Yay...I'm back! Kind of...I had surgery a couple of weeks ago and DISing under the influence of the narcotics sounded like a bad idea. LOL...My FB are probably ready to unfriend me by now.

I will be following along once again for some good ideas. I don't know how much cooking I'll be doing in the next few weeks, but once we get to NY next month, I'm bringing back our Sunday dinners I USED to make.:thumbsup2
 
Ellen- I am so sorry you had such a rough time yesterday. :hug: I hope that you continue to feel better!

Jen- How scary! That poor lady. My DMIL used to vomit and then pass out unexpectedly and every time she had a UTI. She never was symptomatic until she keeled over. :confused3 I hope that is all that lady had.

Cassie- how are you feeling?

WE are just having leftovers from last night. That means that somehow Buddy will have sandwiches :lmao: I asked Marisa to pick up cold cuts today, now Nola wants sandwiches just like Pa. Yesterday her potroast dinner had to be turned into two sandwiches :rotfl2:

ETA_ it is raw here today and I cannot warm up! I have the heat up and am in a sweatshirt and still freezing! Usually I am turnign the heat off and Buddy is turning it back oon

I am doing better. I still have a lot of pain under my arms, but I have kind of learned how and not to move.

I get my stiches out on Thursday!

The new attitude has really helped today. No sense in wallowing in self pitty, I have to get better one way or another, may as well be happy.

Yeah...I also was kind of using FB as a journal because I have a few friends who are wanting the surgery so I figured it was kind of a play by play for them.


Oh and for dinner tonight I made myself some knock off P.F. Chang's lettuce wraps. They are calling my name, but I'm waiting until they kids are asleep so that I can eat without little beggers.
 

last night was Egg Drop soup, Fried Rice and my first attempt at Shrimp with Lobster Sauce, good but did not look right.... Needs some work.

Tonight is Salisbury Steak over egg noodles and tomorrow is Chicken and Dumplings.

Friday we are going to the theater to see Mary Poppins....Whoop!
 
....Well I am at work today but yesterday was horrible. The procedure I had to have was VERY very painful, so they really gave me some heavy duty pain medicine. I was really loopy for most of the day and evening, plus with not eating or drinking anything all day when I finally did I got really sick. YUCK!!! I am so glad it is over. I went to bed at 8 and slept til Doug woke me up at 7:00 this morning. I am at work today and feel just fine, but man I will NEVER do that again.....

Kimmar - Hope the NJASK testing isn't too testing on you. And I want your recipe for chimichurra.....

....well, next week the 6th graders will be testing, so, it's like we're in 'limbo' for 2 weeks....and here's that recipe:


Chimichurri Sauce

4 garlic cloves, finely chopped
1 oz. finely chopped onion
1-1/2 c. chopped parsley
2 t. chopped cilantro (optional)
10 oz. olive oil
1 t. oregano
lemon zest (about(1/4 t.)
2 t. lemon juice
2 t. white vinegar
1/2 t. red pepper flakes
s & p, to taste

Combine parsley, cilantro, and oregano. Add garlic and onion. Blend well. Add zest, lemon juice, and vinegar. Slowly add oil, mixing well. Stir in pepper flakes. Add s & p to taste. Cover and store in refrigerator for 1 hour. Mix before using. Can be used over cooked/grilled steaks (flank or skirt), chicken, or fish.

Nan ~ I hear ya - I have been freezing but yesterday and today we are to be in the 90's. Wow, what happened to spring.

Today is better. Just a bit sore and still swollen. I have to go into Kearney this morning for another unltra sound. I hope everything is okay, because I told Doug last night that I would NEVER do this again. And I meant it!!! But on a good note as soon as I am finished at the hospital I am stopping by to see Lilly for a quick snuggle. :cloud9: Life is good!!

We are somewhat packed and really getting excited. Only 2 more days. We hope to leave right after work on Friday and go stay with Matthew in Lincoln. That will get us at least a few hours closer so we don't have a real long drive on Saturday. We want to stop in Springfield and then check in early evening.

WFDT ~ Grilled ham and cheese sandwiches, sweet potato fries and fresh raspberries.

Marilyn - Despite the duck weather, it sounds like you had a good weekend. It's raining today here...and we're expecting 2 inches of rain by the time we're done. Already had half of that.

We got anywhere from 1 to 2 inches here which was really needed.

It has been two long days and this one isn't even done yet.

Dinner tonight will be a mushroom and cheese quiche and I will have some sort of rolls and roasted veggies with it.

Dinner changed last night. By the time I got home it was too late to make a quiche, and I didn't have goat cheese for it, so I just made what I titled Eggs Mexidict. :rotfl: Basically scrambled eggs and a slice of farmers cheese on an English muffin w/ salsa on top. Pretty tasty. I had it with roasted cauliflower that my DM made.

At work early today, we have a program running all day, and it is my time to get stuff done. See you all later.
 
THanks for the recipe. And I was going to guess that you were having bacon for dinner.

....actually, we had a mish-mosh of things: Italian sandwiches, grilled veggie sandwiches, salsa and dip, hummus and crackers, antipasto salad, home-made carrot cake, fruit salad....we went to a fundraiser [for our school chorus] last night: Jessica and Paul's Wedding - sorta like Tina and Tony's Wedding, but with a local ensemble...what a fun night!
 
Morning everyone...

last nights dinner went well. David was surprised that he liked the Salisbury Steak as much as he did... He is kinda picky about things like that.

Tonight is Chicken and Dumplings, I have everything complete except the dumplings so I will put that on as soon as I get home.

Hope everyone is having a wonderful time and enjoying the crazy weather we are having.

I have another work trip starting this Saturday so I will be gone all next week and get back next Friday.

Friday night we are heading downtown to see Mary Poppins and I am excited about that.
