It was so easy!
1 onion, minced
2 carrots, minced
2 tbsp. butter
1/4 cup flour
2 cups chicken stock
1 cup cream
1/4 cup white wine (optional)
10 ounces of sharp cheddar
about 10 drops of hot sauce
salt and pepper to taste
saute the onion and the carrot in the butter until tender. Stir in the flour and cook for a minute or so. add the chicken stock and whisk the flour- veggie mix in. Cook until slightly thickened, about 5 minutes. Add the wine if you are using it, then lower the heat and stir in the cream, then the cheese. Cook just until the cheese has melted, then add the hot sauce, salt and pepper. Garnish with bacon and parsely and more hot sauce to taste. (all garnishes optional, but we all know everything is better with bacon.
