The What's For Dinner Thread - October'11 (recipe index in OP)

Don't feel bad, Fran's tummy wasn't up to Pork Tenderloin so she had soup and a turkey sandwich (from all that meat I cooked back in October, I thawed a few packets yesterday), Arline and I had Buitoni Ravioli. I can't help but keep packaged frozen dinners in the freezer because sometimes Fran just tires me out so much I can't make dinner, so just boiling, stir frying or baking a frozen meal can be appealing. I buy those easy meals when the are on sale for like $5.99 and keep them on hand for times like this when she throws a curve ball at me.

Hopefully tomorrow she will be up to the tenderloin (since I already made the spice rub) and I'll need to come up with a Friday dinner. I'm thinking pounded chicken Florentine (deconstructed for Fran). Saturday we have a wonderful night out and I'm making a Strata for NYE day breakfast that we will set in the oven to bake up when we come home after our NYE celebration. We're at the Grand Californian Villas NYE and I love it that we have an oven so I can set it to delay bake and have breakfast ready for us in the morning!

Hope Fran is feeling better today....

David and I both were stuffy yesterday, I am thinking from all the planes rides and being around so many different places and people. It kept us from wanting to do much, we just vegged yesterday.

This morning I put chicken out to thaw and I am thinking of Pot Pie, comfort food for us...

NYE sounds like fun.... I think we are staying home. We always just stay here and pop some corn and watch TV. Too many people on the roads acting crazy for us.
 
Dinner tonight is out :yay::yay: Buddy got Jeff Dunham tix for Christmas so we are joining our neighbors for dinner and then to the show!

Buddy's Mom is in the hospital. I have shared that his sister is in charge of her care as well as all of her life. Cathy is one nasty woman and let's just say does nto play well with others.............that means us as well as everyone else in the entire World. No exageration. Anyway, she refused to return calls from the Dr's and when his mom needed surgical intervention for a massive wound it went to court. We found out this way. :sad2: The judge placed her person in the hands of the attorney who drew her will and papers up but asked that we request conservator-ship of all of her affairs. He will decide what happens next. Cathy never showed up for the hearing. I will say that the SW for the hospital said she was shocked that teh attorney seemed to be representing Cathy. His Mom told us that the last time she talked to him about placing Buddy in charge of her proxy of healthcare he talked her out of it. :sad2: We explained to the probate judge that he has stepped in three times but each time his Mom changed her mind and each time it did not go well with his sister.

Attorney is now having the pleasure of trying to get Florence Nightingale to return his calls. Appears that all of her stories of talking to Dr's, visiting her Mom, well...............let's say he was bamboozled and Bud's Mom is paying the price.

We are throwing the shower because she's not local and her husband has some family nearby and we are good halfway point to come see them and attend a shower. I'm trying to help out as much as I can because my mother is really stressed out these days. (shower, my grandmother lives next door, my other stepsister just gave birth and is very sick, etc.)

Glad the housebuilding went well. It sounds fantastic! I have a friend that goes to the Phillipines and builds houses, schools and digs wells there. Whenever he goes, he does a fundraiser. At last count, I have donated 4 goats. I believe he named one of them after me. :mad:

Jen - Hope the shopping went well. I've been avoiding the malls. I'm still thinking about pinterest. Not sure if I can cope with another addiction. The Dis is bad enough.
And I've never made noodles...I've seen them make the hand-drawn type and it just seems like too much hard work to me.! :laughing:
I'm not showing my DS that baked cream cheese spaghetti recipe. I already have enough trouble getting him to have a little pasta with his cheese!

Jen- I make a baked pasta that is something like the one you made. It has cream cheese and sour cream in it and I can tell you that my family loves it!!!!!!!!!!!!! It was a 5* recipe on allrecipes but after reading the reviews the recipe itself was horrible! The stars came when people tweaked it. Thank goodness I read the reviews before making any of the recipes on those sites :lmao:

We didn't know what we wanted for dinner, we decided to hold off on the burgers, so I turned to Pinterest and made the baked creamy spaghetti that someone else on the thread (Glynis???) has also made.

OH MY WORD. Sinfully delicious!

Nancy, ugh....I am sorry you are dealing with these family issues. What a mess. I hope everything works out ok.

I changed the menu last night (again!) :headache: We were in the mood for something light so I just made a salad. It is arugula, pomengranate seeds, gorgonzola dolce, apples, and spiced pecans in a honey-lemon vinaigrette:

WFD: we are going to my parents for dinner, so are Laura and the kids. I think my Mom is doing all of the cooking. She has a more "traditional" palate than me and I owe her a meal for the Thai dinner she suffered through earlier this week. She really dislikes Asian flavors and anything spicy, plus anything vegetarian! We are kind of opposites that way :rolleyes1

I think she is making bratwurst and potato pancakes, with sauerkraut and applesauce. I am bringing along some chicken sausage for me.

