Happy Anniversary to you and UncleR. Glad that you're going to Dim Sum. I do have pictures from Dim Sum we went to in Hong Kong proper....only just unpacked them out of the card yesterday....and I probably won't get round to posting it for at least another 4 or 6 weeks. :lmao:
 
Hello everyone! We had a problem with Fran's wound vac, so she's stuck at home waiting for a nurse to change the dressing. We had a performance today that she had to miss.

Since I won't be home until after 6PM, we're going to order pizza! :banana:

DH and I have decided that we're going to have pita pizzas for dinner tonight. :thumbsup2


Hope Fran's wound vac gets the attention it needs.
 

Hi ladies! Long time since I've checked in. Hope all is well.

WFD -- Well, DH really wanted pizza, so I was going to go get it from our favorite place, but then he wanted Pizza Hut. We ordered the "Meal in the Box". It's ok. I will be needing my probiotics tonight.

I had some of those last week and I cooked them in a frying pan with a little salt and pepper. Then I used a jar of cherry preserves and heated them up in the same frying pan. It makes the jelly part really thin. Then I added some balsamic vinegar to the preserves. I served the pork over egg noodles and poured the balsamic cherry sauce over all of it. My boys love it!

....okay - so, I sliced the pork, along with a lb of boneless chicken breast, placed it in a bowl

...and added garlic powder, chopped garlic, ginger, cornstarch, and the 3 gluten-free items to the left]

...I'm going to use the Wok oil[ with some butter] to stir-fry the meat, along with the peppers and onions

I have a pork tenderloin marinading in a asian BBQ sauce. It is a bit spicey but we love it. It has Sirracha

Asian BBQ Pork Tenderloin

1-¼ pound Pork Tenderloin
¼ cups Soy Sauce
2 Tablespoons Fresh Ginger, Minced
¼ cups Green Onion, Sliced
4 cloves Garlic, Minced
2 teaspoons Sesame Oil
2 Tablespoons Hoisin Sauce
1 Tablespoon Brown Sugar
1 Tablespoon Honey
2 teaspoons Sriracha Sauce
Combine all ingredients except pork in a small bowl and whisk to combine.

Place tenderloin in a large zip-lock bag and pour marinade over the meat. Let it marinate in the fridge for at least an hour. Overnight is better.

When ready to cook turn your BBQ to high heat.

Remove pork from marinade and pat dry. Reserve the marinade for basting.

Sear the tenderloin on all sides. About three minutes a side for a total of 12 minutes. Then reduce heat to medium and cook for an additional 12 minutes. Continue to rotate the meat every three minutes, basting often (just don’t baste in the last few minutes since the marinade had raw meat in it).

Remove meat from heat and tent with tin foil and leave to rest for ten minutes. Slice and serve

All this talk of pizza is making me want some! I had just planned grilled cheese because I ate too much popcorn at the movies today. Marisa, Kady and I went to see Chimpanzee. It was really good!
 
Alright...Today is the last day of my recovery "anti-diet" as I have been calling it. As a bit of a rebellion I am having something super healthy, like pasta with butter, parm and lots of black pepper!

I did want to share a recipe I got from my plastic surgeon. I see a lot of you are going/have gone through health issues and I really feel like this drink helped my swelling a LOT. *I* also think it is delicious!!! So refreshing...

Super Lemon Recovery Juice

8-9 cups filtered spring water
1 cucumber peeled and thinly sliced
1 stalk celery, sliced into 1/2 inch pieces
2 lemons thinly sliced
1 lime thinly sliced
1 small orange thinly sliced
10 -12 fresh mint leaves. *optional

*you could also add some fresh pineapple and cantaloupe. Also read the comments for variations others have used with success.

In a large pitcher add all the ingredients.

Mix the night before or first thing in the morning. Let it sit overnight (or a few hours during the day). Strain it as you use it. When I take the first few glasses of it out, I usually refill the pitcher with more fresh water - so it makes a little more for me.

Drink the entire container (just the fluids - not the fruits and veggies!) over the course of the day. You can pour it over ice or just drink it chilled. At the end of the day throw out the veggies, clean the container and start a new batch.
 
Since the holiday, I have NOT been good. Time to get back on the lean and correctly portioned sized!

Same here. I really need to stop with the fast food again. This weekend was really bad as I was going to swim meets and shopping.

Crystal Lotus Dim Sum


Apologies to those that have seen these before but I am sharing all food porn with the diners.

I'd booked us into a restaurant called Crystal Lotus at the Hong Kong Disneyland Hotel for dim sum lunch. The restaurant has dim sum on offer every day for lunch; but on Sunday, there is a special menu.

Hi, ladies! What a week I had! Some of you on facebook saw what happened. My father had a minor heart attack last Tuesday morning. Actually, the problems started long before. He's been having chest pains since he got back from Europe, and after his collapse on Easter Sunday, he self-diagnosed himself with pleurisy. Last Monday, he had a follow up with his doctor who ordered an angiogram, to just take a look because of some abnormalities on his EKG.

Tuesday morning, his secretary came to pick him up, and when she saw him, she demanded he go to the ER. He didn't fight her, which tells me he was in real pain, and off they went. Sure enough, it was a heart attack. They ordered an ambulance to take him to St. George (50 miles away), where there is a great cardiac unit at the hospital. Once he was there, they did an angiogram, and found that he had 2 blocked arteries. One was 98-99% blocked, and the other 65-70% blocked. They began the procedure to place a stent in the worst blockage. It took longer then they anticipated, and after a 5 hour surgery, they decided against placing the second stent.

He recovered in the hospital until Thursday, when it was decided he could go home. I was with him until Saturday morning, when I came home, and my brother took over "babysitting" duties.

Dad is doing really well, now (thank you all for your prayers and good thoughts!). He has no chest pain, and feels really good. He's just amazed at how tired he gets. I keep telling him he needs to give his body a chance to heal, and at his age (81), it's not going to be overnight!

He has to go back on May 23rd to have another angio to look at the second blockage, and a possible stent placement. I'm planning on being there for that one, as well.

However, I'm home for now, and glad to be here! Life went on while I was gone, and it's nice to be back with my kids!

Well it's day 1 of my "not vacation". I don't want to do anything, I don't want to cook anything (well I am craving pork chops in cream of chicken soup over egg noodles) and I DON'T want to go to band tonight!
