What's for dinner? Was it "budget"?

the laundry and I got in a fight...it fought dirty:rotfl: I tripped over a load that I thought I had avoided:o on Saturday night. Figured I'd eventually be okay but when I lost all control of it briefly Tuesday, knew it was time to make sure it was just sprained. Well at the least I have a bone contusion, at the most I have a broken wrist. Won't know for sure until the swelling goes down and they can re-xray it next week.

Thanks for the hugs. It's a good thing my husband is home the next couple of nights to cook:thumbsup2 ...I am left handed and I am splinted on my left hand. :headache:

For tonight's dinner, I made sausage gravy and biscuits. This was my first time making biscuits. I wimped out and went with a bisquick mix rather than making from scratch. They turned out OK. I didn't have a biscuit cutter, so I had to cut them by hand. I think I cut them too big. They didn't rise much at all. But, they are still edible.

I just make Stove Popped Orville Redenbachers popcorn. We've done this since I was a little kid. It doesn't feel like Sunday night without it. Sometimes a Pepsi on the side too. (just like grandma used to feed us) We usually eat big on Sunday afternoons... just not today!

My favorite breakfast is raviolis and a soda. Fills you up the whole day!!:banana:
 
tonight is leftover spaghetti.. Cant get anymore budget than that :rotfl2:
 
We're having mini english muffin pizzas and a big salad. Most of the items were under a $1 or b1g1. Should only cost us around $5 for the whole meal and there will be lots of leftover salad! YUMMY.

I am hoping to feeling good enough tomorrow to try our hand at parmesan noodles with the parmesan chicken you can get a Noodles & Co. yummy!!!
 
We had grilled chicken breast, rice pilaf, and leftover green bean salad (that salad just keeps going and going!)
 
Not really budget, but steak strips in mushroom gravy with noodles, side of mashed potatoes and corn. hubby and kids are about ready to come home from ball park. I made homemade banana but bread as a treat tonight, got to love Martha!!:cool1:

OK, this isn't amazingly budget but it was the easiest lasagna recipe ever & it was DELISH!!!

Easy Meatless Lasagna

You won't miss the meat with this easy, three-cheesy pasta dish.
Ingredients:
2 cups lite ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons spicy seasoning
2 jars (28 ounces each) tomato pasta sauce (any variety)
12 uncooked lasagna noodles
2 cups shredded mozzarella cheese (8 ounces)
1/4 cup grated Parmesan cheese
Additional shredded mozzarella cheese, if desired
Directions:
Heat oven to 350-degrees. Mix ricotta cheese, 1/2-cup Parmesan cheese, the seasoning.
Spread 2-cups of the pasta sauce in ungreased rectangular pan, 13x9x2-inches; top with four uncooked noodles. Spread ricotta cheese mixture over noodles. Spread with 2-cups pasta sauce and top with four noodles; repeat with 2-cups pasta sauce and 4 noodles. Sprinkle with 2-cups mozzarella cheese (save some to sprinkle on top.) Spread with remaining pasta sauce. Sprinkle with 1/4-cup Parmesan cheese. Cover and bake 30 minutes. Uncover and bake about 30 minutes longer or until hot and bubbly. Sprinkle with the saved mozzarella cheese. Let stand 15 minutes before cutting.

Complete this meal with your favorite tossed salad and crusty Italian bread, if desired. Recipe makes eight servings.
 
Tonight was grilled chicken breasts, we bought a frozen bag of boneless skinless breasts for $6.99 and only used about half of them, so say $3.50 worth of meat for six people, plus we had Minute Rice flavored with ramen soup packets, we buy the big box of rice at Costco for like $5 so maybe it cost 15 cents? One can of corn - 50 cents. Bagged salad, shredded cheese, dressing, etc - maybe $1.50 total......

Under $6 to feed 6 people and we have leftovers for lunch tomorrow....

That's how I make lasagna! I add an egg to the ricotta mixture.. but, frankly, I have no idea why >:lmao:


Tonight for us was Rice and Beans

It costs about $2 for a batch.

We topped it with some cheese and sour cream (except for dh.. no dairy for him).

probably $1 worth.

Parmesian Cheese.. I say free since it was the butt end of the piece...

Pita Chips.. Leftover pita from well last week, a little butter and garlic powder, crisped up... soooo .25

$4.00 dinner for 4 - no leftovers...

total 2.50 for 3 people
 
We had a easy meal, hot dogs and sausage on the grill. Made some mac and cheese and that was dinner..
 
We had homemade pizza - I made 2 large ones but we didn't even finish 1 so lots of leftovers

Dough (homemade) - Maybe $1.50 since I use the pricey bread flour
Sauce - $1
Mushrooms - $1.50
Turkey Pepperoni - $2
Cheese - $2

So maybe $8 for at least 2 meals

We also made some no-bake cookies (first time) which are setting as I type. They were probably a couple bucks for 12 of them
 
We had "what floats your boat" night. I had a calzone (pre-made frozen), kids had popcorn chicken, ff, applesauce, DH had cheesburgers and ff. Ice cream for dessert. It's the weekend. :dance3:
 
No idea yet, it is just me and the kids tonight.....I am contemplating boxed mac and cheese (which would be very budget) but the homemade pizza idea sounds good (and also budget)..... However, the lazy lazy part of me (a big part, mind you) is thinking that the drive thru at BK sounds good, and is not budget, and would entail using gas......

Still sounds good, though......:rolleyes1

*UPDATE* I went with the mac and cheese, I think I should be congratulated for the wise, budget friendly decision.....

Turkey Meatballs (3.50) in the crockpot with store brand sauce($1.00) with pasta ($1.00) a pita/garlic/bread ($2.00) and a couple of glasses of wine from my box-o-wine(priceless):rolleyes1 .