Crockpot Chicken Enchilada Soup

Crockpot Chicken Enchilada Soup
3 tablespoons butter
3 tablespoons flour
½ cup chicken broth
2 cups milk
1 can (15 ounce) black beans, rinsed and drained
1 can (14.5 ounce) Rotel diced tomatoes and jalapenos
1 package (10 ounce) frozen corn
½ cup onion, chopped
½ cup bell pepper, diced
1 can (10 ounce) Enchilada sauce
2 whole chicken breasts
1 cup shredded Monterrey Jack cheese (for topping)

Melt butter in a saucepan over medium-low heat. Stir in flour; keep stirring until smooth and bubbly. Remove from heat and add the chicken broth and ½ cup milk, a little at a time, stirring to keep smooth. Return to heat. Bring sauce to a gentle boil; cook, stirring constantly, until it thickens. In a large bowl, whisk together the enchilada sauce and chicken broth mixture . Gradually whisk in remaining milk until smooth. Set aside.

In a crockpot, combine drained beans, tomatoes, corn, onion, and bell pepper. Place the chicken breasts on top of the mixture. Pour sauce mixture over ingredients in cooker. Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours. When you are ready to serve, remove chicken and cut or shred into bite-sized pieces. Add chicken back into the soup, mix together.

Top with cheese and serve.



Almond Joy Brownie Bites

Almond Joy Brownie Bites
Brownie batter (homemade, from a boxed mix, whatever is your favorite.)
4 cups sweetened shredded coconut
14 oz can sweetened condensed milk
About 4 dozen almonds
Chocolate candy melts or almond bark

Preheat your oven according to brownie recipe directions and generously spray two mini muffin pans with nonstick spray. Fill cups about 1/2 full with brownie batter and bake according to directions. When brownies are done, place pans on a cooling rack and remove brownies once cooled completely.

In a medium bowl, combine coconut and sweetened condensed milk. With clean hands, roll coconut mixture into balls and press onto tops of brownie bites. Press an almond into the top of each. Place brownies in the freezer to harden for about 15 minutes.

Melt almond bark or candy melts according to directions. Remove brownies from freezer and dip the tops in the chocolate. Place dipped brownies on a wax paper lined baking sheet and refrigerate until chocolate is set.

Depending on what brownie recipe you use, you should get about 36-48 brownie bites.

Crockpot Tequila Lime Turkey Chili
1 slice sandwich bread, torn into pieces
2 Tbs milk
1 lb ground turkey
salt and pepper
2 Tbs vegetable oil
1 large onion, minced
1 bell pepper, diced
1 jalapeno, ribs and seeds remove, minced
2 Tbs chili powder
2 Tbs tomato paste
4 cloves garlic, minced
2 tsp ground cumin
2 tsp minced fresh oregano, or 1/2 tsp dried
1 15-oz can tomato sauce
1 14.5-oz can fire-roasted diced tomatoes
1 (15-oz) can pinto beans, drained and rinsed
1/4 cup tequila, plus more as needed
2 Tbs low-sodium soy sauce
1 Tbs honey
1 tsp minced chipotle en adobo
1 tsp grated lime zest
1 Tbs fresh lime juice, plus more for serving
1/4 cup minced fresh cilantro

For serving (optional):
fresh cilantro
Pepperjack cheese
diced avocado
tortilla chips

Mash the bread and milk into a paste in a large bowl using a fork. Mix in the ground turkey, 1/4 tsp salt, and 1/4 tsp pepper. (this keeps the turkey moist during the long cooking time)

Heat the oil in a large skillet over medium-high heat. add the onion, bell pepper, and jalapeno, and cook until they are softened, 5-7 minutes. Add the chili powder, tomato paste, garlic, cumin, and oregano and cook an additional 3-5 minutes.

Stir in the turkey and cook, breaking up any large pieces with a wooden spoon, until no longer pink, about 3-5 minutes. Stir in the tomato sauce, scraping up any browned bits. Transfer the mixture to the slow cooker.

To the slow cooker, add the diced tomatoes with their juices, beans, 3 tablespoons of the tequila, soy sauce, honey, and chipotles. Cover and cook on low until the turkey is tender, 4 to 6 hours.

Turn off the slow cooker and allow the chili to settle about 5 minutes. Use a large spoon to skim the fat off the surface. Break up any remaining large pieces of turkey with a spoon. Stir in the remaining tequila, lime zest, lime juice, and cilantro. Taste and season with additional salt, pepper, tequila, and lime juice as desired.



