What’s for dinner?

Carrot socca cakes (sort of like potato pancakes, but with carrot instead of potato; the "socca" part has to do with the use of chickpea flour) with green beans almandine and olive relish. As usual, I didn't come up with these fancy ideas, I just cooked it.
 

Friday night, we pretended that this Memorial Day weekend’s weather is not a bust worth noting.
One more day for Japanese fried chicken recipe try outs.
The overall winner is : boneless, skinless chicken coated with cornstarch instead of flour.
Might not be traditional but great crunch in a short time.

DGD wandered the streets of NYC with her friends instead of attending her remote graduation ceremony, detoured to Zabar’s and bought some Asian slaw back home. Went great with the chicken.

We ate a lot of meat over the last few days so Saturday night, it was leftover silken tofu, spinach and noodle soup with more tofu, spinach, corn, and roasted asparagus added. Too lazy to add more noodles but DGD didn’t seem to mind.

I love love love chickpea flour! Bought dried chick peas to run through the food processor and mill some flour but havent got around to using it yet. There will be falafel in our future and maybe Spanish style shrimp too.
 
We spent the day yesterday with DS. Between the three of us, we ordered fried pickles, calamari, Ahi Tuna, Bada Bing shrimp (commonly known as bang bang shrimp) & DS ordered a grouper sandwich w/fries. As usual, our eyes were bigger than our stomachs. DH & I had the leftover Ahi Tuna & Bada Bing shrimp for dinner. DS had them box up his entire entree. I'm assuming he had that for dinner.

Dinner tonight is bbq sandwiches, seasoned fries & leftover salad.

The plan was to celebrate various life occasions by buying premade picnic dishes from Zabar’s. Unfortunately, everyone else had the same idea and most of the goods were gone by the time we got there. Oh well on to plan B. Did buy some fresh baguettes there so that was useful.

Found a pound of sliced Chinese roast pork in the freezer, and used it to make a variation on banh mi sandwiches with avocado added. Made some pink lemonade spritzers and called it a meal. We had un-glazed pound cake with strawberries and whipped cream for dessert.

Dry brined a small pork shoulder last night and stuck it in the oven for a low and slow Asian pork roast called bo ssam this morning. Not sure if it’ll be ready for dinner tonight but if it isn’t there is always freezer food available.
 
I have a bunch of leftover chicken from BBQ central the past few days. Making stir fry out of it with a bunch of fresh veggies, including the snap peas from my garden. Definitely adding water chestnuts, too...I love that crunchy old fashioned Chinese food taste in my stir fry. Edamame as a starter, brown rice as side dish.
