What’s for dinner?

For tonight, the meal kit sent me lemon zucchini "noodles" — basically, just thinly sliced zucchini lightly steamed with salt and pepper. No real noodles involved. It had a nice cashew-based lemon sauce (that's where the lemon comes in) and crisped artichokes. Topped with hemp seeds, pumpkin seeds, and a pinch of chili powder. The multitude of toppings made all that zucchini-slicing worth it.

Lest it sound like I only cook fancy, last night I had cold leftover pizza and a fruit salad.
 

The bo ssam was amazing but past tasting neither of us was really in the mood for meat today. As such I divided it in half and put one part in the fridge and the remainder in the freezer. Had ratatouille on rice for DGD, and ratatouille with scrambled eggs and cheese for me. Peaches are in season so we had some for dessert.

We're also having breakfast for dinner. DH noticed our milk was going bad & decided to make biscuits with sausage gravy to try to use as much as possible. He's really good at making sausage gravy, so it sounds good to me. I'm using the rest of the milk to make scrambled eggs.

:goodvibes You had me at limeade but lost me at sweet tea. I really do not know how y'all choke that cloying syrup down. On the other hand, American unsweetened ice tea is an elixer of the gods and something we never see here.

Tonight we finally had the Asian pork roast (bo ssam) from the fridge with a ginger scallion sauce, some chile oil, white rice, and slices of cucumbers and radishes, with butter lettuce leaves to use as cups.
Good meal and worth the wait.
DGD started out having issues with the skin but when I convinced her it was soft and not hard she ate it.
It was easy to reheat and I think I can get it on sale again this week and thus will remake it for later in the summer. Maybe I’ll try coating it with a sweet soy sauce at the end as it might just be the ticket.

Between you and Steve Raichlen, as inspiration I think I’m going to take some of the smoked salmon and make a corn chowder with it. It would be a nice light meal perfect for the hot days to come8-). The fact that corn is in season makes it a bonus.

Okay, here's my pathetic attempt at a review:

I used this https://thesouthernladycooks.com/on...MTjULygkabw6CWxpt4BlUWyzesRzLKdVXqLV4BuNJstBk recipe. Since I'd promised to share what we thought, we fried one patty following the recipe exactly. It was good, but a little bland for us. (My extended family would probably love them as is.) I added cayenne pepper to the next one. It was a little better, but we still thought it needed more flavor. For the rest of the batch, I added cayenne, paprika, garlic, more pepper & a little more salt. That was the perfect combination for us. They tasted a lot like blooming onions, which inspired me to make a sauce similar to blooming onion sauce to dip them in. (I didn't have ingredients for any of the sauce recipes I found in a quick search, so I winged it with what I had.) The sauce took them from very good to excellent. I'll be adding the patties w/sauce to my appetizer list as well.

Disclaimer: As you can see, we like a lot of flavor. We aren't the type that likes heat in everything, but think some dishes are better with it. This was one of those dishes. I'd still recommend trying it without the cayenne & garlic, if you don't care for those. At the very least, I'd add the paprika to the original recipe.

Thanks for reposting that! I vaguely remember seeing but not closely reading it the first time, so I apologize for overlooking it before. They do look and sound tasty, and they're about what I thought they might be. I feel like I've had something similar at maybe Indian restaurants, only with scallions. They also sound like a good way to use up onions that aren't moving!

No problem. I'm happy to post it again. Since you like Indian food, I'm guessing you like a lot of flavor. If you try it, I recommend you add everything I did, including the sauce. Let me know what you think, if you try it.
 
It's been raining here most of the day. DH decided he wants what my Mom called goulash w/ cornbread.
 
I've got a number of projects on the go here at home and it's hotter than hell again tonight. We picked up bento boxes from a fast-food teppanyaki place.
 
Dinner was at Catal in Downtown Disney. Hubby and I shared the ahi avocado toast and a wedge salad. Delicious!