Itty Bitty Cinnamon Rolls

Itty Bitty Cinnamon Rolls
1-8oz tube crescent roll dough
2 Tablespoons butter
Cinnamon
Brown sugar

For the maple icing:
1 teaspoon maple syrup
1 Tablespoon milk
3/4 cup powdered sugar

Preheat oven according to crescent roll dough package directions. Layout half the dough (4 triangles) and pinch all the seams together. Flip over and pinch the seams on the back side together too. Using a rolling pin, smooth the seams and roll the dough into a square about 1/4″ thick.

Brush with half the butter, and sprinkle with as much cinnamon and brown sugar as you want. Roll into a log and cut into 8 pieces.

Place mini cinnamon rolls into a non-stick sprayed mini muffin tin. Repeat steps 1 and 2 with the other half of the crescent roll dough. Bake according to package directions.

While it bakes, whisk together maple syrup and milk in a bowl. Add in powdered sugar until desired consistency is reached. Drizzle over warm cinnamon rolls.



Spinach and Artichoke Mac and Cheese

Spinach and Artichoke Macaroni and Cheese
*12-16 ounces macaroni shaped pasta
1 Tbsp unsalted butter
1 Tbsp vegetable oil
1/4 cup onion, diced (I left out)
2 cloves garlic, crushed
1 tsp salt
1/2 tsp pepper
1/2 cup frozen spinach, excess moisture removed and chopped
1/2 cup frozen artichokes, thawed and chopped
2 Tbsp flour
1 1/2 cup milk
1/3 cup cream cheese
1 cup shredded Parmesan cheese
1 cup shredded Mozzarella cheese

*I used ditalini pasta but macaroni, penne, or even rigatoni would work. I eyeballed it and used a little less than a full 1 pound box.

Bring a pot of salted water to a boil and cook pasta to al dente, according to directions on box. Drain and set aside.

While the pasta is cooking, heat the oil and butter, in a stock pot or dutch oven over medium heat, until the butter is melted. Add the onion and cook until translucent, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Next, stir in the spinach and artichoke and season with salt and pepper. Cook for 1 minute, then sprinkle in the flour and cook, while stirring, for another minute. Add the cream cheese and stir until mostly melted. Slowly add the milk, stirring constantly. Bring to a simmer and cook until the milk starts to thicken, about 2-3 minutes, keep on stirring. Remove the pot from the heat and add the cheese in several increments, waiting until each increment is melted before adding the next. Finally, add the pasta.

If you wanted it to be more reminiscent of the dip, you could top the pasta with extra cheese and bake until the top is bubbly.



White Chocolate Lemon Truffles

White Chocolate Lemon Truffles
1 cup white chocolate (I used Ghiradelli chips)
5 Tbsp. unsalted butter (if you use salted, omit the salt)
3 Tbsp. heavy cream
Pinch salt
1 tsp. lemon extract
Powdered sugar, for dusting

Melt chocolate, butter and cream over a double boiler or in a microwave. Stir until smooth.

Stir in salt and extract. Allow to cool slightly before covering with plastic wrap. Refrigerate for 2 hours or until firm enough to handle.

With a melon baller or small spoon scoop out mixture and form into 1 inch balls. Toss with powdered sugar to coat.

Store covered in the fridge for up to one week. Freeze for longer storage.

Makes: 24

Butternut Squash Pasta Casserole
2 tablespoons olive oil
1 large yellow onion, thinly sliced (I skipped)
1 butternut squash (about 2 pounds), peeled, seeded and cut into 1-inch pieces
1 (15-ounce) can light coconut milk
Salt and pepper to taste
1 tablespoon chopped sage
¾ pound dried whole wheat penne (I didn't use whole wheat)
½ cup chopped toasted walnuts
½ cup bread crumbs (I used Panko)

Preheat oven to 350°F. Lightly oil a 9- x 13-inch casserole dish; set aside.

Heat oil in a medium pot over medium heat. Add onions and cook, stirring often, until softened, 5 to 7 minutes. Add squash, coconut milk, salt and pepper and bring to a boil. Cover, reduce heat to medium low and simmer until squash is tender, about 20 minutes. Stir in sage and simmer 1 minute more. (This part can be made ahead, up to 1 day in advance.)

Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook until tender but still firm, about 8 minutes. Rinse in cold water, drain well and transfer to a large bowl. Transfer squash mixture to bowl with penne. Add walnuts, salt and pepper and toss to combine. Transfer to prepared dish and top with bread crumbs. Bake until just golden brown and hot throughout, about 30 minutes.

Hi everyone,

We had a wonderful Christmas - really different - but still nice. I find that the older the kids get, the more I have to share. And even though I know I have to, sometimes I don't like it. :guilty: I am a person that doesn't do change real well and this Christmas was full of change. But at the end of the day we had a really nice time.

