The What's For Dinner Thread - October'11 (recipe index in OP)

Good Morning! I made a homey hamburg gravy thing with mushrooms onions and peas over buttered noodles. A glass of red wine and all was perfect!

Jen- Bud has talked to the Hospice nurse as well as the social worker. The SW talked to his Mom while we were there the last meeting and he agreed that she knew what she did not want. Her condition has gone downhill since and she really does need more services. I am concerned about her pain management as she gets worse but Buddy just cannot understand that Hospice does not mean death warrant. He is now questioning everything and while I understand that this is in opposition to what he thinks is appropriate he is dead bang wrong. His Mom has a living will. She also has COPD and I know where this is going and without morphine and ativan it is not going to be pretty. I am going with him today and Marisa will watch the girls. If he backpedals on this I have told him that he has to come up with a plan for her because I will not let her suffer. I also think that we need to get an additional aide for her because she is beginning to require more help than the facility can absorb. The lawyer said Hospice will advice and we can go from there.

I think leftovers from last night for dinner. I did not get over to see Bud's mom last night and this afternoon will be tight with the girls so I want to go later on.
 
Dinner from last night.

1st course was a porcini mushroom risotto. I had no hope of staying good. He put a whole hunk of cheese into the risotto.

Main course comprised of sashimi grade tuna that he marinaded in rosemary and a whole bunch of herbs...surprisingly, all dried.

He placed the tuna in his BBQ and served it up on the undercooked/rare side.

He made a plate of panfried eggplant, coated and crumbed.

The other side was mashed cauliflower with truffle oil.....a lot of truffle oil. :lovestruc

Dessert was home made custard with fresh berries. The custard was lovely and I was most restrained by only have a tiny serve.

Jen - Thanks for the spring pictures. Those bluebells are so pretty!!!

Nancy - I'm so sorry for all you are going through. I used to think hospice meant death, too, until we actually got involved with them with my grandmother and later my mom. They were so helpful, and kind. We had nothing but good experiences with hospice, and neither of them were at the end of either woman's life! My prayers are with you all today as you meet!

Marilyn - Your salt story had me laughing! I typically undersalt things, as I have a fear of too salty!

We have a crazy busy evening, so dinner will be something extremely easy like corndogs tonight.
 

Jen, those are beautiful wildflower photos! Thanks for sharing. All of our early blooming flowers and trees got killed off by a frost the other night.

Thanks everyone for the cabbage recipes! I still have not decided what to do with it, but I figure I have some time, cabbage keeps quite a while.

PIO, nice dinner! I like tuna cooked that way, though I think I use fresh rosemary. The dessert looked lovely also.

WFD: John has a late conference call, so I think probably just sandwiches and a salad.

Yea, sometimes people don't understand that hospice is about comfort as well as transition. Lots of folks see it as a death sentence.

I hope that I would have the strength to ensure that those around me transition from this life in comfort and peace. But, by no means do I think it's an easy thing to deal with.

And I suppose I see it from a very personal place, since I've been through it with a family member.

I'm sorry you guys are going through this. You know you're in my thoughts.

My family LOVES corndogs. They'd probably love you feeding them those tonight!

Work's been busy. But, the end is near. 9 more weeks or so until summer vacation!

Nancy - I'm so sorry that you are having to go through all of that. I hope that things work out for everyone.

PIO - looks like a very nice meal. I wish I had friends that would cook for me like that!

Jen - I bet you are counting down the days until your summer vacation!

Today we met with the accountant for our 2011 taxes. We got most all the figures together for him, and there are only two items we need to provide him with to finish the taxes, so not too bad! We were able to get an extension on the appointment for the audit for two months. It means I have some time to make copies of the papers we need to have for them. Now we don't have to do it until after our trip to WDW! That also means that Fran can rest her leg and not stress about getting everything together by Friday. Hopefully the leg will heal and not turn into another case of what she had last Fall.

Tonight was supposed to be Fajitas, but I was too tired to deal with all that. I'm thawing a par cooked steak (from the freezer meltdown last Fall) and baking some potatoes. I'll serve it with some sort of veggie. Easy peasy.

I'm BACK...did ya'll miss me. I am going to post real quick and then go back and read. I will catch up later.

