Good morning!

Lindsay - You get points for trying with the scones! I hate days like that!!!

Ellen - Your menu looks fantastic! I'm not sure what we are doing for Easter this year. There's been talk of going to Alan's mom's house for Easter dinner, but I don't know for sure. We are doing a big family Easter egg hunt the day before and will have a potluck lunch there. It's usually geared towards the little ones, so we have hot dogs, hamburgers, etc.

I'm thinking that for Easter Sunday we'll have:

Fruited Ham (crock pot)
Deviled eggs
Rolls with butter
Yams
Some kind of green veggie (asparagus, or brussels sprouts, or beans)
Strawberry shortcake
Lots and lots of Easter candy
 
Morning, all!

Today it's leftover mini-meatloaves, rice, and peas. Always better the next day!

I had to tell you guys a good one. You know how I made Kevin and Amanda dinner the other day? Well, being in the spirit of wanting to help, I thought I would make them some scones so they could have something nice with their breakfast the next day. I forgot to pick up oranges (for zest and the glaze) so I make a special trip to the grocery store to get some.

As I am assembling everything Monday to cook all of this, I realize I have no heavy cream. Ugh. Oh well, I think. I make another run to the store on Wednesday because I needed something else anyway and picked up some heavy cream. I figured I would make them yesterday, call her and tell her I've got something to bring her and voila! Nice little breakfast for them!

Yesterday I am assembling everything I need to make them when I discover..........











I have absolutely no sugar in the entire house. *sigh*

Tonight for dinner we had fried fish with fresh tartar sauce and fries. YUM! And easy!

Tomorrow I'm baking and making yummy things, including blueberry coconut muffins and a fancy shmancy egg salad.

Other than that, this weekend is meant for sleeping. :cloud9:

It has been a crazy week. I think I'm gong to be able to slow down for a little bit (hopefully).

Ellen, I hope you make it through this busy and wonderful season, I know that you will! And hopefully that baby comes along soon. I know your Easter menu will be wonderful!

Glynis, You need to get some relief from all this again any pain. I hope the Dr. can do something for you!

Brandi, I agree with you I think I'm going to boycott Easter Dinner. I'm going to make Fran stay home and rest.

Jen, you tire me out with all your cooking, and it all sounds so wonderful!

Fran's leg is up to the same old thing as last Fall and again she is jeapordizing another trip to WDW. She doesn't seem to understand how serious her situation is and she keeps trying to do things. I keep trying to make her relax and slow down, let the wound heal, but she is resisting. She has home health coming here and they dressed the wound on Wednesday, they were supposed to come today, but the nurse (from Wednesday) decided that she didn't need it, so all day we waited (sort of) and no nurse. We told the Dr. and she called the agency basically telling them if a nurse didn't see Fran this weekend, she was canceling the contract. I'm guessing that she has had problems with this agency since she used them last Fall.

Anyways, we'll just have to see if the thing heals up (and soon because we are supposed to go to Las Vegas for a business trip in two weeks). We've tacked on a few days for pleasure afterwards, so I'm hoping she will heal up, otherwise we might have to cancel the whole thing. I don't want to cancel the WDW trip, but I will cancel Vegas to save that one. Nothing about Vegas will cost us anything out of pocket.

Morning, everyone! It's Saturday so that means eating out :) We are probably going to P.F. Chang's. I need to get some shopping done today and the restaurant is within walking distance of the mall.

Good afternoon, everyone! I've finally managed to drag myself to the computer. I believe I am in the middle of a full blown sinus infection! My sinuses hurt so badly when I stand up that I feel like my head is going to explode! I've got an appointment with the doctor, so hopefully, I'll be feeling better, soon!

Isn't it funny how one tiny little bundle who has not even agreed to make an appearance has been able to influence life as we know it~ can you imagine how our little one will impact your family soon??????????? I am a little envious of you, I love Kady and my little Nola and Rylee but I want more! I am praying Donny and Anna will be Blessed and of course that means me too :goodvibes

Okay, I am peeved now. A long time ago Buddy was refusing to take his BP meds. He thought he should be able to control his body by will alone. We were separated at the time but still committed. (I think that meant we should have been committed.) Anyway, Donny called me and was very worried so I came by and had a little chat with him. I had just lost my nephew to a stroke so I was not int eh mood to fool around. I told him that he could do anything he wanted, that was his decision but if he had a stroke that the first question I would ask was if he had been taking his medication. If he was I would stand by him and do whatever was necessary but if not he better make sure he repaired his relationship with his mother because he would need her. I explained that for some folks a stroke is a death sentence but for a man who was as strong as an ox and in very good physical health otherwise not so much so he might need someone to change his diapers. He knew I meant it, I would not lift a finger to help him if he played fast and loose with his life.

You might want to have the same talk with Fran. She has the right to do anything that she wants with her body but she does not have the right to be reckless if she wants support from those who love her. If she refuses to do what the medical professionals are telling her she needs to do in order to heal she needs a backup plan that she is responsible for creating. There is a vast difference between caring for and supporting someone whose health is beyond their control and supporting behaviors that adversely affect that persons condition. No one wants to miss out on things that they enjoy but there is a lot more at stake than a Vegas trip or a WDW adventure. If her wound does not heal properly she could develop infections are life threatening and that will impact way more than the things she wants to do. Trust me, I was there with Buddy and finally had had enough. It was not a matter of not understanding how serious the situation was, it was not accepting the situation. Good luck! I probably should not lecture here but she needs to understand that this is not about trips and fun stuff, she could end up bedridden or worse.

