We are leaving next Sunday and are staying 6 nights and have got a 7 day hopper with meals. Do the meals start when we arrive or the next day? THANKS!

If you are staying 6 nights, you will have 6 Table Service, 6 Counter Service and 6 snacks per person in the room. You can start using the meals as soon as you check in and they will expire on midnight of the day you check out.

OK, so one does not have to use the 1 sit down, 1 counter, 1 snack every day, but can "save" them...at least until MD on check out?

Yes, you can use multiple credits on one day if you wish - in fact you have to if you want to eat at any of the Signature restaurants as they take 2 table service credits. So you can use as many credits as you want on one day and no credits another day if you want. You just will lose any remaining credits on midnight of checkout day.
