What's for Dinner Tonight? (recipe index in OP)

Tonight we had spinach lasagna and spaghetti marinara from a local Italian carry out place. The food there is phenomenal. The BEST garlic bread I have ever had comes from this place. :tongue: We shopped at Whole Foods tonight and I picked up a delicious feta cheese orzo salad that I'll do something with tomorrow and a taco dip. Possible snow storm here so you have to be prepared with junk food. :teeth:

So far the weather people are saying it will be mostly rain here (insert crossed fingers and eyes)

How long is this flu supposed to last?

That is the big question. She could be fine tomorrow; she could be still sick a week from today. She got sick last Sunday. I was hoping she would already be in the fever-free segment of the illness, so reading the high temp this evening was a setback. I've already canceled all activities through Monday, which means I miss the usual family linner tomorrow :sad1:, and I am just waiting to see how she feels to determine the rest of the week's activities. I am also hoping and praying that Liam and I are spared!

With all the talk of fried fish on here today, I made beer-battered cod (stole your idea, Ann!), fries, eggplant sticks from Mom, and salad. My house reeks, but Caili ate three pieces of fish, so that was good. Unfortunately, she also spiked yet another temp after being fever-free all day. :mad: That means another two days in the house. :mad: :mad: :mad: :mad:

The upside is that since I have had nothing else to do, I have made Caili a competition dress that looks like something an Olympic skater would wear. Not that she is an Olympic skater. Yes, I am so bored that gluing rhinestones the size of pinheads on to an otherwise $60 dress seems interesting. Once I get the camera that is compatible with my computer (another thing I have been doing...online shopping :scared1: Mostly browsing...mostly :rolleyes1 ) I will take a picture and post.

Not only can you girls cook but you sew, I am so jealous!
Glad, I gave you an idea that Cali enjoyed...I hope she is well soon!

My house reeked too...I told DH to light my Yankee candle. He said he couldn't smell it...well, I sure could.

I love Lamb and am drooling at my computer screen right now. Would you girls mind sharing your Mom's eggplant sticks recipe. Can these be prepped and frozen?

Laura, the spicy slaw was great, but laying in bed this morning I realized I left out the celery seed....:mad: duh, the main seasoning in slaw! Sometimes I shouldn't try to multi-task with the baby!!!

WDF- Tonight we are having a pork stir-fry. I bought a pork roast on sale, so I am going to cut some chops off it and use the rest in the stir fry.Stir-fry is going to have broccoli, mushrooms, bamboo shoots, water chestnuts, baby corn, red pepper, onion, and bok choy. Served with white rice and chinese noodles (DH loves them).

It's raining cats and dogs here. I sure hope it doesn't turn to snow. The rain is bad enough. I here alot of places are flooded.

I think it is just going to be me tonight. I may make eggplant parmesan. All this talk of eggplant is making me want some.

A couple friends that I used to work with came over and stayed yesterday. I didn't cook since it was a last minute visit...but we have Chinese and lots of Cosmos. Andrew slept over a friends and Tom said he felt like Hef and the The Girls Next Door this morning! :lmao:

I haven't planned anything for dinner but we have left over chinese so that is what it may be. :)

I just got an email from my neice. She has already been the the Sydney Opera House and posed with Australian Life Guards. Oh to be young again!

It's a shrimp & pasta dish made famous at our Jazz Festival here. I think I posted it on the old thread but it's really easy if you think you'd be interested I'll re-post it. It's very rich - butter, half & half, garlic......;)

Kyle didn't play yesterday, the field was a mess. He'll be pitching Friday night in Houston for the tournament!!:cheer2:

He's doing great. He's really enjoying his "freedom" and is truly enjoying his senior year. He leaves Wednesday for Houston and we leave Friday, can't wait!:cool1:

I am truly happy for him! What a great time in his life with school and baseball...wish him lots of luck for me...his cheerleaders in NJ will be routing for him! :cheer2:
 
Tonight I am making roasted cod on a bed of potatoes and onions and a spinach casserole and probably a couple of other vegetables. I miss my sous chef! I am actually going to have to chop all the garlic and slice the onions myself. :sad2:

John and I watched the WEIRDEST movie last night: Across the Universe. It was very :confused3 . Not recommended. I think we have Gone Baby Gone on tap for this evening.

Mrs. Disney Ron, the eggplant sticks are really yummy, but whenever I make them they come out funny, so I'll let Laura put her version up.

Here's the eggplant recipe, Ann. I leave the egg out of mine because Liam is allergic and substitute 2 tbsp oil. The coating comes out better if you use the egg though.

Mom's Famous Eggplant Sticks

1 eggplant, preferably long and thin (less seeds than the fat, round ones)
2 eggs
2 c water
flour
Italian seasoned breadcrumbs
vegetable oil for the pan

Peel and cut the eggplant into sticks about a 1/2 inch thick (I usually end up with 32).
Lightly beat the eggs in the water.
Lightly dredge the eggplant sticks first in flour (shake off excess), then in egg, then in breadcrumbs.
Place on a lightly oiled baking sheet.
Bake at 375 for 40 minutes, turning once halfway.

If you want you can salt them when they come out of the oven.

Mine usually do not take 40 minutes, so I usually turn them after 15 minutes and then bake for however much longer they take to get browned on the other side.

I'm not sure about freezing these, but you can prepare them in the morning, refrigerate and then bake them when you are ready.
