Well, I survived my first day with Hunter. He's so adorable. I took some pics with my cellphone camera. Will try to upload them sometime in the next couple days.

Meeting my mom and brother at 5 for dinner at Red Lobster. I am starving and can't WAIT for that all you can eat shrimp!

Well, I am sooo stuffed. OMG! I absolutely love shrimp scampi!
My mom got me an Elf Tigger, the cutest YC candle holder, a cranberry chutney candle, a top, and a cute bracelet. Oh, and Godiva chocolates. My brother got me a Target GC. And, DH is taking me to see Joshypoo in Win A Date With Tad Hamilton! Hopefully on Friday when they show a sneak peak! My SIL is going to babysit for us!

[Tiger Lily 03]

It's what we had tonight. We served a side of macaroni salad with it for the piranha. (2 DSs) They devoured it.

Chicken stuff from Tiger Lily 03

Serves 6-8

6 boneless chicken breasts cut into bite size pieces
2-3 eggs beaten
Combine:
2 c. breadcrumbs
1 tsp. salt
½ tsp. garlic powder
1 Tbl. chopped parsley
Vegetable oil
1 (8 oz.) pkg. of fresh mushrooms
6 slices Muenster cheese
1 c .chicken broth

Marinate chicken in eggs for 2 hours in refrigerator. Combine breadcrumbs, salt, parsley, and garlic powder in a plastic bag. Shake chicken in mixture and brown in oil. Drain and place chicken in 13 x 9 x 2 in pan. Cover with a layer of mushrooms, layer of cheese and top with chicken broth. Bake covered in 350 degree oven for approx 45 minutes. This can be made up ahead of time, but DO NOT pour chicken broth on until just before baking.

We used roast pan today. We didn’t use the 13 x 9 pan. It worked just fine.



Tina: I am participating in the
Disney 1/2 marathon. It is something that some of the folks on the WISH boards are going to try to walk/run and is being held January 9, 2005. Yesterday was the one for this year. There is a marathon and 1/2 on Sunday and a 5k on Saturday. I just linked the 1/2. The rest is within the site I linked.

Went to see the cute doc, momentarily. Then he said, nurse, take her stitches out, see you in a month ...what's up with that? Only a moment to drool!!

I did get a lovely new boot!!! If I were to have a pair, the price would have been a whopping $250 a pair. This is by far, the most expensive and th ugliest shoe I have ever owned!!!!

Disney update.....tentative dates.... depending on my recovery....I will be flying into Orlando March 7th and my sister and Disney hater will pick me up and take me to her house for a 10 day visit. My mom also lives close by, so I will be visiting them both. Then, on the 17th....I will get the bestest birthday gift ever.....meeting Greg at the Orlando airport and checking in to Pop Century!!!! My life long dream....being at Disney on my birthday!!!!! Plan is to check out on Monday as there are no flights on Sunday...oh darn...and the first available out isn't until 5 pm Sounds just dreadful. Of course all of this is contingent on my being able to walk.

Well, today, just for kicks, I decided to forgo my crutches!!! Yes, ladies and gentlemen, I walked into my dr.'s appointment. I was soooooo happy to have been able to do that! So, I just need to keep this type of progress up so I can get our plane tickets!!! I am just hoping the crowds are not too huge. We are really off season kind of people. Good news is, that my mom who is a Florida resident will be putting the room in her name and checking in for us!!!

OK, sorry this is all about me, but I am soooooooooo happy right now. I promise to take some time tomorrow to do a proper ketchup. I will be taking nap requests as well...so get your request in early, and I will do my best to accomodate. Although the stiches are out, I am still to take it easy this week.....no therapy until next month!!! Just some little exercises to do frequently.

Liz, congratulations. Now don't push too fast. Just do it nice and steady.

1 lb. boneless, skinless chicken breast
1 can cream of chicken or celery soup
1 cup of mayo
2 t. lemon juice
curry powder to taste

1 large package of brocolli florets
4 cups shredded cheddar or cojack cheese

Steamed white rice

Sautee chicken until completely cooked. Mix soup, mayo and lemon juice. Add curry to taste. (A little curry goes a long way for me, but others really like it!!! Use your judgement).

In a 9x9 squaure pan, pour in brocolli....it can be frozen....if it is fresh, you will want to steam until just about done...cut up chicken in bite size pieces and place over brocolli. Pour soup mixture over chicken. Top with shredded cheese (finely shredded works best) and bake in a 350 oven for 30 minutes. Serve over steamed rice. Easy, yummy and something differant!!
