What’s for Dinner Tonight?

There was a Red Lobster near our hotel last night, so we decided to give it a try for the first time in 20+ years. The cheddar biscuits were as good as we remembered. DH had fish & chips. I had lobster linguini. We're good for another 20+ years. :laughing:

The Tar Heels are finally back on the gridiron :cheer2:, so we're having takeout in the room. We ordered Goat cheese on fresh greens with balsamic glaze & wings. We got mozzarella wedges & wings. :sad2:

I'll be glad to get home to have some homemade meals.

I was a waitress at Red Lobster during college. I used to eat a roll and the Caesar salad on all my breaks. I have not eaten there since I worked there, but every once in a while I want a cheddar biscuit!

When RL finally opened in NYC, the man and I took one of our long walks across the 59th St. Bridge all the way down to the JC Penney on Queens Blvd; hard work. We finally arrived at our food destination somewhat surprised by the queuing…kind of reminiscent of Via Napoli, lol. I’ll just say…I shudda oughta gotten the fish and chips 🤣 👍🏾

Thank you! We are heading to watch my son’s first football game of the season. (Go Monarchs!). It’s a long flight to SC from WA but I can’t wait to see him. He only gets a few weeks off a year to come home from football. So it’s worth it to get a quick hug before and after the game. We turn around and come home early Sunday. So it’s a fast trip!

I thought all Red Lobsters were closed in a bankruptcy. I might be part of their problems, because I've never actually been to Red Lobster.

I know I'm making something with the little chicken breast tenderloins tonight, but I can't recall what it is for the life of me. It's a new recipe I stumbled across when I was meal planning earlier in the week and now all traces of the details have completely evaporated from my memory bank. I've still got some nice veg left to pick from after visiting the farm stand last weekend, which will be the part of the meal I'll probably enjoy most anyways.

If the weather ever cools down here I want to try a recipe I found for turkey eggplant lasagna that looks fantastic. I used to love lasagna, but haven't been able to find decent noodles in the store in forever. No way I'm putting in the effort and cleaning up the mess when I wind up hating the noodles, but this idea does sound yummy. A friend of mine told me they just read about using ramen noodles to make lasagna, IDK how that would turn out.

Have you tried making lasagna with fresh pasta sheets? I get them from a local pasta shop but have seen them in the grocery store with the fresh refrigerated pasta. I find it makes it super easy because you don’t have to precook the pasta and I can use one sheet per layer.

I would love to hear how it turns out with eggplant!

I've never tried that. Don't know of any local shops with fresh pasta anymore. Used to get the best mushroom ravioli from one -- and they used to visit lots of the local farmer's markets in the area which made it so convenient. Haven't seen any sign of them since Covid, so my guess is they're gone.

We've had some awesome eggplant this summer from our neighbor's garden, but I think they've stopped producing for the season. :sad:
