It was so easy!

1 onion, minced
2 carrots, minced
2 tbsp. butter
1/4 cup flour
2 cups chicken stock
1 cup cream
1/4 cup white wine (optional)
10 ounces of sharp cheddar
about 10 drops of hot sauce
salt and pepper to taste

saute the onion and the carrot in the butter until tender. Stir in the flour and cook for a minute or so. add the chicken stock and whisk the flour- veggie mix in. Cook until slightly thickened, about 5 minutes. Add the wine if you are using it, then lower the heat and stir in the cream, then the cheese. Cook just until the cheese has melted, then add the hot sauce, salt and pepper. Garnish with bacon and parsely and more hot sauce to taste. (all garnishes optional, but we all know everything is better with bacon. ;) )

This makes four servings.

I wish I had a hair appointment today.

Me too! Mine is at the point where I know it looks just as bad to other people as it does to me.

Good luck with the chili potluck tomorrow. I am very curious to hear how it works out. Does everyone make the same chili recipe, or does everyone make a small pot of their favorite and then they all get thrown together?

The flu is a nasty bug. Caili did spike a fever again after breakfast this morning. She woke up fine, ate breakfast, and then after I didn't hear her for a while, I discovered her sound asleep in her bed burning up with fever. After a three hour nap and a couple of Motrin, she was back to being okay.

The fever's return completely blew my plan to clean the house today. I was planning to clean really well to get whatever germs remain out, but I wasn't going to do it if she was still sick. I'm not cleaning all the floors twice! Instead, I worked on decorating one of her skating costumes.

Dinner plans also changed. While gluing the hundreds of little crystals to the costume, I lost track of time, and before I knew it, it was 5 and I had not started dinner, so we just had pasta and bread.

We are all making our own version of chili and will thrown them together. I hope it's edible.

Well I had a can of Trader Joes Organic Vegetarian Chili, New York Style Everything Bagel Crisps and a little bit of my greek salad. I'm at work.:surfweb:

We're having Philly Cheesesteak. I make them with Steak Umms. DF goes nuts over them.

We had Panera tonight. So good! I had the creamy tomato soup, mediterranean veggie sandwich and the baguette. So that brings me to a question. Does anyone have a good creamy tomato soup recipe? I think I've only ever had Campbell's and this just blew me away!!

Tonight we had grilled cheese sandwiches, split pea soup and sweet tea. I jazzed up the grilled cheese by putting some jalapeño pieces on the cheese before I put on the 2nd slice of bread.

One of my favorite shows is coming on the Food Network right now - Diners, Drive-Ins and Dives. Anybody else watch? I like it because Guy loves to eat!

I love that show! NJ diners is on now...I've only been to 1...The White Manna...its a repeat so I have seen the entire show already but I would love to try them all especially the last one! :thumbsup2

Dinner tonight is going to be McDonald's Fillet-O-Fish:cheer2: I love them but I am too cheap to pay full price, they are on sale so I will pick up a bunch on the way home from my Aunts. One for me and the rest for Buddy.

I love Mickey D's Filet-O-Fish! I didn't know they were on sale. I may have to get one on Saturday.

I had a change of plans. Didnt feel like cooking for myself, so I ate an Asiago Bagel.

Hey ya'll!

I've been catching up and love all the Valentine stories. I knew what I was in for on Monday when we were flying back home and Rick was telling me plans for the week. Thursday we could go to the coast and cruise the casino and eat at the steakhouse....yeah, right. My response was "doubt it, it'll be packed." Rick's- "Why? What's Thursday?":sad2: I didn't even get to sleep in.

Vail was nice. Driving Friday was a nightmare- they had just reopened the interstate cause of the snow. But when you move away from snow you forget how gorgeous it can be. The weekend was beautiful weather.

Glynis- I looked for fry sauce and couldn't find any! I may have to get you to send me some.

I had a wonderful lamb ravioli dish that I wish I'd gotten the recipe for and we found an Irish pub down the street from our rental that we had to go to twice- corned beef and cabbage and steak and kidney pie. Yummmmm.

Harrah's gave away Paula Deen's cookbook the other day and I finally got it. I can't wait to start trying it out.

So, after all that rambling....tonight was fish sticks and cheese bread. I'm feeling poopy.

Miss ya'll!pirate:

My Pooh is feeling MUCH better. We are probably going to go out to eat today somewhere. Don't know where yet.

WFD at your house?

DH & I have alot of errands to run today for our trip. We have to get everything done over the weekend because once again he will be working double shifts Monday and Tuesday.

Depending on how we make out with time. WFD- my planned menu is beer battered cod, and spicy slaw. I picked up my horseradish yesterday, I have been drooling over that spicy slaw since the picture was posted.

Hi All!

Tonight we are going to a neighbors house for dinner. I am bringing dessert, warm winter lemon cake, I think. Kady was also invited and she asked that I make her some chocolate pumpkin cupcakes to bring as well.

Lucas- They are 2 for $3 in my area. Warning!!!!! They shrunk! I bought six and Buddy was still hungry after he ate four. I think he would have eaten the six if I let him :scared:

If you like fish sandwiches Red Robin has a very good one. When we eat out on Friday during lent I always get that, it is yummy!

Lori - It's good to hear from you ! I miss you!

I hope all of our sick friends are getting better quickly.

Buddy had the race on Thursday and yesterday. I cannot help but think of Sheryl and Bob there this weekend! OMG there wee so many people and those races were not the biggies! He is going to put today's on later so I will get to see what those two are in the middle of. I am a little jealous, we had been talking about going this year but we could not justify the expense. It is going to be a good one because it is the 50th running.

Shrunk?! What the heck!?

Darn, we don't have Red Robin down here. Wendy's has a fish sandwich but for some reason I've been scared to try one.

My next favorite, although it is also smaller than I remember (could it be that I am just bigger???????) is Friendly's Fishamajig. I love those old sandwiches that I enjoyed as a kid!

Lori - Good to hear from you. I'd love to see Vail one day, got any pics?

Cheese plate. I took the cheese plate photo right after I assembled it, so the cheeses are still pretty cold. By the time we ate it, the epoisses was oozing all over the plate! Yum.

Not sure wfd tonight other than the cocktail I am test driving prior to dinner! It's a pear-apple concoction. Last night I sliced a pear on my mandoline and coated them with cinnamon, ginger, and sugar. Then I baked them until crisp. That's the garnish. I'll let you know how it tastes!