Last night dinner was Sea scallops and chips and cole slaw. I brought it is and it was delicious! Tonight we have another Jack and Jill so dinner will be whatever there is there. This is Buddy's boss and his wife and they take entertainign to another level so I am looking forward to this.
 
I think you all will understand this. :dance3: My DDIL sister is getting married in April. We got the invitation quite a while ago, okay a long time ago, the wedding is in Washington State. I only met the girl during Donny wedding week. She was difficult. Anyway, it was clear it was a courtesy invite so I wanted to wait until it was closer to respond so I could include a gift. The return is April 7. Last week I dug it out and Donny said he was glad I was finally sending it back, apparently the mother has been harassing Anna about my lack of manners in not sending it back in a timely manner. Really? I still had three weeks. Donny told me that the girl had unfriended me on FB because she was so mad. Now I understood the friend request I got a few days ago............I thought that we were FB friends but figured I was mistaken I guess all is forgiven. :rotfl2: Donny has asked that I don't say anything to Anna because she is going crazy with all the drama that happens every time she talks to her family. He did tell her that he thought that her sister's gift got a little smaller though..........;)Now I know what she lives 3000 miles away!

Oh well, I am going to get a card and send a check but it is a good thing I like Anna!

Good Saturday morning to everyone....

I am home and still suffering but feeling better since I am home.

I did not cook last night, got off the plane and just crashed, David got take out.

Today I will go grocery shopping, nothing sounds good right now, so I am sure I will not over buy.

I am trying to make a menu but am having difficulty with picking things.
Right now I have
Pizza for tonight, take out from a local italian place
Chicken tenders, baked bean, and potato salad
Sausage, peppers and onions
Spicy asian noodles with chicken
grilled salmon
Quinoa and Black Bean Chili


Oh well, hope you all are feeling ok and getting better everyday.

Thanks so much for your concern. After two days of resting in her recliner, she is complaining, but I think she understands that she is starting to get better. Last night she got really mad at me that "all I think about is vacations" (mainly because I didn't plant the little trees that she got off of eBay), so today I think I got her to understand that it is not just "about the vacations", but her health overall, and I don't want her to have to have the leg amputated!

Tomorrow I will let her go to Lowe's, Home Depot or ONE (and only one) of those places to pick out a dishwasher for the tenant, since she has been so well behaved the last two days. Then she will have to get back in her chair and rest!

Fran- I was so afraid that you would misunderstand. I kept seeing her leg getting worse and knew what came next. It is so very hard to be the caregiver and also have to be the bad guy, especially when you both are adults. Please know that I am always thinking of the two of you and wish I could send you strength. You are so right, the vacations are the carrot that gets dangled but really they are nothing when you compare what can happen without proper caution. :grouphug:

Alison, you have amazing inner strength and love, just keep it up and hopefully it will all work out.

I know it is hard to be tough with the ones we love, but it is the right thing to do and you know they will get over it. With David he always "sees" after it is over....

Neither of us are in the best of health, but I have the sense to try and slow down when I am not feeling well. Often, she will try and make me go against that good judgement. Oh I get it and I really do understand. It is never easy to be the bad guy and it is unfortunate that you have that role. You are a strong woman and so is she so I pray that she is able to listen to you so that both of you enjoy the life you worked so hard to have. As to vacations............. Hallelujah!!!!!!!!!!!

:rotfl2: A few years ago I had issues with my arm and that was a problem because I use it to clean. That is my job. The Dr told me to "rest" it for a few days. Um...............no, I have work to do, it cannot wait.....blah blah blah. She told me that I had a choice as to when I rested. I could do it now when I could plan my healing or I could ignore what she had to say and let my arm decide. Either way I was couch bound but One way I could control. Marisa, that little pit bull...............went all Dr PIA, tattled to Buddy and I would up on the sofa. As much as I hated to admit it, I needed that rest and if they had not gone all ballistic I probably would have been out of commission much longer.

Now you take care of yourself no matter what because if you do not both of you are going to be laid up. Sending patience :hug:

Tonight, DH and his parents are coming over, so we are making lobster bisque, Lobsters imported from Maine, Steak on the grill, baked potato, a grilled vegetable salad, with my famous five chocolate brownies.

We usually don't eat like this, but it's spring break, so time for a splurge!:cool1:

We usually get them during Spring Break; it's a nice treat. and certainly not something that we eat a lot. There are plenty of websites specializing in shipping lobsters:)

All kidding aside, can you share the brownie recipe? And teh bisque, I love lobster bisque!

Ingredients

1 package instant chocolate pudding mix
2 cups milk
1 package chocolate cake mix
2 cups semisweet chocolate chips
1/3 cup confectioners' sugar for decoration
Directions

Preheat oven to 350 degrees F (175 degrees C). Grease one 15x10 inch baking pan.
Prepare pudding mix according to package directions using the 2 cups milk. Whisk in the cake mix. Stir in the chocolate chips. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes or until the top springs back when lightly touched.

My kids like to put chocolate sauce and tiny parcels of dark chocolate in the batter... Yeah, I know:laughing:

Lobster Bisque

Ingredients

6 tablespoons butter
6 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon celery salt
4 1/2 cups milk
1 1/2 cups chicken stock
3 tablespoons minced onion
3 cups cooked lobster meat, shredded
1 tablespoon paprika
1/2 cup light cream
Directions

Melt the butter in a large pot over medium heat. Stir in the flour, salt, pepper and celery salt until well blended. Gradually stir in the milk so that no lumps form, and then stir in the chicken stock. Cook over low heat, stirring constantly, until the soup begins to thicken. Add the onion and lobster; season with paprika. Cook and stir for 10 more minutes. Stir in the cream, heat through and serve.