Good grief I have been busy. Lent is almost over so things will drastically slow down. Advent and Lent are the busiest times in the Church - my favorite times, but busy non the less.

Well no baby yet!! She did go to the Dr. yesterday and she is dialated. The Dr. said that if she hasn't had the baby by next Wednesday (which is our Anniversary) that they will induce her. I know she is miserable but I just wish the Drs. would let nature take its course. I think they induce way to often. In Elizabeth's case it was important because it was a life and death situation. But Stephanie is showing no high BP or weight gain and nothing that would warrant to be induced. So I am a bit worried. I just hope this little bundle of joy decided to come on her own.

Last night was the last night of Lenten meals, services and my Bible Study. I had so much fun with it. We did "Chocolate for Lent", which is based on the movie "Chocolat". I am sort of sad that it is over, but am ready for my Wednesday's to go back to normal.

WFDT ~ Homemade baked Chicken strips, dipping sauces, sweet potato fries and garden salad.

Back, many, many years ago, my mother was pregnant with my older sister. Her due date comes and goes, and no sign of the baby coming. Not even a bit of dilation. The doctor decides to let things run their course, but when another month had gone by, and there was no baby, my mother demanded he induce her. Her reasoning? No woman should have to be pregnant for 11 months!!!

I never really had to worry about it. All of my kids came at least 2 weeks early. The twins were actually 6 weeks early (so, technically preemies), but the others were all exactly 2 weeks early. Weird, huh?
 
Good afternoon, everyone! I've finally managed to drag myself to the computer. I believe I am in the middle of a full blown sinus infection! My sinuses hurt so badly when I stand up that I feel like my head is going to explode! I've got an appointment with the doctor, so hopefully, I'll be feeling better, soon!

Unfortunately, with the sinus troubles comes no taste! I haven't been able to taste my food in days! I hate that, because it means I really don't want to cook. So, I've been just "phoning it in" the last few days with microwave meals... corndogs, frozen pasta dishes, etc. I really want to cook, but just don't have the get up and go to do it!

Dinner tonight will probably be chicken soup, or something equally comforting.

I have to brag on my Jacob, for a minute. He went to his Scout board of review last night, and came home all smiles! At the next court of honor, he will be getting 4 merit badges (Family Life, Geology, Oceanography and Genealogy), his Second Class and his First Class! He's so excited! He told me that he's really excited to get his Eagle, and wants to get it before 14!! His leaders are really pushing the boys to get their Eagles before they turn 16 because as they get older, it's harder to devote all the time they need to their projects and merit badges, etc. I foresee a lot of work on Scouts in my future, but I'm thrilled that he's so excited about it!

Work was long, but good. Lots of busy things happen towards the end of the school year.

Tonight I made King Ranch Chicken for dinner. This was the first time I'd made it and it was a hit with the family!

Morning, all!

Today it's leftover mini-meatloaves, rice, and peas. Always better the next day!

I had to tell you guys a good one. You know how I made Kevin and Amanda dinner the other day? Well, being in the spirit of wanting to help, I thought I would make them some scones so they could have something nice with their breakfast the next day. I forgot to pick up oranges (for zest and the glaze) so I make a special trip to the grocery store to get some.

As I am assembling everything Monday to cook all of this, I realize I have no heavy cream. Ugh. Oh well, I think. I make another run to the store on Wednesday because I needed something else anyway and picked up some heavy cream. I figured I would make them yesterday, call her and tell her I've got something to bring her and voila! Nice little breakfast for them!

Yesterday I am assembling everything I need to make them when I discover..........











I have absolutely no sugar in the entire house. *sigh*

These scones just weren't meant to be!!!! :headache::headache::headache:

Glynis ~ :cool1: for Jacob. Way to go!! We have an Eagle Scout Ceremony here at the Church this Sunday. Tim will be graduating in May, so much older than the boys you are talking about. I think it is such a great thing for Boys and it looks real good on a resume.

It's Friday :cool1:!! It is suppose to be in the 80's tomorrow. So I think I will work out in my flower beds and get them all ready for spring. If we don't get some rain pretty soon there won't be anything. It either goes South or North of us. We haven't gotten a drop of moisture.
