DH has decided he wants to cook tonight. He's making home made fish and chips. Yes, it's Friday night here....:rotfl:
 
Stuffed Salmon


My starting ingredients:


  • Salmon cutlets, 4 pieces
  • Bread crumbs, about 1.5 cups or so
  • Dill, 1 bunch - feathers picked off the stems and chopped
  • Parsley, 2 tablespoons - chopped
  • Pinenuts, nice handful - toasted
  • Onion, 1/2 - diced and lightly saute'd
  • Vegetable stock, 1/4 cup
  • Salt and Pepper - to taste
  • Kitchen string


Apologies. I didn't get a picture of all the ingredients together. And I normally just estimate the quantities; rather than measuring it out.


I use day old bread to make my own breadcrumbs. I've used a combination of white and wholewheat bread for this.

Toast the pinenuts in a pan on a low/medium flame.

Saute the onions until translucent.

Chop the dill and parsley...

Place all the ingredients into a mixing bowl.

Add a little stock until the stuffing mix is just moist. Season with salt and pepper to taste and set aside.

Prepare the salmon...

....by removing the center bones. Check to make sure that all possible bones have been removed from the cutlet.

Form the salmon to create a center hollow by folding the cutlet ends so that they are touching. Using the kitchen string, tie the cutlet into shape.

It is a little fiddly; but once you've gotten the first one done, the rest will seem easy. I usually double-bind and knot the salmon. I also tie the salmon on my baking tray so that I don't have to move it after.

You want to make sure that there is a nice hollow in the middle and that the salmon isn't bound too tightly.

Using your hands, take a nice handful of the stuffing and place it into the hollow. Gently ensure that you've stuffed the salmon as much as possible.

Place the salmon and the tray into a pre-heated oven at 180 C.

Cook for 10 - 15 minutes, depending on how pink you like your salmon. Remove from oven and remove the kitchen string.

Today we are going to my mother's house for chicken pot pie and salad. My stepsister and her husband are coming in to do Christmas with us, so I don't have to cook tonight. We still have some leftover spaghetti I may heat up for lunch. Don't know yet.

The crud is running rampant around here, not to mention I know the holidays can just be simply difficult for some. I have raging PMS right now and just want to have a good cry. I can't wait for 4:00 to be here. I haven't seen my boys in 2 days :eek: :rolleyes1. So as soon as I can - I am OUTTA here - I have babies to play with. Being with them just gets all of my priorities right back where they need to be.

I get my juicy burgers today. We're having UncleR's (the bomb) burgers and leftover potato salad.

I usually take a nice long hot bath/shower which ever is convenient.:hug:

Dinner last nigh was easy and comfort food... I have no name for it, we just call it "That Chicken Casserole"

1 pound of chicken cooked and shredded...
1 can cream of celery soup
1 can cream of mushroom soup
1 pint of sour cream

Butter a baker, mix everything together put in baker, crumble crackers over the top and then chip butter on top of the crackers, bake at 350 until bubbly.

Well I did not have any crackers so I put french fried onion on top and my DH was Very Very happy with this change.

2 boneless, skinless chicken breast, sliced thin
1/2 head cabbage, julienne sliced
Garlic
Ginger
Soy sauce
Sesame seed oil
Heat wok with 2 tablespoons cooking oil. Fry cabbage with 1 clove or teaspoon garlic and 1 teaspoon chopped ginger. Remove when cabbage is soft or crunchy. Heat wok again with 2 tablespoons cooking oil. Fry chicken until done. Add garlic, ginger and soy sauce. When complete, add cabbage and mix thoroughly. Just before serving, add 1-2 tablespoons sesame seed oil.

I wish it was nice like the ones on here that I look at.. but here it is!! And it WAS very, very, very good!!!! DH loved it!
Moo shi is on the right. It was steamy and tender with a nice ginger taste.

Last night, we met some friends for an impromptu progressive dinner. It was so much fun (albeit a little pricey...).

We started at Bar Louie for cocktails (cosmo and mojito for me) and appetizers (veggie flatbread, pork dumplings, chips/dips).

Then we walked to Terra (Mediterranean) for entrees. We split a bottle of wine and several dishes: baba ghanouj, haloumi cheese, pita, saffron chicken/rice, salmon kebab, ribeye kabob, roast veggies, and sauteed spinach.

For dessert, we tried to have flan at our favorite family owned mexican restaurant but they are still closed for the holidays we ended up at Tillman's Roadhouse where I enjoyed coffee and Bailey's along with an order of tableside smores for us to share with housemade marshmellows, graham crackers, and dark chocolate. Plus fire to play with :laughing:

We were fat and happy when we got home.


Today, I've yet to leave my PJs and I'm unsure what day of the week it is. LOVE holidays!! Dinner is :confused3

I was going to ask what you used for the pancakes, but I see from the picture that you just served them in a bowl.

I'm having a hard time catching up any more than what was posted today. Yesterday I had a big post ready and the computer crashed. :mad:

Except Nancy, I really hope that you get this situation sorted out. It's just amazing the things that people in groups we call "our familes" will do. And after someone passes, things get even whackier! I hope that you work it all out to the benefit of the Mother.

Burgers were lovely.

We had fries instead of potato salad, because we're saving the potato salad for leftovers tomorrow night.

Also, I made a jello salad in honor of my favorite BIL, Big C. He has been begging for a blueberry jello salad and although jello isn't my favorite thing, it's pretty good. It has a sweet sour cream topping.
