Looking for suggestions for breakfast / brunch on a Monday at Downtown Disney.

If you're taking a break from the Disneyland parks that day and want sit down service, Naples Ristorante provides an Italian spin on breakfast, including banana french toast. If you want a more traditional breakfast, try reserving Storytellers Cafe at Disney's Grand Californian Hotel. They have lots of choices on their buffet at breakfast, including those famous Mickey waffles!

Right, or does the OP mean Disney Springs. I mean, I know people who still say "MGM" so....
