Shovan - I know it's late, but did you think of pan-frying the fish instead of deep-frying? That usually helps eliminate most of the mess, & it's not quite so greasy. Southern Living magazine had a good article in last month's issue on alternative "frying" methods for a lot of classic southern dishes like catfish & chicken-fried steak. I haven't tried any of the recipes yet, but they sounded really good.

I missed your post but that was okay because pan-frying has been my go-to method lately for frying! I try to use a little bit of olive oil or canola (maybe just a pat of butter;). Thanks for posting the recipes!

I hate frying too because of how my house smells after it, but it tastes SO good and my kids love it, so I fried fish again tonight...plain for them, a little spicy for me for my fish tacos. Here's a pic:

IAs you can see from above, I had fish tacos tonight. I used Janice's creamy chipotle sauce (YUM) but I didn't have yogurt, so I substituted sour cream. I also had the spicy slaw Beck posted. The picture was really blurry, so I didn't post it, but the slaw was great.

Laura, That looks delicious!!! I pan-fried mine outside on my side-burner of my grill! Worked quick & didn't smell up the house! I marinated the fish as you had mentioned, then battered it with cornmeal & seasoning like cajunmommy posted.



My Aunt had a terrible day. I was with her for several hours and got her to eat something, she is positive "they" are trying to poison her. "They" are all pickpockets and she was terrified. Gail and Mike went this evening. My other sister works there and was able to get her some ativan to help. She tossed my cousin out today. She takes it all so personally and my poor aunt just does not know half of what she is saying. Please say a prayer that the Dr can find something to ease this. Apparently at this facility she cannot have an antipsychotic drug and I guess this helped her in the hospital. The Dr had given her Haldall (sp) and she was more herself.

Nancy, I'm so sorry! We went through this with my grandmother. It would just break my poor Aunt's heart, for some reason she would direct most of the anger & fear at her. It was so hard on everyone.:hug:

He actually hates Ropa Vieja!! I have a couple dishes he likes, but he is more a fan of the cuban-type casseroles. Things with rice, and a meat of some sort marinated. I have mastered Lentil soup, and 3-4 other things. He makes me a dish called Mangu.... i could make plantains but we are *trying* to eat healthy around here.

His Aunties make a couple of stews but it isn't anything that is written down.

Besides, he really isn't too picky. He is just happy I can cook since most of his friends live off take out. Apparently he is envied by his buddies since he gets home cooked food on a regular basis. Ha ha ha..... The agreement we have is I cook it and he cleans it.

What's Mangu? Is your DH cuban? If so, I would LOVE to have any home-style authentic Cuban recipes!!!!

WFD: I am actually cooking for the first time since Monday...ugh..i hate weeks like this...
Tonight will be chicken parm using meat from our local butcher / fish shop ( LOVE THEM!) and tons of our own herbs..i will do a sald and garlic bread with it too...I'm psyched because i already have a ton of the ingrediants like fresh mozz , parm breadcrumbs etc..all i need is some more garlic and chicken! easy!!

I am so glad everyone was talking about fish tacos! I am sold they are yummy! Even more amazing was that I had everything I needed in the house to fix them. I fixed a Mango-Artichoke Salsa, a lightly seasoned cabbage-onion slaw, pan-fried the fish outside on the burner of my gas grill. I also warmed the tortillas on the grill. I did cheat on the chipotle sauce, I have a huge bottle of a really good Spicy Chipotle Sauce that I bought at World Market. Sorry the pic is not so good, it was dark by the time I got it all done.

Oh I had another successful drink concoction! Grapefruit Mangorita's! Remember I still have a bazillion grapefruits that I trying to use up. I found a recipe for a Mango margarita that called for orange juice, I just substited the grapefruit juice. Yummy! I did rim the edge with salt, but would leave that off or do sugar next time.

Grapefruit Mangorita

Ingredients:
- 2 oz Anejo or Reposado Tequila
- 3/4 oz Cointreau
- 1 oz Fresh Mango Nectar- about ½ ripe mango pureed
- 3/4 oz Fresh Grapefruit Juice
- 3/4 oz Fresh Lime Juice

Combine ingredients in a shaker with crushed ice. Strain into a chilled glass. Garnish with a mango slice.

It ended with him indeed getting his first no-hitter of his career. The local newspaper interviewed him after the game and there should be an article in the sports section tomorrow!!!!! We beat a team that had 12 wins and only 1 loss!!:goodvibes

I didn't follow the exact recipe for the mango-avocado salsa, just mango, avocado, jalapeno, cilantro & a pinch of salt.

I told my Mom I wanted to borrow that book next, but then she gave it to my SIL! I'm reading The Other Boleyn right now, since I couldn't drag DH to the movie!

Happy Birthday!

Our baseball game tonight has been cancelled due to rain, so my SIL is cooking. I'm actually baking and doing cupcakes for my brother's 40th birthday on Sunday (we'll celebrate with the team at the baseball tournament) and peanut butter balls for the team for tomorrow's games, as they are a quick source of protein and the team loves them.

Here's a casserole recipe. Nothing fancy, but easy and quick:

Doritos Casserole

1 lb. lean ground beef
1 small onion, chopped
1 can cream of mushroom soup
1 (4oz.) can green chilies, chopped
1 soup can evaporated milk
1 small bag of Doritos
8 slices American cheese

Brown meat and onions in skillet until meat is cooked, drain. Add mushroom soup, milk and chilies; mix well. In a greased casserole, layer Doritos and skillet mixture. Lay slices of cheese on top. Put in 325 degree onion until cheese melts and mixture bubbles.

But y'all know what I just found in my cabinet, a great big ole Mexican Platter with chili peppers on it!!!!! :mad: Now that would have looked cool!

And a squirrel has gotten into my herb pots (up off the ground on plant stands) and pulled up some of my herbs!!! :mad: :mad:

We might be having squirrel gumbo for dinner tonight!!! ;) :laughing:

Congrats to Kyle! What a great picture and article!

Well, we had some nasty weather roll through here last night. A tornado hit about 10-15min from my house, in a neighborhood that my sis lived in about a year ago. I was up until after midnight watching the radar--not good cuz DH is out of town. Luckily, we just got a lot of rain, lightening and thunder. Now we're just flooding everywhere.

WFD tonight--we were supposed to go out for Mom's 60th bday but she's sick. But since DD was really hoping to go out, we'll head out to our fave pizza joint and eat there!
