apples, Chinese crunchy noodles to top it with, and Kraft Free Asian Sesame dressing. It was quite yummy! I found myself wanting a few more veggies mixed in, maybe some raw snow peas or some broccoli florets, but that was just me... and since I didn't make the salad I just smiled and ate it. :)

We are having Kielbasa and sauerkraut tonight, tater tots and green beans on the side.

Babytrees I'm wondering too, what happened to your hand? Sorry I didn't see it earlier. Hope it feels better today.

Tanya, it sounds like a great meal you had at the get together! I've tried the Kraft Free Asian Sesame dressing with a dish and it's good! :)

the laundry and I got in a fight...it fought dirty:rotfl: I tripped over a load that I thought I had avoided:o on Saturday night. Figured I'd eventually be okay but when I lost all control of it briefly Tuesday, knew it was time to make sure it was just sprained. Well at the least I have a bone contusion, at the most I have a broken wrist. Won't know for sure until the swelling goes down and they can re-xray it next week.

Thanks for the hugs. It's a good thing my husband is home the next couple of nights to cook:thumbsup2 ...I am left handed and I am splinted on my left hand. :headache:
 
that salad sounds yummy...but I am with you I think I would have put sugar snap peas in also!!
 
Last night was spaghetti made with whole grain pasta (a bit more expensive but better for us) and sale-price hamburger, plus cans of store brand tomato sauce doctored up with garlic salt and Italian seasoning bought by the huge bottle at Costco. I also served Costco croutons to go on top of either the pasta or the bagged salad I threw out on the table. The croutons work as a cheap/lazy substitute for garlic bread. Mostly lazy.....:rolleyes1
 
but a budget breakfast/snack for the upcoming week...I just made a double batch of rhubarb nut muffins this AM. I still had rhubarb left from last season and needed to cut down my plant. I had everything on-hand so it was very budget! :thumbsup2

I am trying to eat from my pantry. I have barley but no recipes to go with it. Anybody have any ideas for me?

Today is pulled pork sandwiches... (crock pot style) with zucchini parmesian for a side. I have left over applesauce and romaine for salad also.

Pork $3.00
bbq sauce .50
rolls left over from Memorial Day...

Zucchini $2.00
Tomatoes .75
onion/garlic .25
parmesian cheese .50

$7.00 family of 4, left overs for 2-3 lunches depening on the taker??
 
You could make a vegetable beef soup with barley. Or even just a vegetable soup could help you use up some of canned veggies as well.

That's the only thing I know to do with barley but, it's already in the 90's here. My husband has protested it's too hot for soups. :cool2: We are in full blown summer mode here. Are there any cold/salad type things I could do with it?