Please say a few prayers for me for the next 3 weeks or so. I feel a bit anxious with all that needs to be done. I know it will be just fine as long as I take one thing at a time but the overall scheme of things is really overwhelming. Thanks so much.

My mom really struggled this year with the sharing bit, too. Esp since there is a grandbaby involved now...

I have no idea what's for dinner, but I'm craving big, juicy hamburgers, so I'm going to turn to the lady in the chair next to me, and see if I can make her crave them to so that she'll make her yummy burgers. :lmao:

Well we are back home, built a small house for a very nice family, young couple with two kids. They were very thankful and the man helped with the building.



As far as Diet.... I need one so bad. I am hoping this recovery time does not impede that too much on my part.
There were about 50 people there and we just started hammering and putting together. It went so fast, it was hard to believe. They had 2 windows and a door. It was a single room about 16 x 14, but they had a box before... Can you believe it.

Anyway, their house cost $1200 to build.

The group my father belongs to build a house a week for a needy family. And they have enough money right now to build 6 more....

All of these people my father volunteers with is amazing and giving, one of the wives sews all the curtains for the family, and one family buys a broom and dustpan, another makes a beautiful cross and hangs in the room. They get food and pots and pans from another family.

One of the men makes a table and another family donates some chairs. It is just a sight to see, it really helped me understand the Christmas Spirit while I was there.

Little to no cooking going on here! Tonight we're having dinner out with some friends.

UncleR is outside mowing. After the moisture we've had lately, our "front yard" (the yard around the house) is too long for the pups. So, she's doing a little trim job.

Ellen- I wanted to add that I hate sharing too! I know I have to and I am glad that the kids have someone with whom they need to share but Buddy and I are not good at it

Buddy's Mom is going to be moved to a rehab today. I am not happy about the facility but it is the only one that will take her under the circumstances. Buddy is stressed over the whole thing. I spoke to the attorney this morning and he is fed up but I figure he needs to deal with this if he did talk Alice out of changing her health care proxy. I think he figured Bud wanted something from his mother like the rest of them but my DH has not even cashed in the bonds she gave us 20 years ago. He does not want a thing from her, not even bonds she started buying when he was a baby. I have no idea what his sister is going to do, she finally got a cell phone because the judge went nuts about that. I think she is crazy myself.

Some people are foul. (in regards to the sheets thing) I'm fine if it makes me a meanie when I say that, because GROSS!!! :lmao:

As for Buddy's mom...I think it's sad that the lawyer assumed the worst about Buddy when it is others who don't have the mother's best interests at heart. Just sad all around.
 
Linda- Buddy has been estranged from his Mom for many years so at first she only had Cathy. I have never done anything to his Mom but she was never accepting of me (widowed woman....bad!!!!!!!!!!!!!!!! kids ..................worse!!!!!!!!!!!!!!!) and was pretty nasty to Buddy so I stayed away. Bud's nephew did try to get us to support his having everything turned over to him but we would not do that.......he was after the house and any money she had. Bud did not want me going to his Mom's house alone after that little fiasco because it was very uncomfortable is his sister came by. Worse than it had been before and that was almost unbearable. I think that the attorney assumed that Buddy was like the nephew because he did offer to take this on along with Cathy but the attorney was not told that by the nephew and he never contacted us. He said he was told Buddy would not work with his sister.

Now we know that we have to at least ask for her power of attorney because his sister does not provide financial statements when they are needed and that is one of the issues that has occurred this time when looking for a facility that is capable of caring for her specific issues. The one she is going to is the only one that will accept her without all of the paperwork and the attorney said that judge will not find this enough of an emergency to revoke her POA over teh phone like he did with her health care proxy.

I know you said you're not thrilled about the rehab facility your MIL's going to. But, maybe they'll have a good SW on staff? I just hope that things begin to settle down soon. :hug:

My DM drives me crazy but she sure isn't wishy washy about her wishes for advanced healthcare and anything to do with her eventual death. I have a brother who would be like the nephew, out for money, and she has told us to not let him know ANYTHING about her health or finances. We have been estranged from him for years.

She has taken care of almost every detail including making sure I have enough to take care of the bills for at least a year until I decide whether I want to sell the house or move. She has provided for my other brother and my sister. And she has already paid for her plot and burial, we just have to get a casket.

She's also decided she wants her burial plot to be at a differant cemetary than the one she originally chose. She likes this new one better. Although I kind of like the first plot better, it was right next to a crooked tree, easier to find the old bat. ;) :rotfl:

I can't wait for 4:00 to be here. I haven't seen my boys in 2 days :eek: :rolleyes1. So as soon as I can - I am OUTTA here - I have babies to play with. Being with them just gets all of my priorities right back where they need to be.
