What’s for Dinner Tonight?

Okay, been recipe reading in preparation of our holiday WDW trip where I’m doing a lot of make ahead small child friendly dishes. Which requires my thinking about what catches little ones attention besides chicken nuggets. Thought of making stuffed peppers which goodness knows needs no recipe but hey maybe some ingredient I never used will spark my imagination. And yes one did (fennel) but this review interested me more in a tickle the funny bone way.

So I’m sharing it and hope it makes you giggle a bit:

One of our favorites from NYT. Did I alter the recipe slightly? Yes. I'm not a robot. If you want robot recipes got to NYT Robot. Upped the parm. Upped the red pepper. Upped the garlic. Fennel held steady, even though we don't always like fennel. Keep the fennel! Made with cauliflower rice instead of reg rice. Get off my back, I'm reducing carbs so I can drink more wine. Okay fine, more whisky. Who are you my mother? If you are, I love you and I'm sorry about the thing. Delicious!

Having made the first batch of ratatouille, it’s now easier to do the second as the aide has a better idea of what to do next. Liking the method of oven roasting each ingredient and then mixing together for a final roast. Not the way I was originally taught but it allows less constant stirring which means I can focus on something else.

Also prepped bell peppers for stuffing; meat is still defrosting.

Eating leftovers tonight: black bean soup and fried sweet plantains which were freshly made.
 
I was seduced at the farmers’ market by a basket of tomatoes and now the piper must be paid, lol.

Easiest answer is to make a pot of tomato soup so that’s what I’ll do. Started peeling the garlic this morn so guess my aide will know what she’s in for the minute the door is open.
 
Peeled, seeded and chopped all the tomatoes and then made one of the fastest soups I know : soupe au pistou which is a French version of veggie soup with a tomato, basil and garlic pesto. Think it’ll go well with the leftover fish. Still a lot tomatoes to cook but that will hold until tomorrow.
