Thanks for all your kind words! She is starting to get the hang of this resting thing. In fact I'm having a hard time getting her out of bed today, even with the temptation of blueberry pancakes and bacon for breakfast! :lmao:

Yesterday I made Michael Symons Rigatoni & Meat Sauce. I saw the recipe on the Chew. It looked a lot better when he made it! We were both still hungry after dinner so I made my 1/3 recipe of Brownies which is good from a moderation standpoint, but not good when you want more than 1 1/2 pieces! :rotfl2:

Not sure what's for dinner tonight. We've been eating a lot of beef lately. I don't want to go to the store today, so I'd have to work with what's on hand. I have plenty, but oh yeah we're out of ice cream :scratchin not a problem for me, but someone else... :rolleyes1
 

The closest beach to us is 4 hours away.

What I wouldn't do to have the beach in my backyard... I could live off of Seafood boil for a few days;)

Don't your supermarkets have lobster tanks in the seafood department and they can steam them for you? :confused3 Or is that something that only us spoiled California folks have?

This town has around 2000 people in it. I'm lucky if I can get anything outside of the realm of ground beef.

We have them here too, but when we want a full main dinner, we order it from mainelobster.com, we got a groupon for 50% off not too long ago.

I've never actually purchased one of the lobsters from the tanks, in fact I've only ordered them from restaurnats. The most I've cooked at home is lobster tails. The only time we ever got whole lobsters was in Cape Cod, we ordered them at some shop and picked them up a few hours later. Dinner was yummy!
 
Morning all! Today I am making black bean soup and cornbread. Easy peasy! I am hoping to get those dang scones made today *grumble*

Ingredients

1 package instant chocolate pudding mix
2 cups milk
1 package chocolate cake mix
2 cups semisweet chocolate chips
1/3 cup confectioners' sugar for decoration
Directions

Preheat oven to 350 degrees F (175 degrees C). Grease one 15x10 inch baking pan.
Prepare pudding mix according to package directions using the 2 cups milk. Whisk in the cake mix. Stir in the chocolate chips. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes or until the top springs back when lightly touched.

My kids like to put chocolate sauce and tiny parcels of dark chocolate in the batter... Yeah, I know:laughing:

I think some ladies need a New England Vacation! Seafood Galore!!!!!!!!!!!!!!!!!

Years ago when my kids were little I was a waitress in a hotel restaurant. The hotel chain was based in Chicago. They decided that the menu needed to be consistent so they loaded it up with frozen items.............frozen butterflied shrimp, frozen clams, frozen everything. Business took a dive and that was huge, we were a convention center and considered a safe place for celebrities. The manager that was sent could not understand why folks here would not order frozen fish in a restaurant when fresh was always available :confused3 Really??????

Last night we had open beef and mushroom sandwiches with french fries. Tonight I think we are taking Kady out to dinner for Chinese. I have to get back on my diet but we promised her.

Easter dinner? Hmmmmmmmmmmmmmmm.

We used to get fresh Lithuanian sausage from the meat market. I tried to get the recipe but that was a big fat NOOOOOOOOOOOOO. The owner was nto well and closed the shop and I have only found what I need one time. I really need to learn to make it.

I know I want good desserts but am still thinking. I tried to make a lemon meringue pie yesterday and it was not too bad. I used a storebought graham cracker crust ( I know, not the right one but I really was only trying to make the meringue) I had always been afraid of that light fluffy cloud of Heaven but it really came out okay for the first time. Anyway, I am busy studying our thread for ideas.

Anna is making a taco appetizer and I think peanut butter brownies
I want to assign the fruit salad to my DSIL if she asks what I want her to bring.

Daniel always brings the rolls becasue he loves those little potato rolls, no matter what else we have for bread he insists on those. He is on automatic potato roll duty.:lmao:

Speaking of Maine lobsters, my DM lived in Cape Cod for 3 years and one time when my Dsis and I were visiting we decided to head out and maybe go to Boston. Well as we were driving in that general direction we saw a highway sign about Maine and went there instead. :rotfl: Stopped in the little town of Kittery, bought some lobsters and headed back to my DM's.

We always got lobsters while on Cape Cod and my DM always brought them home from us when she came to visit.

Had a quiet weekend getting stuff done in my house. I have TONS of papers that need to be sorted, recycled, filed and shredded and have been trying to get through it. I swear that stuff breeds like rabbits. Every time I think I have a handle on it, there's more of it. :headache:

I made spicy Asian noodles with chicken last night, it was really good. I got it from the cooking light magazine.

Ingredients
1 tablespoon dark sesame oil, divided
1 tablespoon grated peeled fresh ginger
2 garlic cloves, minced
2 cups chopped roasted skinless, boneless chicken breasts
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
3 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons hoisin sauce
2 teaspoons sambal oelek (ground fresh chile paste)
1 (6.75-ounce) package thin rice sticks (rice-flour noodles)
2 tablespoons chopped dry-roasted peanuts

Preparation

1. Heat 2 teaspoons oil in a small skillet over medium-high heat. Add ginger and garlic to pan; cook 45 seconds, stirring constantly. Place in a large bowl. Stir in remaining 1 teaspoon oil, chicken, and next 6 ingredients (through sambal).
2. Cook noodles according to package directions. Drain and rinse under cold water; drain. Cut noodles into smaller pieces. Add noodles to bowl; toss well to coat. Sprinkle with peanuts.

Ah Hello...........Nebraska is even further. At least you can "almost" see it. And this seafood loving girl only can get frozen. But on the other hand we have the best corn fed beef. Pretty good trade off I guess.

Alison ~ Oh sweetie, I am so sorry Fran is hurting again. Nan gave you the BEST advice of all. You can only do so much and the rest is up to her. Maybe if you let her take care of herself more she would realize how much you REALLY do do. Well no baby yet!! We saw them yesterday, Ethan wrestled in the State Tournament. He got 4th which was pretty darn good. We went to dinner after and I so enjoyed us all (except for Matthew) together. He called while we were eating so in a way he was there.

After dinner we went shopping for a bit and somehow we ended up in the baby section. We had a ball looking at all the darling little dresses with tutus and pink. I know I am setting myself up here, but oh how I want this baby to be a little girl. They have decided on Grayson Lucas for a boy and Lilian Rose for a girl. Lilian was my grandmothers name, so she would be named after her Great Great Grandmother. I think that is so neat. I promise I will let you all know as soon as I know.

WFDT ~ I have zumba tonight so Doug is in charge. I will let you know tomorrow what we ended up having. But of course that could all change if we get baby news.

Tonight it is Italian Breaded Pork Chops... We always use this recipe, and it is to die for!

Ingredients

3 eggs, lightly beaten
3 tablespoons milk
1 1/2 cups Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, peeled and chopped
4 pork chops
Directions

Preheat oven to 325 degrees F (165 degrees C).
In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.
Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 160 degrees F
 
Hey all! Sorry I went MIA. We took an impromptu trip to visit some friends this weekend. It was fun!

Dinner tonight will be Stroganoff Sandwiches. Easy and comforting. We came home to a dip back into winter. New snow in our mountains, and freezing rain. Yuck!
