What's for Dinner Tonight? (recipe index in OP)

Does anyone have the recipe for Lindsay's Kittentash? I think it will be better with dinner this evening than a plain black bean salad.

Dinner: Baked Chimichangas for Erica Marisa and maybe me, Kittentash- I hope, pizza for the rest and maybe a nice bacon and tomato foccacia bread.

II sure wish I could remember what kind of coating was on that grouper at the Brown Derby! It was really light & crispy, which makes me think it might have been panko bread crumbs. But you can usually see the flakes when you use them, so I thinking it might have been just a light corn meal batter.

Here is a trick for a light and yummy fish coating....potato buds! I am serious. This is what Mario Batali uses, and Mario can do no wrong in my book!

Here is tonight's dinner. I decided to do a southern spin on Brown Derby's grouper. !

I forgot how yucky movie popcorn is.

Laura and I worked at a movie theater all through high school and on college breaks. I ate so much popcorn then that I am off theater popcorn for life!

Do you think she really had a sister? I'll have to go look that up!

I'll save you the research, she did indeed have a sister. But, the movie does not portray things accurately--Mary was a lot older than Anne and her affair with the kind ended long before Anne came into the picture. I'm a bit of a Tudor buff from college.

I am bracing myself for this year's Little League season. Liam will be at a more competitive level -- they keep score, have playoffs, have an All-Star game, have kids pitching, have only nine players in the field and in the batting order at a time, etc..

Laura reminded me that someone asked for my hummus recipe:

2 cloves garlic, minced
handful of parsely
2 scallions, chopped
2 cans chickpeas, rinsed and drained
6 tbsp. tahini
6 tbsp. lemon juice
1 tsp cumin, toasted
pinch cayenne
salt to taste

blend everything together in a food processor.

Spicy cole slaw:

I'm making mediterranean food tonight--the greek burgers posted here a few days back, hummus, tabouli (but with quinoa instead of bulgur wheat because I have bulgur), pita, and a chopped tomato-cucmber-feta salad.

Afternoon all---we already have 8 inches only 8 more to go before it stops late tonight.............My brother called me this morning to let me know he was heading out to go golfing.......brat! He wants us to move to NC near him and it is quite possible we will do this after my grandmother has passed. I would never leave her, and I am in no hurry for her to be gone from us either...I will endure many more winters. I do however cling to the hope of warm winters at somepoint in my lifetime, lol.

Becky--the food pics looks as always delish!! Do you own a home in St. John?
My parents had good friends who owned a movie theater so my whole childhood we were there all the time......to this day I have no interest in the popcorn at all anymore.......

Lindsey---March is doing nothing for me at the moment....it looks no different then January....it has been snowing almost every other day since the first of Nov..........the one good thing is we did miss 4 storms while in WDW in Dec..........here in Maine we have to endure the 5th season before we even get a chance at spring and that my friends is the dreaded MUD season....I can't even begin to think how awful it will be this year with how much snow we have to melt.

Kat--Let us know how Kyle's back is feeling....I am sure you are a bit tired of the dad's calls........remember this is just the start of the season

I will be glad when tax season is done and we have Gretchen back with us!!!

Supper tonight is Saturday staple here in Maine.....beans, hotdogs and biscuits...I will make my grams drop ones. I can almost guarantee that about 90% of the homes in my neighborhood are having the same thing, lol.

I am going to go sit in front of the fireplace with a glass of wine (or 3) and pretend the heat is from the sunshine.......

When we were kids we would ask my Mom what was for dinner. Every Saturday she would answer "It's Saturday." Translation: Hot dogs, beans and Italian bread. I think of her every Monday when Kathy posts her red beans and rice menu.

I want a glass of wine too. I had chai tea but that did not hit the spot, I want , maybe I'll call Risa and ask her to pick up some brandy.

Ross just informed me that I didn't make it clear on Saturday's usual......the hotdogs must be red snappers..................which we thought everyone knew about until we were talking to my brothers neighbors and they had no clue what that meant........so in case you aren't aware, a red snapper is a hot dog in a red dyed natural casing that makes a snap when broke in two....that have undyed but you are not a true Mainah if you use those,

I am so MAD I could throw my laptop across the room. KYLE told the coach his back felt great......coach said great, get in there and pitch.....they rocked him. This is just so wrong in so many ways. I don't care about the stupid game, I'm concerned about my son's future. Kyle will do and say anything to get in the game, he'd been pressured all week. I threw a fit, Johnny & the coach told me, he'll be fine, we'll pull him if he starts hurting. I could tell from the first pitch he was in pain, but what do I know I'm just a MOM.......sorry for the rant. Hopefully someone learned a lesson from this.

Wendie, you're more than welcome to drive to NJ...it's cold but not snowing...well, we had flurries this afternoon and about an inch last night but its almost gone now.

I miss Gretchen as well.

Thats a nice Saturday ritual. Do you cook the red snappers and beans together? Do you put them on the biscuit? Between you and Nancy, now I want a hot dog.

I have been having some beer today with the guys. It doesn't look like our fireplace will be done for another few weeks, hopefully by then it will be warm. The shower cement board and brick curb is in. They are going to start tiling the floor soon.

I want a glass of wine too. I had chai tea but that did not hit the spot, I want , maybe I'll call Risa and ask her to pick up some brandy.

I eye ball everything.....

mixture of pork & beef
eggs
bread crumbs
sauteed garlic on onions so small DH doesn't see them
chopped fresh parsley
Romano cheese
ground pepper
tiny bit of salt
tiny pinch of oregano

If I think it looks to dry...a drop of water & I brown them before they go into the sauce....
