Happy Spring my dear friends!!!

Our beautiful weather is gone. Still in the upper 50's but the wind is killing us. We had horrible tornados Sunday night. I absoutly HATE this kind of weather. And this year seems to be worse than most.

No baby yet. I talked to Stephanie this morning and she said she cleaned house all weekend and last night scrubbed toilets - Nesting maybe?? I am getting so excited for this little bundle. I just can't wait!!

Howdy, everyone! It's a big day here. My twins turn 10 today!!! Don't know where the time went! We are having a family "party" which really means blowing out candles and opening presents. No friend party this year. We alternate years so we don't get burned out on parties!

Tonight we are having a spaghetti dinner at the church. We will do the twins birthday dinner tomorrow night. They have asked for steak and spaghetti.

Happy birthday to both of them!!!

I fixed this over the weekend and thought I would share. It was very light and really good.

Hi y'all.

After yesterdays drenching, it was back to being a beautiful dry day here in Texas.

We've been on a veggie kick. Tonight was spring salad for dinner, with roasted chicken, dried berries, pecans, pears, a bit of bacon, feta and poppyseed dressing.

Last night we had veggie plates. What is my problem? Where's the meat?:scared1:

I'm hoping to go out later this week and take pics of all of our wildflowers. I'll have to post some. They're gorgeous!

Oh my goodness! I just snorted diet Coke through my nose!

Well, the birthday turned out good. The girls were happy with the presents, and we'll have a celebration dinner tonight complete with cake (for Mary), and a Texas donut (for Leslie).

Now, here's my question... I have some petite sirloin steaks for tonight (Leslie's request). Usually we grill our steaks, but our gas grill died, and we haven't replaced it. I also do not have an indoor grill pan. What and how should I cook these steaks? We don't have steak on a regular basis, so this is not my area of expertise.

Mary's request was pasta, and fortunately for her (and the rest of us) Alan did a live shot at an Italian restaurant, Buca diBeppo, and they sent him home with enough food to feed an army. We'll be having pasta for a long time! So, she's set.

Glynis, I don't know how you like your steaks cooked. We like them medium rare, slightly still mooing. I heat the oven to 375. Then I cook the steaks between 1-2 minutes per side on the highest possible heat setting on the stove. Then I put the whole pan in the oven for about 5 minutes. Let them rest for another 5 before cutting into them.

WFD? Depends on whether or not we overdo it again. Should be Reuben sandwiches, but it might be a take and bake sort of thing if I'm too tired.

Glynis, I am so glad you laughed at this too...

For the steaks, melt some butter and olive oil in a pan, on high heat, and season the steaks with kosher salt and pepper. Add the steaks to the pan, do not over crowd them and sear them on all sides, get that crust on them and then finish them in the oven on broil, this will seal all of the juices in them and will be wonderful. Cook in the oven for 2 minutes per side....

Sirloin is our steak choice. I cooked petite sirloin Sunday. I always used to broil them if i could not grill but I like the idea of searing them off first. I think that you will enjoy them, they are flavorful and have a lot less fat than the other cuts that are way more money. I try to get tehm at Costco because I loke teh quality but marisa said her meat market can beat that price and the quality is very good so I am going to stock up I do't know about you but paying full price killed me this week.

We are eating out tonight. Buddy is breaking down and buying some pants He has dress pants, work jeans and his >dress> jeans. Pitiful! The man wears clothes like no ones business but he would never wear the nice slacks I bought. :confused3

You'd be eatin' Dogs'n'burgers most of the year if you lived here! We freak out when it gets below 70! Of course when it's 110 you don't even want Dogs'n'burgers!
 
Jumping right back in.

WFDT - Focaccia's with cheese, tomato, olives, artichokes and anything else I can find in my fridge to suit. We're grilling them in the sandwich press and having a simple meal tonight.

Well, it's Monday night here and I had to put in extra hours work today. On the way home, I picked up ingredients to make a risotto (broccoli, sweet potato, mushrooms) and had totally forgotten that a friend of DH asked us over for dinner tomorrow night. So, DH and DS had agreed that we were having our standard baked jacket potato for dinner tonight instead of tomorrow night. :lmao:

I fell off my diet wagon big time this weekend. Friday night was fish and chips at Red Robin. Bud and I went shopping for him, which was a bust We do not eat meat on Friday in Lent and there we were, starving in the middle of a bunch of steak houses :headache: We ran into RR because they have fish. Saturday was a 40th Anniversary party int eh afternoon and a Jack and Jill in the evening. YUM!!!!!!!!!!!!!! Sunday was movies with the girls................popcorn and butter! I saw Hunger Games.

Today I think I am going to make a pasta with meatballs. Buddy,s cousin cooked up a storm and sent us her meatballs and sausage with sauce.
 
Morning, all. We are in the middle of a weird spring storm... at times it's rain, at times it's snow. Luckily, it's not cold enough for the snow to stick around long.

This weekend was CRAZY!!! On Friday night, Katie, Jacob and I went to see The Hunger Games (Loved it!!!). Saturday was spent running kids from one activity to another all day long! The only time we got to sit still was at Leslie's school play. It was cute, but I'm glad it's about over. Rehearsals at 7:00 in the morning is a bit too much for elementary kids! Yesterday, I stayed in bed with a nasty cold, all day long! It hit me really hard! Sinus pain, sneezing, coughing, scratchy throat... the whole 9 yards. Today, I feel a bit better.

Dinner tonight will be pasta with a meat sauce.
