Tonight I am making Brown Sugar Balsamic Glazed Pork Loin in the crockpot.

The loin is cooked, now I have started the glazing process. The glaze is really good! I'm excited for it.

Now I NEED that recipe!! Pretty please?

Ingredients:
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water


Glaze
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Directions:
Combine sage, salt, pepper and garlic. Rub over roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours. About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.

It was DELICIOUS!

**TIP- I took the top off of the crockpot for the last like 30 minutes because the glaze wasn't getting sticky and thick. I think the moisture from the lid was keeping it too wet. Once I did that it got dryer and sticky.

Glynis - I hope your friends are keeping well during this sad time for them. Is there a group of friends helping them out? We had a family at DS' school lose the father. The mums all rallied round with a roster and we cooked them dinner for about 6 weeks.


Alison - I hope that the vertigo isn't anything serious! :scared1: Stuffed peppers are going to be on my menu in the next 2 weeks. DS has suddenly discovered that he quite likes them :cool1:



Glynis - hope the rain you've gotten is good rain and is falling where it needs to fall.

Ratatouille


My garden is yielding some crop at the moment and this recipe includes eggplant, zucchini and tomatoes from it. I’ve used oregano, thyme and basil in this recipe as well…again all from the garden.

My starting ingredients:

  • Tomatoes, 4 – skinned, deseeded and chopped
  • Onion, 1 – chopped
  • Red capsicum, 1 – diced
  • Yellow capsicum, 1 – diced
  • Eggplant, 1 lb – diced and salted for about an hour
  • Zucchini, 2 lb – diced
  • Fresh oregano, ½ tbs – chopped
  • Thyme, 8 sprigs – leaves removed
  • Fresh basil leaves, ¼ cup
  • Garlic cloves, 2 - 3
  • Olive oil , 2 tbs

NOTE: I would have included more eggplant to the recipe; but 1 lb was all I had to crop for this meal.

Optional - If you decide to serve the ratatouille caponata style, you'll need to add Capers, 1 heaped teaspoon, and a splash of white wine vinegar (about 1 - 2 tablespoon to taste).




Heat the oil in a pot over medium heat and add the onion and garlic. Cook for 2-3 minutes.

Add the red and yellow capsicums…..

…followed by the tomatoes. Cook for a further 2 minutes.

Add the (rinsed) eggplant and zucchini to the pot and cook over medium heat for a further 5-6 minutes. Add oregano and thyme.

Reduce heat to low, cover and cook for 15 minutes, stirring occasionally.

Stir in the basil and season with salt and pepper.

If you wish to serve this caponato style, add some capers and a splash of white wine vinegar. I added some after the zucchini and eggplant.

Serve warm either on its own or with roast meat or fish. I chose to serve mine with couscous. My dinner!

Popping in quickly, a bit behind this morning. Today is my grandmother's birthday and my mom is having us all for dinner. The main dish is an awesome recipe I will post later.

The girls are feeling better and were on fire yesterday when they came over. Buddy and I are both fighting it and hope that we do not end up like the two of them.

Dinner yesterday and tonight was our version of comfort food. Hot dogs, macaroni salad, caramelized onions. I made the blueberry dump cake for Buddy but he hasn't had any yet.

It is freezing here so tomorrow I will make soup and something good for dinner.

We had Venison burgers, he made them all by himself and grilled them, they were great....

I am doing ok.... I am just tired of this already. I go to the Dr on Friday and hoping that I am getting a walking cast...

I am sore all over and my foot hurts.:mad: I sound like I am whining, so i will stop...:hug:

Cassie...I added an extra pat of butter to our scampi. :lmao: But, in the entire 4 serving recipe, there was only 4 Tbs. of butter. So, not too bad. ;)
 
Hello all! Very sad ending to my busy weekend. :sad1: The Ravens lost. That was the most nerve racking game I have ever watched in my life. And right now my co-worker is probably jumping up and down excited, the Giants just won.


I went and got my DN's Friday night. Got home in plenty of time before the snow and ice started. Yesterday I went to a dessert party at my bosses house. Today was game day and I had one DN, BFF, her two sons and a friend of her sons over to watch. My DM took my youngest DN home, she had a party to go to.

Have to tell you all a funny. My DM said they were driving down the highway at about 60MPH when my DN suddenly starts yelling about not having banana's. :scared1: Scared the crap out of her. My DN was playing a game on my DM's Kindle Fire. :rotfl:

If it the same recipe that I pinned it is SOOO good.

The Asian places around here don't sell Boubon Chicken...Not even in the mall:confused3.

I had to reduce it a while longer than it said to(and add more cornstartch) to get that gooey, sticky sauce though.
