What’s for dinner?

Forgot to add in my post, that of course...chopped cucumber, orange bell pepper..grabbed some Greek oregano and basil from my herb garden...chopped that up. Should so goooo-ood!
Sounds great. I have a cucumber, tomato, onion & feta cheese salad on the menu for tomorrow, but that now sounds underwhelming compared to your salad.
 
Another round of salad tonight. This time taco salad. Using my veggies from last night and making taco meat, Cuban black beans...throw together for a salad or tacos
 
Giving DGD a choice for tonight’s dinner: either beef, spinach, and silken tofu soup or short rib tacos. Really need to clean out the entire fridge, Of course the longer it takes for her to get home from the beauty parlor the more apt it is for me to make whatever’s easiest, LOL.
 
Panko-crusted pork chops with apple sauce, a packaged noodle side dish, broccoli and crescent rolls. DS hates pork chops but DH loves them so we seldom have them; it's a rare inconvenience to the one and a nice treat for the other. :goodvibes

There are so many things to do with panko crumbs and you hit on one of my favorites. Hope in time your DS sees the beauty🙂. ’course Ive been waiting almost 15 years for DGD to get past her lack of interest in cheese, sauces, lamb, and food shapes but but there is still time......

Mine could have been better last night. I should have pan-fried them but I rarely do that because I don’t like the lingering smell of hot oil. I oven-baked them quickly instead and didn’t get quite the texture or toasted flavour out of the panko as would have been ideal.
 
I don't go to the store often but did last night. So I have asparagus and I grabbed a couple Ribeye out of the freezer. Also grabbed a potato. Need to get the propane tank filled and I'll be having Ribeye, potatoes, and asparagus on the grill tonight and tomorrow night (Ribeyes packaged 2 in a package.)

Hmm, I suppose, but as my beef still comes from my ex's dad, me eating Ribeye is pretty common. The weekend will be smoking a chuck roast on Saturday, maybe ribs on Sunday, and the kids want fajitas on Monday which reminds me, these 2 Ribeyes are my last so I'll need to go shopping in the ex's freezer before Monday :D

The only thing that we couldn't update when we moved into our current, otherwise perfect home, was the hood fan. We're in a condo with no exterior venting and I haven't seared a decent steak in 6 years. :(
 
Well it was time to wash the walls anyway....LOL.

Made fried Japanese chicken using chicken thighs in two styles. One boneless with skin and the other skinless and boneless. So far, the skinless version is our favorite but still need to decide what coating we like best.
Made some quick pickled cucumbers to go with it as well as an Asian style cold noodle dish. DGD will finish off the Rocky Road ice cream tonight.
 
Didn’t eat dinner. Hubby had leftovers from salad week.
 
Trying to kick off Memorial weekend. Gonna BBQ some fancy chicken sausages...a bacon ranch kinda salad and some baked beans. Making an angel food cake, as strawberries are in full season here in So Cal and they look great this year.
